Bakeabout forty minutes in rather hot oven. Snow, forsome unknown reason, has the same effect on breadas eggs have, two tablespoonfuls of snow equalingone egg. It can also be used in making batter forpancakes, or puddings, the batter being made ratherthick, <strong>and</strong> the snow mixed with each cake just beforeputting in the pan.Substitute for Baking Soda.— Take the white ofwood ashes, same quantity as you would use of soda,<strong>and</strong> mix dry with the flour. It makes bread risethe same as soda, <strong>and</strong> you can't tell the difference.The best ashes are those of hickory, dogwood, sugarmaple, <strong>and</strong> corncobs ; but the ashes of beech, ash,buckeye, balsam poplar, <strong>and</strong> yellow poplar are alsogood."Gritted Bread.'*— When green corn has justpassed from the tucket, or soft <strong>and</strong> milky stage, <strong>and</strong>has be<strong>com</strong>e too hard for boiling, but is still too softfor grinding into meal, make a " gritter," as follows:Take a piece of tin about 7 x 14 inches (unsoldera lard pail by heating, <strong>and</strong> flatten the sides) ;punch holes through it, close together, with a largenail; bend the sheet into a half cylinder, rough sideout, like a horseradish grater; nail the edges to aboard somewhat longer <strong>and</strong> wider than the tin.Then, holding the ear of corn pointing lengthwisefrom you, grate it into a vessel held between theknees.The meal thus formed will need no water, butcan be mixed in its own milk. Salt it, <strong>and</strong> bakequickly. The flavor of " gritted bread " is a blendof hot pone <strong>and</strong> roasting ears — delectable ! Hardcorn cap be grated by first soaking the ears overnight.
