Edible EducationStrawberry Spinach Salad with Raspberry Poppyseed DressingSERVES 4Salad4 cups cleaned and washed baby spinachor spring mix1 cup fresh strawberries, slicedHalf of a red onion, peeled and sliced2 tbsp toasted almond sliversRaspberry Poppyseed Vinaigrette1 cup fresh raspberries2 tbsp red wine vinegar1 tsp poppyseeds¼ tsp crushed black pepper1 tsp sugar¼ tsp mustard (optional)4 tbsp olive oil or canola oilSalt to tastePlace the raspberries and vinegar in a food blender and purée until smooth. Add remaining vinaigretteingredients and whisk until well blended. If the vinaigrette is too thick, add vinegar or oil.Toss the spinach or spring mix with the vinaigrette just before serving. Garnish the salad with fresh slicedstrawberries, red onions and toasted almond slivers.This salad is versatile and can be dressed up in a variety of ways.
