CONCLUSIONSDur<strong>in</strong>g storage, for the lettuce packaged <strong>in</strong> BOPP film, the water activity <strong>in</strong>creaseduntil day 4; this can be correlated with lower values recor<strong>de</strong>d for water vapor permeability.Sensory analysis results are correlated with oxygen, carbon dioxi<strong>de</strong> and watervapor permeability properties.Lettuces packaged <strong>in</strong> D20A-Amp and D20A-C08G films reached a suitable levelof O 2 and CO 2 <strong>in</strong>si<strong>de</strong> the bag, so the lettuces stored <strong>in</strong> these bags ma<strong>in</strong>ta<strong>in</strong><strong>in</strong>g theirfreshness for the entire storage period (10 days).Dur<strong>in</strong>g storage, for Env<strong>in</strong>ia mix lettuce (type A), higher values for total mesophilicbacteria were recor<strong>de</strong>d, as evi<strong>de</strong>nce of <strong>in</strong>creased sensitivity of Endivia lettuce comparedwith green lettuce, related to m<strong>in</strong>imal process<strong>in</strong>g (cutt<strong>in</strong>g, wash<strong>in</strong>g).The results <strong>in</strong>dicated that the permeability of the packag<strong>in</strong>g film affects theatmosphere <strong>in</strong>si<strong>de</strong> the bag, product quality and shelf life.After complet<strong>in</strong>g the experiments, comparative analysis of the two types of lettucesalmples showed a higher microbiological stability for type A (Endivia mix lettuce), up to10 days of storage; D20A-Amp film is consi<strong>de</strong>red a viable alternative for lettuce packag<strong>in</strong>g.ACKNOWLEDGMENTS.
