Proceed<strong>in</strong>g of the 4 rd International Symposium“NEW RESEARCH IN BIOTECHNOLOGY” USAMV Bucharest, Romania, 2011Figure 4 Yeasts and moulds variation dur<strong>in</strong>g storage time for both types of lettuces(Endivia mix – A and green lettuce – B)Dur<strong>in</strong>g storage, there were high values for mesophilic bacteria cell concentrationfor type A lettuce, as an evi<strong>de</strong>nce of <strong>in</strong>creased sensitivity of salad mix compared with greenlettuce, related to m<strong>in</strong>imal process<strong>in</strong>g (cutt<strong>in</strong>g, wash<strong>in</strong>g).Regard<strong>in</strong>g BOPP film, us<strong>in</strong>g a perforated film (Ø 5mm), did not lead to favorableresults <strong>in</strong> terms of microbiological results.There was a microbiological <strong>de</strong>gradation of green lettuce start<strong>in</strong>g the day 4 ofstorage (higher values for yeasts and molds, total coliforms bacteria and mesophilicbacteria). The microorganisms growth was accord<strong>in</strong>g with <strong>in</strong>creased water activity, start<strong>in</strong>gwith day 4 of storage. It must be consi<strong>de</strong>red the lower value of water vapor permeability ofBOPP film. Regard<strong>in</strong>g Envidia mix lettuce, number of the coliforms bacteria, an <strong>in</strong>dicatorfor safety of the product, is not consi<strong>de</strong>red representative for the comparative study of thethree materials. But after 7 ddays of storage, the lettuce packaged <strong>in</strong> LDPE film wasma<strong>in</strong>ta<strong>in</strong>ed at the lowest value.
