CONCLUSIONOptical spectroscopic characteristics of the pigment reveal the follow<strong>in</strong>g: by UV-VIS<strong>in</strong>vestigation, <strong>in</strong> etanol media, two absorption bands at 374 and 508 nm was obta<strong>in</strong>edrespectively. Us<strong>in</strong>g different excitation wavelengths, <strong>in</strong> fluorescence emission three wellstructured emission bands were evi<strong>de</strong>nced at 430, 455 and 525 nm respectively <strong>in</strong> aqueousas well as <strong>in</strong> ethanol solution.Antioxidant activity of the pigment was found around 90% is attributed a good stability tothe oxidative processes.
