The <strong>Champion</strong> • Wednesday 9 January 2013AFTER sharing my healthysalad option last week, I’vedecided to indulge all thosewho have already abandonedtheir New Year’s resolutions.This week’s sweet treat is adelicious clementinecheesecake with raspberriesand ice–cream. This dish isgreat for entertaining and is ahuge hit at the WarehouseKitchen and Bar. Follow thesesimple steps to create this tastydelight in your own kitchen!For six individual cheesecakesyou will need 2½ X 2 inch rings(approx.), for one largecheesecake you will needa2X9inch ring (approx.)Base:125g all–butter shortbreadbiscuits blended to a fine crumb4 tbsp icing sugar70g melted butterFilling:300g mascarpone cheese100ml double cream1litre Clementine juicereduced to 100/150ml3 fresh, leafy clementines4 tbsp icing sugarServe with:Good quality chocolate icecream200g raspberriesTo start, add the icing sugar,shortbread biscuits and warmmelted butter together.Mix well until incorporated.Spread this mixture evenlyinto the ring/s and pack it intightly – you don’t want thebase to crumble when serving.Place in the fridge to set.For the filling, boil and reducethe clementine juice with theclementine leaves, until you areleft with around 100/150ml ofdelicious dark, thick juiceStrain to remove the leavesand leave to cool.Mix the mascarpone and theicing sugar in a mixer untilsmoothAdd the cream to the mixtureand slowly mix until it issmooth and you can see thecream start to thickenAdd ¾ of your reduced juiceand mix well.Fill your ring/s with themixture and use a flat edgedknife to smooth off the top for aclean finish.Place in the fridge for threehours or until firm.Leave the cheesecake/s tostand for about half an hourand then wrap a warm tea towelaround the cake ring to loosenit and allow you to remove thering.Peel your fresh clementinesinto segments, removing asmuch of the white pith aspossible.Add the segments andremaining ¼ of reduced juice toa pan.Warm very gently andcarefully spoon on top of yourcheesecake.Serve with a few freshraspberries and a scoop ofchocolate ice cream – twoscoops if you need a break fromyour New Year resolutions!SEFTON residents have untilMonday (January 14) to havetheir say on proposed changes tothe library service in the borough.The council is calling forresidents’ views on draftproposals and a range ofmitigating measures as well aspotential new ways of deliveringthe service.No final decision has been takenat this stage, but last Octobercabinet members agreed forfurther consultation to go aheadon an option which would see justsix of the Sefton’s 13 librariesremain in place in the borough.They would be located in thearea’s five main towns – Bootle,Crosby, Formby, Maghull andSouthport – along with a‘co–located’ library in the newNetherton Activity Centre leisurefacility.Under the draft proposal, thelibraries could be complementedby improved opening hours,extensive collections, improvedSConsultationon proposedchanges tolibrary servicedraws to closeby Natasha Young...but there’s stilltime for people tohave their say’ICT facilities and outreachservices. Councillor Peter Dowd,leader of Sefton Council, said:“There is still time for people tohave their say and we havealways said we will take all viewson board before making any finaldecisions.“These are unprecedented timesfor the council and we take nopleasure from being in a positionwhere we have to make furthermassive savings of more than£43m over the next two years.“But no final decisions havebeen made on libraries and Iwould urge people to fill in thenew questionnaire before theclosing date on January 14.”The consultation questionnaireis available at www.sefton.gov.uk/libraries.
