Edible EducationAsparagus and Sun-dried Tomato FrittataBy <strong>Sunterra</strong> Chef Michael CrippsServes 4 to 61/2 cup white onion, finely chopped6 to 8 asparagus spears1/2 cup sun-dried tomatoes1/4 cup green peppers, diced1 tbsp olive oil or vegetable oil8 whole eggs1/4 cup milk or cream1/4 cup Parmigiano Reggiano, shreddedSalt and pepper to tasteCut asparagus into 1 cm pieces and discard the white, woody ends. If the sun-dried tomatoes are packed in oil,remove and pat dry on paper towel.Combine eggs and milk (or cream), season with salt and pepper and whisk.Preheat oven-safe skillet on stove and add oil. Sauté onions until translucent. Add asparagus, sun-dried tomatoesand peppers and sauté lightly. Reduce heat to medium low and pour egg mixture over vegetable mixture.Stir with spatula and scrape sides until the eggs are mostly cooked, but still wet.Stop stirring, add cheese and continue cooking on low heat, or place in oven on medium heat, until firm.For afresh twist• Add your favourite vegetables such as broccoli, mushrooms and spinach.• If you want protein, add Italian sausage or chorizo.• Substitute the Parmigiano Reggiano with Asiago, cheddar, provolone or Swiss.• Add Spanish flare with diced potatoes instead of asparagus and peppers.• To kick the flavour up a notch, add Cajun spice or Espelette peppers, and herbs like cilantro or basil.<strong>Sunterra</strong> Retail Office200 – 1851 Sirocco Drive S.W.Calgary, Alta.
