Food &DrinkEdited by Ricard Martínrmartin@timeout.catNikkei inspirationWe talk to Albert Adrià about Pakta, Barcelona’s mosthotly-anticipated new restaurant. By Ricard MartínAlbert Adrià has just opened Pakta, his distillation of the essence ofJapanese-Peruvian Nikkei cuisine. And hot on its heels follows Yauarcán,his next project, a Mexican restaurantdue to open in the Raval this month. What inspired you to open Pakta?Peruvian cuisine is in fashion, and Idon’t believe that’s a temporary thing:it’s here to stay. Kyoko Li, from Japan, and Jorge Muñoz, from Peru, werealready working for me, and we justsaid, Let’s open a restaurant!Do you lean more towards Japanor Peru?We started working with traditionalJapanese and Peruvian cookingseparately. Then we mixed them up.We created a third style, which isNikkei as seen by Adrià. As atTickets, it’s what the customer wantsthat will guide us. As well as our ownpersonal approach. What’s Pakta’s top priority in themedium term? The style and quality of the nigiri. Inno time at all we can create a powerful, innovative culinary language. We’remaking nigiris with jowl bacon, squid, salmon with ají amarillo –yellow chilli-pepper sauce. You won’tcome here to eat your standard tunanigiri with tuna. How many courses are there onthe tasting menu?About 22. But chefsare looking south. Curious, isn’t it?They’re looking to emergent, lesserknowncountries. They’ve got theproduce, and without that there’s nocuisine. With all due respect, in anyPeruvian village you’ll findeverything you can find in Denmark. Then again, however great a varietyof vegetables you have, it’s theground, the pH of the soil, that givesyou that typical Scandinavianacidity. Mexico is soon going toproduce a boom of talented youngchefs with exciting new ideas.Incidentally, in the old days, restaurant guides used to tell yousomething new. Now they confirmwhat you already know. I don’t workto win awards, but if someone wantsto give me one, I don’t have a problemwith that. But a full restaurant isbetter than any star. What’s your Mexican restaurantgoing to be like? It’s going to have 50 covers plus a barwhere you can eat. If it turns intoanother Tickets, I’ll be in trouble, because I don’t know if I can copewith more than 50 people. Anddownstairs there’ll be an area fortacos and mescal called La Guarida. It’ll be like something out of a RobertRodríguez film, a real From Dusk TillDawn atmosphere. Are you doing so much in such ashort time because you’ve takenthe helm yourself? Do you want tobranch out in every way you can?No, that’s not the plan. But think of amarried couple planning a family:they have three kids in five years andthe job’s done. AroundTownEdited by Eugènia Sendraesendra@timeout.catSaints & pagan firesA night of fireworks, bonfires, coca and rivers ofcava to celebrate midsummer. By Maria Junyent‘Primavera mor, l’hivern es retira,’ –‘Spring dies, winter retreats,’ sangCatalan singer-songwriter JaumeSisa. And he’s spot on: the night of23 June marks the summer solstice, the shortest night of the year, whichis also Saint John’s Eve. The originsof the celebration are unclear, andapart from the name, it has fewreligious elements. The basicingredients are firecrackers, bonfires, music, dancing, coca de Sant Joan (asweet pastry covered in candiedfruits and pine nuts) and plenty ofcava. The Ajuntament de Barcelonawebsite helpfully lists all the fireworkshops that open in the weeks leadingup to the festival, as well as theofficial bonfires and street partiesthat are organised all over the city. It’sa night when families, friends andwhole neighbourhoods meet up andstay out late, and the best place to beis somewhere outside, whether on arooftop terrace, by the beach, in asquare or up in the hills.La revetllaAlthough the official public holidayfalls on the 24th, which is Saint John’sDay, the real celebrations take placeon Saint John’s Eve, what Catalanscall ‘la revetlla’ – the evening beforean important festival, where theconcept of evening is stretched untilthe early hours of the followingmorning. Now we’ve covered thebasics, it’s time to sketch a plan forsome midsummer madness. Start thenight with a glass of cava and anaperitif: you’ll need plenty of energyif you’re going to survive untilmorning. You’ll also need strongnerves: unsupervised kids with bagsof noisy firecrackers are part andparcel of the tradition. Pretty soonthe whole city is vibrating to thesound of ricocheting bangers. could be a good moment for a slice ofcoca – the colourful candied fruit, glace cherries, scattered pine nutsand liberal dusting of sugar makean edible firework display inthemselves. A strong coffee andyou’re ready to join the party. One ofthe best ways to experience thefestival is to join in on one of thestreet parties held in Barcelona’sdifferent districts – there are over 50in total. Some of them offer ticketsthat include a sit-down supper, drinks, coca de Sant Joan and evenlive music concerts, while otherssimply provide tables and chairs sothat people can bring their own partyout onto the street. As well as theinformation on its website, theAjuntament has created adownloadable smartphone app thatprovides all the practical informationyou’ll need to enjoy the festival. If allthe different ways of celebratingSant Joan have a commondenominator, it’s the inclusive natureof the festivities: it’s a festival foreveryone to enjoy in the open air, onone of the first nights of summer.Fire from the mountain topAlongside the pagan excitement ofthe celebrations, other traditionshave grown up around the summersolstice. One such tradition, whichhas been celebrated since 1955 andwhich has grown in popularity inrecent years, is the Canigó Flame. The dramatically situated mountainof Canigó – Canigou in French – isone of the most easterly Pyreneanpeaks, full of historical significancefor Catalan speakers north and southof the Pyrenees. On the 22nd a hugebeacon is lit on the summit, andtorches kindled in the fire are carrieddown in relay to light Saint John’s Evebonfires in towns and cities all overCatalonia, symbolising the vitality ofCatalan culture. In Barcelona, theflame is received in Plaça Sant Jaumeon the afternoon of the 23rd, to greatfanfare. Later that same evening, representatives from each of thecity’s different districts gather in thesquare to receive the same flame andcarry it back to their respectivebarrios to light their own bonfires.SANT JOAN23-24 JuneVarious venuesMore information:http://santjoan.bcn.cat/SHUTTERSTOCKAround TownJune 2013 Time Out BCN Guide 23
