Almost four and a half years ago, we<br />
held the first ever GABS at The Local<br />
Taphouses, our craft beer venues in<br />
Melbourne and Sydney, to celebrate<br />
the diversity of beer in a unique way. To think that<br />
some international brewers now consider it to be<br />
one of the best beer festivals in the world is both<br />
humbling and incredibly exciting.<br />
That hasn’t stopped us from trying to make<br />
the GABS experience even better and this year<br />
we have lots to get excited about, not least that<br />
GABS is heading to Sydney for the first time.<br />
Ticket prices are now better value than ever with<br />
our new Beer Buddy tickets less than $30 (plus<br />
booking fee).<br />
So where do you start at GABS? How about<br />
grabbing one of our famous tasting paddles or the<br />
Coopers Festival Glass and enjoy some of the 300<br />
beers available, including 118 ‘Festival Beers’ made<br />
especially for the event by brilliant brewers from<br />
Australia, NZ, Japan, Italy and England.<br />
There are more brewery stands in the Dan<br />
Murphy’s Market Place than ever before with<br />
dozens of exciting and fun events scheduled.<br />
Make sure you explore the Taste New Zealand<br />
area showcasing a range of beers from the best<br />
breweries across the ditch.<br />
Our food offering takes another step up with<br />
more renowned restaurants like Three Blue Ducks<br />
and LP Meats (Sydney) and Meat Mother, Uncle<br />
and B’Stilla (Melbourne) having food stands.<br />
Two education areas will now feature – The<br />
Local Taphouse 'Craft Beer College' with brewer<br />
panel discussions and masterclasses hosted by<br />
Pete Mitcham, and Steel 'Adventures in Craft'<br />
with Kirrily Waldhorn, the Beer Diva, focusing<br />
on beer and food, as well as fun ‘out there’ and<br />
unexpected beer experiences.<br />
The new Little Creatures Carnival sees<br />
entertainers and circus performers roving the<br />
festival hall along with spectacular shows in the<br />
Carnival Circle with some performances even<br />
matched with Little Creatures beers!<br />
Along with a range of fun games to play, the<br />
KegStar table tennis ‘Kegaseum’ will see brewers<br />
take on beer fans in a round robin competition for<br />
bragging rights.<br />
The Triple M Dr Dan Bar will showcase 10<br />
different styles of beer selected from The Local<br />
Taphouse’s hugely popular annual beer poll.<br />
We have also been working on cool tools to help<br />
you decide which beers to sample and which beer<br />
and food pairings to try. The best place to discover<br />
all of these exciting elements will be the <strong>2015</strong><br />
GABS Official Apps. If that’s not enough, we’re again<br />
teaming up with some of the best craft beer venues,<br />
bottle shops and cellar doors to help continue your<br />

ENTRY PROCEDURES<br />
Melbourne - entry is via the Nicholson Street<br />
entrance to the Royal Exhibition Building.<br />
Sydney - entry to the Exhibition Hall is via the Bay<br />
8 Locomotive Street entrance in the Australian<br />
Technology Park.<br />
As this is a licensed event, ensure you can provide<br />
photo ID on request. The event organisers also<br />
reserve the right to check bags or refuse entry.<br />
TOKENS<br />
All drink and food purchases at GABS can only be<br />
made using <strong>official</strong> GABS tokens. Each token is<br />
worth $2. Tokens are available for sale from the<br />
Token Booths (with cash or card) or from Token<br />
Sellers roaming the festival hall (cash only). Please<br />
note that surplus tokens are not refundable.<br />
GABS OFFICIAL APP<br />
The GABS Official App has a stack of<br />
information about all the beers at the event<br />
and tools to help you choose which beers suit<br />
your palate and expectation. There is even a<br />
Paddle Planner! The App also suggests great<br />
beer and food pairings and contains the full<br />
schedule of what’s going on during the festival.<br />
TASTING PADDLES<br />
With so many incredible beers on offer, sampling<br />
is the most popular pastime at GABS. While 85ml<br />
individual tasters are available to purchase for just<br />
1 token ($2), tasting paddles allow you to purchase<br />
up to five different tasters at a time. To help bar<br />
staff, please mark the beer numbers on the paddle<br />
in chronological order with the chalk provided before<br />
you reach the bar for service. Only beers available<br />
within a given bar section can be purchased at that<br />
section so plan ahead to avoid frustration.<br />
COOPERS FESTIVAL GLASS<br />
At some point you will certainly find a favourite<br />
beer. Rinse your Coopers Festival Glass and order<br />
a fill at the main bars or the Dan Murphy Market<br />
Place stands. Please hang on to your glass as you<br />
will only receive one. Replacement glasses can be<br />
purchased from the Merchandise Stalls.<br />
FESTIVAL BEERS<br />
One of the unique highlights of GABS is the Festival<br />
Beers brewed by leading Australian and international<br />
breweries. Brewers can submit any beer they like as<br />
long as they’ve never brewed it before. Some choose<br />
to brew in a traditional style, perhaps with a twist,<br />
while others use exotic ingredients and brewing<br />
processes to come up with something highly creative.<br />
OTHER DRINKS<br />
Wine, cider and non-alcoholic drinks will be sold<br />
at some exhibitor and food stands. Free water<br />
is available at hydration stations located near<br />
Containers A and B.<br />
BEER & BREWER PEOPLE’S CHOICE<br />
BEST FESTIVAL BEER OF GABS<br />
Vote for your favourite festival beer of GABS <strong>2015</strong> and<br />
one lucky voter will win three cases of craft beer. You<br />
can vote on the GABS Official Apps, at <strong>gabs</strong>festival.<br />
com.au/awards or at the Beer & Brewer stand. The<br />
People’s Choice Best Festival Beer of GABS will be<br />
announced at the end of the second session of GABS<br />
Sydney (May 30) as well as on social media.<br />

When entering GABS, every person will receive the<br />

breweries and stores.<br />
SMOKING<br />
Smoking is not permitted anywhere within the festival<br />
hall. Smokers are asked to smoke outside the main<br />
entrance and to one side. Passouts are available from<br />
a GABS security guard inside the main entrance.<br />

KEGSTAR KEGASEUM<br />
Table tennis is back but this year Kegstar wanted<br />
to raise the bar. So drop by the Kegaseum for a<br />
casual game or enter the fun Brewer vs. Beer Fan<br />
round robin competition each session.<br />
GABS is proudly part of Melbourne's Good<br />
Beer Week (GBW) which celebrates its<br />
fifth anniversary in <strong>2015</strong>. It has grown<br />
from an idea conceived over beers at a<br />
Melbourne bar in February 2011 to a<br />
festival spanning 250 events across 180<br />
venues that attracts brewers and beer<br />
lovers from near and far. Its aim from<br />
day one has been to entertain, inspire<br />
and educate people about the wonderful<br />
world of beer and shine a spotlight on the<br />
brewers, venues and individuals that make<br />
the colourful contemporary beer scene so<br />
exciting. The result has been four years of<br />
ever bigger, more creative and more diverse<br />
programming, always shot through with a<br />
sense of joyous celebration and community<br />
that spreads beyond the participating<br />
venues in Melbourne and Victoria.<br />

As in previous years, GBW has split<br />
its events into five ‘streams’ in <strong>2015</strong> to<br />
make it easier for attendees to plan their<br />
ideal adventure. They are Beer 101,<br />
Beer Lover, Beer Geek, Foodie and Good<br />
Times. Between them they offer chances<br />
for people to enjoy and learn about beer<br />
everywhere from Pentridge Prison to Vue de<br />
Monde with comedy, live music, warehouse<br />
parties and much more on the lineup too.<br />
This year the ‘Festival Hub’ moves to<br />
the heart of Melbourne to Beer DeLuxe<br />
to put good beer in front of an even wider<br />
audience. Like the conversation that<br />
sparked GBW, the very first GABS – when<br />
the A stood for Australian – also took place<br />
in February 2011. It’s quite remarkable<br />
how far both have come since.<br />

‘Natural conditioning’ or ‘bottle fermenting’ is a traditional brewing technique,<br />
in which beers undergo a secondary fermentation after the beer has been<br />
bottled or kegged. While there are only a few breweries that still take the time<br />
to do this, natural conditioning extends the beer’s shelf life, helps to enhance<br />
its flavour and eliminates the need for preservatives or additives.<br />
STEP 1 – ADDING<br />

happens we know the<br />
beer is ready to be enjoyed.<br />
This is why Coopers’ ales and<br />
stouts have a ‘best after’ rather<br />
than a ‘best before’ date.<br />

PILGRIMAGE<br />
INGREDIENTS OF BEER<br />
So what makes beer, beer? Very simply beer is made from four basic<br />
ingredients; hops, malt, water and yeast.<br />
1. HOPS<br />
Hops, formally known as<br />
Humulus Lupulus, are<br />
vine-like plants that act as<br />
the seasoning (balancing malt<br />
sweetness) for beer and<br />
deliver bitterness, aroma and<br />
flavour. During the annual hop<br />
harvest, hop flowers are picked off the vine, dried and<br />
then used in the brewing process. The intensity of the<br />
bitterness to the beer depends on when the hops are<br />
added in the brew cycle and the amount used. Added<br />
early they will increase the bitterness but decrease the<br />
aroma, added later will have the opposite effect.<br />
Little Creatures sources a seasonal range of<br />
specialty hops from the US, Victoria, Tasmania and<br />
New Zealand to achieve a variety of unique aromatic<br />
and bittering characters in its beers. So dedicated<br />
to sourcing the freshest, highest quality whole hop<br />
cones, Little Creatures set up a customs port at<br />
Fremantle Harbour to receive these beauties direct<br />
and throw them straight into their beer.<br />
To get the most out of these precious hops, Little<br />
Creatures installed a hopback, which is like an<br />
enormous hop tea bag that elicits delicious flavours<br />
and aromas into their beer. Little Creatures and White<br />
Rabbit are the only breweries in Australia to have<br />
this special piece of equipment… and they make the<br />
most of it.<br />
Little Creatures also takes yearly pilgrimages to the<br />
States to select the best and freshest hops from the<br />
northern hemisphere harvest. Check out brewer Dan’s<br />

2. MALT<br />
Malting is the partial<br />
germination and kilning of a<br />
grain, most commonly barley<br />
and in some cases wheat,<br />
rye, or other grains. Malt<br />
starch is converted into<br />
soluble sugar during the brewing process – producing<br />
aqueous malt extract or wort. This wort fuels the<br />
fermentation process, giving malt its nickname; “the<br />
engine room of beer”.<br />
Malt gives different flavour, colour and body to the<br />
beer depending on the style of malt used. The length,<br />
moisture content and degree of roasting (temperature)<br />
determine the colour of a beer.<br />
Little Creatures quite often mixes different malts<br />
and sources specialty malts to obtain varying degrees<br />
of colour and flavour. Malt derived proteins also<br />
contribute to the formation of the head when you<br />
pour a beer.<br />
3. WATER<br />
Water, by volume, is the main<br />
ingredient in beer. Little<br />
Creatures uses local tap<br />
water that then goes through<br />
a serious filtration process to strip the water right<br />
back. They then add stylised salt additions<br />
depending on the beer style they’re using it for;<br />
keeping in mind the salt profile can greatly affect the<br />
perceived flavour of a beer.<br />
4. YEAST<br />
Yeast is a single-celled<br />
organism that consumes<br />
simple sugars and converts<br />
them into alcohol and CO 2 .<br />
This unicellular fungus is the essential ingredient in<br />
order for the beer to go through a fermentation<br />
process and turn the hopped wort (the hoppy,<br />
sugary liquid extracted from the brewing process)<br />
into beer. Brewers’ yeast can be roughly segmented<br />
into two groups, Saccharomyces cerevisiae, a top<br />
fermenting yeast, which works at warmer<br />
temperatures creating ales, and Saccharomyces<br />
uvarum, a bottom fermenting yeast, which works at<br />
lower temperatures, for lager beers. Different types<br />
of yeast can also affect the flavour of beer, either by<br />
accentuating the existing flavour or by adding spicy,<br />
fruity tones.<br />
Ever wondered where the team at Little<br />
Creatures source their hops?<br />
Back in September, brewer Dan headed<br />
off for his annual trip to the USA. This is<br />
his story…<br />
"Every year we buy some of our hops from<br />
the USA. They are grown in the Yakima<br />
Valley and Willamette Valley where the<br />
climate is ideal for hop growing.<br />
There are hundreds of farmers growing<br />
hundreds of different varieties of<br />
hops. With any farming or raw material<br />
production there can be factors that<br />
influence the quality of a farmer’s crop.<br />
Therefore you have some farmers with<br />
sensational hops and some with poor<br />
crops... and everything in between.<br />
Many brewers around the world descend<br />
on the Valleys. In essence, breweries have a<br />

and you select the best hops you can.<br />
There are also lots of breweries that send a<br />
selector, however some don’t send anyone<br />
and they get what they are given. Little<br />
Creatures is all about making the best<br />
beer we can, so we try to get the best hops<br />
available and that’s why we will always<br />
send someone to make that choice.<br />
What’s important to remember is that<br />
if you are given or you select inferior<br />
hops you have to use them until the next<br />
season, so you need to be obsessively<br />
critical in order to ensure you’ve secured<br />
your fair share of gold... greeny yellowish<br />
aromatic gold that is."<br />

HOW TO TASTE BEER<br />
Whether you are a seasoned beer taster or a novice, these tips from Australian<br />
Beer Company’s head brewer Andy Mitchell will help you fake it and make it<br />
during GABS. As with any tasting experience, it all comes down to the senses.<br />
Look, smell, taste, feel – you can even listen to the bubbles if you wish – or<br />
perhaps it’s better to just listen to the brewer.<br />
CHECK SWIRL SNIFF<br />
1Once the beer is in a clear glass, give it a<br />
good look. Hold the glass in front of you and<br />
pay attention to its colour. Pay attention to its<br />
consistency, colour and the head on the beer.<br />
Don’t hold the beer to a light, as the colour of<br />
the light will interfere with the real look and<br />
colour of the beer.<br />
2Gently agitating your beer in the glass allows<br />
the smells trapped in the beer to escape.<br />
This prepares the beer for the next step.<br />
Swirling the beer also helps you see the colour<br />
and head retention, or how well the head on<br />
the beer stays in one piece – this head also<br />
traps some of the aromas for you to taste.<br />
The emphasis is on gently. Don’t go splashing<br />
everyone around you. That is the best way to<br />
lose friends quickly.<br />
3Most of what you experience when you taste<br />
something is smell. Don’t believe us? Hold your<br />
nose and taste something. Then taste it again<br />
normally. You will notice a huge difference.<br />
Take a deep sniff of the beer to fill your nose<br />
with its aroma. This will give you a basic idea<br />
of the smell and the taste before you drink it.<br />
Sniff but don’t inhale the beer through your<br />
nose. You’re bound to choke and make a scene<br />
and no one wants that!<br />

OVERALL IMPRESSION<br />
4At this point, you should be noting the<br />
consistency of the beer in your mouth (called<br />
mouthfeel) as well as some of the basic flavours<br />
in the beer. Take a small sip of the beer.<br />
Remember that you are trying to experience<br />
the beer, not down it like at a party. Swish<br />
the beer around in your mouth so all your<br />
tastebuds get their turn with it. Don’t guzzle,<br />
scull, or drink out of a shoe.<br />
5While the beer is still in your mouth, breathe<br />
out through your nose. This action, called<br />
retro-olfaction, will be similar to your initial<br />
smell of the beer, but should be slightly<br />
different due to the temperature difference<br />
of the beer. At this point, notice the different<br />
flavours of the beer, including sweetness,<br />
bitterness and acidity/tartness.<br />
6How does this beer make you feel? Do you<br />
want to drink it at the beach with a salty<br />
mouth? Would it taste delicious with dessert?<br />
When do you want to drink this and do you<br />
want to take it home with you? It’s not just<br />
the beer making an impression on you. You<br />
are making an impression on the beer. Treat it<br />
with respect. Enjoy it. Savour it.<br />

The look of fake tanned skin in a pipe smoke filled<br />
room. A citrus nose hiding the ‘old spice’ banana and<br />
clove typical of this style like a pensioner surrounding<br />

continues with caramel notes and then comes the<br />
hop bitterness for those who wish for his way of life.<br />

Made with ingredients and methods available to<br />
Australian shearers in the 1800s. Quality bore<br />

filter beds in timber mash tuns, a wood-fired kettle,<br />
open fermentation and natural carbonation. A<br />

Two years ago a mystery wild yeast made its way<br />
into the brewery’s Pot Kettle Black. Beer was<br />
dumped and tears shed but some kegs remained,<br />
tasting greater every day but unable to be tamed.<br />
Now having vented its rage within a Pinot Noir Port<br />
barrel, the result is a happy accident!<br />
