Context<br />

The RNA was established in 1875 with the purpose of providing an opportunity for country and urban<br />

residents to celebrate together by putting on the first ever Queensland Inter-colonial Exhibition. The<br />

mission of the Association, which remains the same today, was to promote and encourage the<br />

development of the agricultural, pastoral, horticultural, industrial, manufacturing and cultural resources of<br />

the State of Queensland.<br />

Today the RNA represents around 5, 000 members and the RNA Showgrounds hosts not only the Ekka<br />

but hundreds of other events and activities each year. The Ekka still remains the RNA’s landmark event,<br />

running over ten days at the same site as the very first show back in 1875.<br />

RNA’s exciting Regeneration project will rejuvenate and provide the Ekka with state of the art facilities and<br />

see the RNA Showgrounds become the centrepiece of a new mixed-use precinct in Brisbane (Bowen<br />

Hills). The RNA Showgrounds is set to be transformed into a lifestyle and cultural hub for the community<br />

to access all year round. One of the key reasons for redeveloping the RNA Showgrounds is to generate<br />

year round, seven days a week vitality throughout the precinct for use by the community. The<br />

regeneration will preserve the historic character of existing facilities, while creating a new and unique<br />

sense of place for all Queenslanders.<br />

Primary Function (Why this job exists)<br />

The Head Kitchen Steward is responsible for overseeing the team of Kitchen Stewards and ensuring they<br />

are performing to the required level at all times. They are in charge of the cleaning and sanitising of the<br />

kitchen areas, utensils and equipment, the monitoring and control of stock and chemicals, and the<br />

rotation and storage of inventory. This role will effectively liaise with the kitchen brigade in keeping a well<br />

organised, clean and productive kitchen.<br />

Key Responsibilities/Accountabilities<br />

1. Ensure the Kitchen Stewards are presented to the required standard, are following all policies<br />

and procedures and are performing to the highest level at all times, leading by example.<br />

2. Pro-actively liaise with Chefs in order to adequately determine the needs of the team.<br />

3. Have knowledge of OHS and hygiene standards in commercial kitchens, and ensure staff under<br />

your guidance follows these principles.<br />

4. Ensure all machinery is operated in line with operating instructions, and maintain machinery and<br />

surrounding areas to the highest possible standards.<br />

5. Monitor and control stock levels and place orders for required stock. Ensure that all foodstuffs<br />

are correctly stored and rotated upon receipt of new food items. Check and sign for any<br />

deliveries.<br />

6. In an efficient and timely manner ensure the completion all washing and cleaning duties on shift<br />

to ensure sufficient crockery, cook wear and utensils are available to the kitchen brigade.<br />

7. Ensure all rubbish and waste products are disposed of appropriately, in the correct time frames<br />

and in line with hygiene and OHS guidelines.<br />

8. Comply with RNA Showgrounds policies and procedures and relevant appropriate legislation and<br />

meet OHS, anti-discrimination, equal opportunity and other legislative requirements in<br />

accordance with the parameters of the above position.<br />

1. The ability to stay calm and focused in a fast paced, high pressure environment.<br />

2. Productive member of the kitchen brigade and ensures the Kitchen Stewards are also<br />

contributing its success by providing adequate support to both front and back of house.<br />

3. Strong worth ethic, able to cope with the physical demands of the role, while ensuring the<br />

highest standards in both individual and team performance.<br />

4. Ensures time management of Kitchen Steward Duties, and ensure all tasks completed within the<br />

required timeframes and budgets.<br />

5. Effective management and motivation of direct reports, ensure sufficient training, supervision and<br />

performance management are taking place.<br />

EXPERIENCE Ideally the successful candidate will<br />

have supervisory experience in a large<br />

commercial kitchen, at a minimum<br />

they are required to have three years’<br />

experience as a Kitchen Steward in a<br />

commercial kitchen and the natural<br />

ability to lead a team.<br />

Proven track record of working in a<br />

fast paced environment while<br />

providing excellent support for the<br />

kitchen brigade.<br />

Have knowledge of OHS and hygiene<br />

standards in commercial kitchens.<br />
