Water, hot 1½ qt.<br />

Butter 8 oz.<br />

<strong>UNCLE</strong> BEN’S ® Classic 1 (28-oz.) bag<br />

Cornbread <strong>Stuffing</strong> Mix<br />

Soft yeast rolls, 2½", split, warm 100<br />

Butter, melted 6¼ cups<br />

Cranberry orange relish, 6¼ cups<br />

commercially prepared, frozen, thawed<br />

Roast turkey breast, carved 6¼ lb.<br />

Sandwich picks 100<br />

Sweet gherkin pickles, drained 100<br />

1. Combine water, butter, and seasoning packet in a full-size hotel pan.<br />

Stir well until butter is melted.<br />

2. Stir in bread crumb mixture. Cover and bake in preheated 350˚F<br />

conventional oven for about 25 minutes.<br />

3. To plate, brush split edges of two rolls with melted butter. Spread<br />

1 tbsp. cranberry relish on bottom halves. Then top each with 1 oz. roast<br />

turkey and 2 tbsp. prepared stuffing; close with tops of rolls. Secure<br />

each with a sandwich pick skewered with one pickle. Serve warm.<br />

The familiar, comforting flavors of Thanksgiving are featured on two warm yeast rolls brushed with melted butter and layered with savory<br />

Spinach and Artichoke<br />

Stuffed Portobella<br />

Ingredients quantity directions<br />

Water, hot 3¼ qt.<br />

Butter 1 lb.<br />

<strong>UNCLE</strong> BEN’S® Traditional 1 (58-oz.) bag<br />

White Bread <strong>Stuffing</strong><br />

Olive oil 4 cups<br />

Garlic cloves, sliced thin 24<br />

Spinach artichoke dip, 11¼ lb. (6 qt.)<br />

commercially prepared, frozen, thawed<br />

Portobella mushrooms, stems removed 72<br />

Italian blend shredded cheese 18 cups<br />

(mozzarella, provolone, Parmesan)<br />

Parsley, fresh, chopped As needed<br />

1. Combine water, butter, and seasoning packet in full-size hotel pan. Stir<br />

until butter is melted.<br />

2. Stir in bread crumb mixture. Cover and bake in preheated 400˚F<br />

conventional oven for about 30 to 35 minutes.<br />

3. Heat olive oil in small saucepan over medium-low heat. Add garlic and<br />

cook until fragrant but not colored, 3 to 5 minutes. Remove from heat<br />

and let cool. Cover and steep for 1 hour. Strain.<br />

4. In each of two large mixing bowls, gently combine 3 qt. prepared<br />

stuffing with 3 qt. spinach artichoke dip.<br />

5. Brush portobella caps evenly with garlic-infused oil. Portion ½ cup<br />

(#8 scoop) on stem side of each portobella cap and spread evenly to edges.<br />

6. Bake in preheated 400˚F conventional oven for 10 minutes. Remove<br />

from oven and top each portobella evenly with ¼ cup cheese. Return<br />

to oven for 5 minutes.<br />

7. Serve warm topped with a drizzling of garlic-infused oil and parsley.<br />

Fresh portobella mushroom brushed with garlic-infused olive oil, then stuffed with a blend of <strong>UNCLE</strong> BEN’S ® Traditional White Bread <strong>Stuffing</strong> and rich,<br />

<strong>Stuffing</strong> Mix<br />

Butter 2 cups (1 lb.)<br />

Water 10 cups<br />

Chipotle peppers in adobo sauce 6 tbsp.<br />

Cilantro, chopped ½ cup<br />

Corn, canned, drained 6 cups<br />

Monterey Jack cheese, shredded 2 cups (½ lb.)<br />

Sour cream 6 cups (1½ lb.)<br />

1. Combine contents of seasoning packet with butter and water in<br />

stockpot. Bring to boil. Stir in bread crumb mixture.<br />

2. Puree peppers in sauce. Add to remaining ingredients and mix well.<br />

Add to stuffing, mix, and chill slightly.<br />

3. With #10 scoop, form 4-oz. patties, ½" thick, and refrigerate. Pan fry<br />

in vegetable oil to order.<br />

Water 7 cups<br />

Heavy cream 6 cups<br />

Lemon juice 2/3 cup<br />

Tilapia fillets, 5½ oz. 40<br />

OLD BAY ® Seasoning Lemon Butter<br />

Butter, room temperature 2 cups (1 lb.)<br />

Lemon juice, fresh 2/3 cup<br />

1. Combine contents of seasoning packet with water and cream in<br />

stockpot. Bring to boil. Stir in bread crumb mixture and lemon juice.<br />

2. Wrap fillets around 4-oz. portions of stuffing. Lightly season with salt<br />

and white pepper as desired.<br />

3. Bake on an oiled sheet tray in preheated 375˚F conventional oven for<br />

10 to 12 minutes or until internal temperature is 165˚F.<br />

4. Combine butter, lemon juice, seasoning, and parsley.<br />

5. Drizzle each baked tilapia with 1 tbsp. butter and serve with<br />
