Creating Delicious Whole-Food Treats TREAT RECIPES Chocolate Beet Cake (2) Great for birthdays and parties—my kids beg for this decadent but rather nutritious cake! 3 eggs (organic, free-range) 1½ C organic, raw coconut palm sugar or Sucanat (unrefined cane sugar) ¾ C coconut oil (can substitute applesauce for half of this, if desired) 1 tsp. vanilla 1¾ C (about 4 medium-large) beets, peeled and steamed ¼ C baking cocoa (non-alkalized) or raw powdered chocolate 2 C finely ground whole-wheat flour (soft white wheat is best) 1½ tsp. baking soda ½ tsp. sea salt Preheat oven to 350°. Purée the beets in a high-powered blender, then add the eggs, sugar, oil, and vanilla. Add the chocolate and other ingredients.
