Method<br />

1. In a bowl, stir the butter into the boiling water until it has completely melted.<br />

2. Stir in the oats and leave the mixture to stand for 5 minutes - you should be left<br />

with a fairly stiff dough.<br />

3. Rub some oats on to a surface suitable for rolling out the dough (to stop it sticking).<br />

4. Turn out the dough, then form it into a ball.<br />

5. Next, roll it out to around 1/4 inch thick.<br />

6. Cut it into shapes - triangles are more traditional, but any shape will do!<br />

7. Place the uncooked oatcakes on a greased baking tray and bake at 350 deg F (180<br />

deg C) for around 15-20 mins, until golden. 8. Meanwhile, combine the pureed pear<br />

with the cottage cheese. 8. Cool the oatcakes, then either top them with with cottage<br />

cheese, or serve it as a dip.<br />

7 Apricot and Raisin Flapjacks<br />

Ingredients<br />

8 oz porridge oats<br />

4 oz butter<br />

2 oz rice flour<br />

2 fl oz rice syrup<br />

10 oz dried apricots<br />

2 oz raisins<br />

Method<br />

1. About one hour before you start, soak the dried apricots in warm water or apple<br />

juice to soften them.<br />

2. Preheat the oven to 350?F (180?C).<br />

3. Over a low heat, melt the butter. Then stir in the rice syrup and mix well. 4<br />

. Next, stir in the oats, rice flour, and raisins. Mix together thoroughly. The mixture<br />

should be moist enough to 'clump' together, but should not be runny at all. If it is, just<br />

add more oats, a little at a time.<br />

5. Chop the pre-soaked apricots finely.<br />

6. Press half the oat mixture into a greased baking pan, then top with the chopped<br />

apricots.<br />

7. Put the rest of the oats on top and flatten thoroughly with the palms of your hands.<br />

8. Bake for 25 mins, until firm and golden.<br />

9. Slice into fingers when still hot, but don't try to remove the flapjacks from the pan<br />

until they've cooled down!<br />

8 Wholemeal Apple Pancakes<br />

Ingredients<br />

3 oz wholemeal flour<br />

1 oz rolled oats<br />

2 tsp wheat germ<br />

pinch cinnamon<br />

2 tsp baking powder<br />

2 oz raisins<br />

1 small apple, peeled, cored and diced<br />
