Method<br />
Preheat the oven to 400 deg F (200 deg C).<br />
Place all the dry ingredients and cheese in a bowl and mix thoroughly.<br />
Using your fingers, rub in the butter and cream cheese until you have a crumbly<br />
mixture.<br />
Using a fork, incorporate the milk into the mixture until it holds together loosely.<br />
Knead the dough briefly on a lightly floured surface, then – using your hands – shape<br />
it into a rough circle around 3/4 inches thick.<br />
Cut the dough into any shape you choose (fingers, circles etc).<br />
Put the shapes onto an ungreased baking sheet and cook for 15 to 20 mins, until<br />
golden in colour.<br />
Cool to a safe serving temperature – you should get around six to eight biscuits using<br />
this recipe… plenty for you and baby to share!<br />
84 Twice Baked Sweet Potato<br />
Ingredients<br />
1 medium sweet potato<br />
2 tbsp cooked chicken, finely chopped (optional – the potato will taste great without<br />
meat if your baby follows a vegetarian diet)<br />
1 tbsp natural yogurt<br />
1 tsp fresh chives, chopped finely<br />
1 tbsp Cheddar cheese, grated<br />
Method<br />
Preheat the oven to 375 deg F (180 deg C).<br />
Pierce the potato with a fork and bake until tender (around 45 mins).<br />
Cut the potato in half lengthwise, and scoop out the flesh, leaving around 1/4-inch<br />
remaining all the way around.<br />
In a bowl, mash the potato with the yogurt and chives, then stir in the chopped<br />
chicken.<br />
Spoon the potato mixture back into the shell and top with the grated cheese.<br />
Return to the oven and bake until the cheese is melted and golden.<br />
Cool to a safe serving temperature.<br />
85 Gourmet Sweet Potato Cubes<br />
Ingredients<br />
1 medium sweet potato, peeled and cut into 3/4 inch cubes<br />
1 pinch each of turmeric, cinnamon, paprika and cumin<br />
1 tbsp olive oil or pure coconut oil<br />
Method<br />
Combine the spices with the oil (if you wish, you can heat a small saucepan and<br />
‘toast’ the spices for a minute or two first, to really bring out their flavour!).<br />
Toss the sweet potato cubes in the spiced oil mixture until thoroughly coated.<br />
Preheat the oven to 350 deg F (180 deg C).<br />
Place the sweet potato cubes in a roasting tin and cook for between 20-30 minutes<br />
until tender, shaking the tin from time to time to turn them.<br />
