56 Chickpea Burgers<br />
Ingredients<br />
1 tin of chickpeas<br />
110g gram flour<br />
1 tsp cumin<br />
1 tsp coriander<br />
4 spring onions<br />
4 garlic cloves<br />
a bit of water<br />
Method<br />
Whizz together all the ingredients<br />
Shape a bit into a patty and fry on each side for five mins<br />
57 Potato Scones<br />
Ingredients<br />
255g mashed potato<br />
1tsp baking powder<br />
55g rice flour<br />
1/2 tsp salt (eeek - I guess you could leave this out)<br />
Method<br />
Mix together, roll into a ball and roll out into a 5mm thick circle. I cut bits out of it<br />
with a pastry cutter and then fried until brown. You can add butter and milk to the<br />
mashed potato if you're normal.<br />
58 Pea and Pancetta Frittata<br />
Ingredients<br />
1 pack pancetta, cubed<br />
Frozen peas<br />
4 eggs<br />
Method<br />
So gently fry the pancetta, so that the fat is released and greases a small frying pan. I<br />
do them on a low heat for about ten minutes, actually, because I like it a bit caramelly.<br />
Then throw in a layer or two of frozen peas, give them a stir and then put the egg<br />
mixture in<br />
Cook it for a bit, medium-low heat again, until you see the sides come away from the<br />
pan a bit, then under the grill to do the top and hey bingo, you've got a store-cupboard<br />
lunch.<br />
