47 <strong>Baby</strong> Chicken Fingers with Apple<br />

Ingredients<br />

8 oz (1 cup) ground chicken<br />

1 medium carrot<br />

1 medium apple<br />

1/2 garlic clove<br />

1/2 small onion<br />

1 small egg yolk, beaten<br />

1 oz (1/4 cup) fresh breadcrumbs<br />

pinch crushed, dried thyme<br />

pinch freshly ground black pepper<br />

Method<br />

Peel and grate the carrot, apple, garlic and onion.<br />

Place into a mixing bowl, along with the ground chicken.<br />

Add the beaten egg yolk, breadcrumbs, thyme and black pepper. Mix well.<br />

Take small balls of the mixture and roll into little "sausages".<br />

Place on a grill pan (broiler) and heat under the grill for 10 mins on each side.<br />

Allow to cool.<br />

Serve, or store some in the freezer for future use (if you haven't already eaten them!)<br />

48 Cheesy Vegetable Nuggets<br />

Ingredients<br />

8 oz (1 cup) frozen broccoli florets<br />

4 oz (1 cup) dry breadcrumbs<br />

6 oz (1 1/2 cups) Cheddar, grated<br />

2 1/2 tbsp water<br />

2 1/2 tbsp olive oil<br />

1 1/2 tsp baking powder<br />

Method<br />

Heat the oven to 375 deg F, 190 deg C.<br />

Cook the broccoli, then drain and chop well.<br />

Combine with the remaining ingredients and mix well.<br />

Form the mixture into nugget shapes and place on a greased baking tray, about 3in<br />

apart.<br />

Bake for 20-25 mins, turning halfway through the cooking time.<br />

Serve warm.<br />

49 <strong>Baby</strong> Meatballs<br />

Ingredients<br />

8oz (1 cup) lean minced/ground beef<br />

4oz (1/2 cup) mashed potatoes<br />

Method<br />

Pre-heat the oven to 350 deg F, 180 deg C.<br />

Combine the ingredients and blend well.<br />
