30 <strong>Baby</strong>’s Healthy Carrot Cake<br />
Ingredients<br />
8 oz wholemeal flour<br />
1 tsp baking powder<br />
1 tsp bicarbonate of soda<br />
pinch salt<br />
10 fl oz water<br />
6 oz raisins<br />
6 oz sultanas<br />
1 tsp cinnamon<br />
1/2 tsp nutmeg<br />
8 oz carrot, grated<br />
4 fl oz sugar-free applesauce<br />
Method<br />
1. Preheat the oven to 375 deg F (190 deg C).<br />
2. In a bowl, mix together the flour, baking soda, baking powder and salt.<br />
3. Pour the water into a small saucepan, then add the raisins, nutmeg, cinnamon and<br />
sultanas.<br />
4. Bring the mixture to a boil, then lower the heat and simmer for 5 mins.<br />
5. Place the grated carrots into a bowl, then pour the liquid mixture over them. Add<br />
the applesauce give the mixture a good stir.<br />
6. Combine the wet ingredients with the dry ingredients and mix thoroughly.<br />
7. Pour the mixture into a greased pan and bake for between 45 mins and 1 hour, until<br />
a sharp knife inserted into the centre comes out clean.<br />
31 No-Cook Tofu Cubes<br />
Ingredients<br />
1 package of firm tofu, cubed<br />
handful of cornflakes<br />
pinch of cinnamon or nutmeg<br />
Method<br />
1. Place the cornflakes into a sandwich bag and crush until fine.<br />
2. Add the cinnamon/nutmeg (or both!) and shake the bag to mix.<br />
3. Put as many tofu cubes as needed into the bag and shake well, until the cubes are<br />
coated. They are then ready to serve!<br />
