Mix the wet into the dry... add a bit more soya milk if necessary so you have a soft<br />

dropping consistency<br />

Spoon into greased bun tray (I use a fairy cake tray as muffins are a bit big) and bake<br />

at 200 degrees for 10-15 mins (until just golden)<br />

21 American Style Pancakes<br />

Ingredients<br />

250g plain flour (2 cups)<br />

2 tsp baking powder<br />

3 tbsp sugar (although this could be left out - see below)<br />

250ml milk<br />

2 eggs, lightly beaten<br />

50g unsalted butter, melted<br />

Method<br />

Mix the milk, eggs and melted butter in a large jug, add the flour and mix quickly.<br />

Don't worry about lumps.<br />

Heat a frying pan until medium hot and grease lightly with extra butter, pour in batter<br />

in batches to make rounds, baby-fist size. Cook for 1-2 minutes or until bubbles form<br />

on top and the underside is golden. Flip each one over and cook for 1 minute. Keep<br />

them warm in the oven while you finish the batch<br />

One mashed banana can be used to replace the sugar<br />

22 Low Sugar Flapjacks<br />

Ingredients<br />

4 very ripe bananas<br />

1/2 - 3/4 cup of sultanas<br />

3 cups of oats<br />

1 egg<br />

1 grated carrot<br />

2 tablespoons golden syrup<br />

1 tsp mixed spice<br />

1 tsp cinnamon<br />

Method<br />

Place all ingredients except oats in a bowl and mix with a handmixer until raisins are<br />

all chopped finely and the mixture is well blended.<br />

Stir in oats.<br />

Press into baking tray and bake for 15mins at 190deg.<br />

23 No Sugar Flapjacks<br />

Ingredients<br />

150g lower fat butter<br />

225g porridge oats<br />

<strong>100</strong>g dried apricots, chopped<br />

150g ready-to-eat stoned dates, make sure they are nice and soft and chop them into<br />

smallish cubes<br />
