<strong>100</strong>g/3½ oz couscous, cooked (follow packet instructions)<br />

2 tbsp self-raising flour<br />

1 tbsp brown sugar<br />

1 free-range egg<br />

50g/1¾oz blackcurrants<br />

1 tbsp vegetable oil<br />

To serve<br />

25g/1 oz Greek-style yoghurt<br />

Method<br />

For the sweet couscous, mix all the couscous ingredients together in a bowl to form a<br />

thick paste.<br />

In a blini pan heat the oil. Drop dollops of couscous batter in the frying pan to form<br />

small pancakes and turn over after a minute and cook for a further two more minutes.<br />

Serve with Greek-style yoghurt.<br />

16 Oatmeal Pancakes<br />

Ingredients<br />

2 cups quick oats<br />

1 cup whole wheat flour<br />

1/2 teaspoon baking soda<br />

2 teaspoons baking powder<br />

1 teaspoon salt<br />

2 tablespoons honey<br />

2 cups buttermilk<br />

2 large eggs<br />

3 tablespoons canola oil<br />

1 teaspoon vanilla extract<br />

Method<br />

Mix dry ingredients.<br />

Mix wet ingredients.<br />

Mix all ingredients together.<br />

Spoon 1/4 cup of mix onto hot greased pan<br />

17 Oaty Fruity Biscuits<br />

Ingredients<br />

soaked apricots or prunes or figs<br />

a little of the soaking juice (a tablespoon or so)<br />

a teaspoon of melted butter<br />

porridge oats/baby muesli<br />

Method<br />

Puree the dried fruit with a little juice till it's kind of mushy (or defrost icecube dried<br />

fruit purees from freezer!) mix in the oats and melted butter and cook it over a low<br />

heat for about three minutes to blend the ingredients together. Shape into biscuit<br />

shapes, bake in oven on tray till just turning brown.<br />
