Chemical Properties and Functional Substances in the Flesh and Placenta of ‘Sunlady’ Cantaloupe

Abstract
This research focused on the change of chemical properties and functional substances in the flesh and
placenta of cantaloupe hybrid ‘sunlady’ harvested in 75 days and stored at 30±2 o C. After varying storage time in
0, 1 and 2 weeks, both the flesh and placenta stored for one week had significantly greater amounts of chemical
properties and functional substances (p≤0.05) than fruit stored for 2 weeks. The placenta had greater amount of
chemical properties and functional substances than the flesh which were total soluble solids content of 12.00 and
9.20 o Brix, reducing sugar content of 108.81 and 37.63 µg glucose/g fresh mass (FM), antioxidant activity values
measured by DPPH assay at EC 50 of 0.66 and 1.57 µg FM/µg DPPH and by ABTS assay of 7.88 and 5.12 µg
Trolox equivalents(TE)/ g FM, β–carotene content of 97.23 and 68.15 µg/ 100g FM, total phenolics content of
397.19 and 149.46 µg gallic acid equivalents (GAE)/g FM, total flavonoids content of 122.39 and 22.54 µg
catechin equivalents (CE)/g FM, total dietary fiber content of 1.02 and 0.82, soluble dietary fiber content of 0.65
and 0.32 and insoluble dietary fiber content of 0.37 and 0.50 g/100g FM, in the flesh and placenta, respectively.
The amount of vitamin C in the placenta (46.35 mg/ 100g FM) was less than in the flesh (49.16 mg/ 100g FM).
Volatile compounds in flesh and placenta were analyzed by using SPME GC-MS method. Specific volatile
compounds present were 2-methylbutyl acetate, nonanal and cis-6-nonen-1-ol.

บทคัดยอ
งานวิจัยนี้มีวัตถุประสงคเพื่อศึกษาการเปลี่ยนแปลงสมบัติทางเคมี และสารหนาที่เฉพาะในเนื้อและรกที่ได จาก
แคนตาลูปพันธุซันเลดี้ ที่มีอายุเก็บเกี่ยว 75 วันนับตั้งแตเริ่มปลูก มาบมที่อุณหภูมิหอง 30±2 o C โดยแบงระยะการบมใหแคน
ตาลูปมีระดับการสุกเปน 3 ระดับดังนี้ ระดับที่ 1 ไมบม ระดับที่ 2 บม 1 สัปดาห ระดับที่ 3 บม 2 สัปดาห พบวาเมื่อบมเปน
ระยะเวลา 1 สัปดาห ทั้งเนื้อและรกของแคนตาลูปมีปริมาณองคประกอบทางเคมีและสารหนาที่เฉพาะสูงกวาระดับการบม
ระยะอื่นๆ อยางมีนัยสําคัญทางสถิติ (p≤0.05) และเมื่อเปรียบเทียบองคประกอบทางเคมีและสารหนาที่เฉพาะระหวางเนื้อ
และรก พบวาในรกมีปริมาณสารตางๆ สูงกวาในเนื้อ ดังนี้ ปริมาณของแข็งที่ละลายไดทั้งหมด 12.00 และ 9.20 o Brix มีปริมาณ
น้ําตาลรีดิวซ 108.81 และ 37.63 µg glucose/ g fresh mass (FM) และมีแอคติวิตีของสารตานการออกซิเดชันซึ่งวัดดวยวิธี
DPPH (EC 50 ) 0.66 และ 1.57 µg FM/ µg DPPH และ วิธี ABTS มีคา 7.88 และ 5.12 µg Trolox equivalents (TE)/ g FM มี
ปริมาณเบตาแคโรทีน 97.23 และ 68.15 µg/ 100g FM ปริมาณฟนอลิกทั้งหมด 397.19 และ 149.46 µg gallic acid
equivalents (GAE)/ g FM และปริมาณสารฟลาโวนอยดทั้งหมด 122.39 และ 22.54 µg catechin equivalents (CE)/ g FM
สวนปริมาณใยอาหารทั้งหมดมีอยู 1.02 และ 0.82 แบงเปนใยอาหารที่ละลายน้ํา 0.65 และ 0.32 ใยอาหารที่ไมละลายน้ํา 0.37
และ 0.50 g/ 100g FM ตามลําดับ แตพบวาปริมาณวิตามินซีในรก (46.35 mg/ 100g FM) มีนอยกวา วิตามินซีในเนื้อ (49.16
mg/ 100g FM) นอกจากนี้เมื่อวิเคราะหดวยเทคนิค SPME GC-MS พบวา สารใหกลิ่นหลักที่พบในเนื้อและรกของแคนตาลูป
คือ 2-methylbutyl acetate nonanal และ cis-6-nonen-1-ol
