Abstract<br />
The objective of this study was to investigate the physicochemical properties of bael fruit hydrolysate<br />
treated with commercial pectinase enzyme (Pectinex ® Ultra SP-L, 10292 PGU/ml). Bael fruit hydrolysate can be<br />
used as food additive in terms of typical color, flavor, and texture in functional food. Results from this study<br />
showed that bael fruit pulp treated with enzyme concentration of 2.5% (v/w) and hydrolyzed for 0, 1, 2, 4, and 6 h<br />
can be hydrolysed in five levels different in the amount of reducing sugars released during the treatment. The<br />
effect of these enzyme treatment conditions on physicochemical properties showed that bael fruit hydrolysate at<br />
hydrolysis time higher than 2 and 4 h gave greater total carotenoid content and antioxidant activities, respectively.<br />
The bael fruit hydrolysate at 6 h hydrolysis time had the smallest particle size. The rheological behavior of bael<br />
fruit hydrolysate from all treatments fitted the Herschel-Bulkley model exhibited pseudoplastic with yield stress and<br />
thixotropic behavior. An increase in hydrolysis time is associated with an increase in yield stress (τ o ) and flow<br />
behavior index (n) while the consistency coefficient (K) and apparent viscosity (η) at shear rate 100 s -1<br />
decreased. In addition, bael fruit hydrolysate also gave higher soluble dietary fiber and volatile compounds<br />
analyzed by SPME/GC/ MS when compared with no enzyme-treated bael fruit pulp.<br />

บทคัดยอ<br />
งานวิจัยนี้มีวัตถุประสงคเพื่อศึกษาสมบัติทางเคมีกายภาพของไฮโดรไลเสตมะตูม ที่ไดจากการยอยดวยเอนไซมเพกทิ<br />
เนสทางการคา (Pectinex ® Ultra SP-L, 10292 PGU/ml) เพื่อใชประโยชนเปนสารปรุงแตงสี กลิ่น รส และเนื้อสัมผัสในอาหาร<br />
ที่มีหนาที่เฉพาะ (functional food) จากการทดลองพบวา การใชเอนไซมความเขมขน 2.5% (v/w) ระยะเวลาการยอย 0 1 2<br />
4 และ 6 ชั่วโมง สามารถแบงระดับการยอยเนื้อมะตูมดวยเอนไซมโดยประเมินจากคาของน้ําตาลรีดิวซได 5 ชวง เมื่อศึกษา<br />
สมบัติของไฮโดรไลเสตมะตูมในชวงดังกลาวพบวา ไฮโดรไลเสตมะตูมที่เวลาการยอย 2 และ 4 ชั่วโมงขึ้นไป มีปริมาณแคโรที<br />
นอยดทั้งหมดและฤทธิ์ตานออกซิเดชันสูงกวาไฮโดรไลเสตที่ไดจากภาวะอื่น ตามลําดับ ไฮโดรไลเสตมะตูมที่เวลาการยอย 6<br />
ชั่วโมง มีขนาดอนุภาคเฉลี่ยเล็กที่สุด และไฮโดรไลเสตมะตูมที่ไดจากทุกภาวะมีพฤติกรรมการไหลแบบ pseudoplastic with<br />
yield stress ที่ขึ้นกับเวลา (thixotropic) เมื่อใช Herschel-Bulkley model ในการทํานายคา โดยเมื่อระยะเวลาการยอยมากขึ้น<br />
ไฮโดรไลเสตที่ไดมีคา yield stress (τ o ) และ flow behavior index (n) มากขึ้น แตมีคา consistency coefficient (K) และ<br />
apparent viscosity (η) ที่อัตราเฉือน 100 s -1 ลดลง นอกจากนี้ยังพบวาไฮโดรไลเสตมะตูมที่ไดมีปริมาณใยอาหารที่ละลายน้ํา<br />
และชนิดสารระเหยที่วิเคราะหดวยเทคนิค SPME/GC/MS เพิ่มขึ้น เมื่อเปรียบเทียบกับเนื้อมะตูมที่ไมผานการยอยดวยเอนไซม<br />
