Subsequent to this, the chef will focus on certa<strong>in</strong> Tapas: the Tortilla<br />

(Spanish Potato Omelette), Patatas Bravas (Spanish Fried Potatoes), &<br />

other famous tapas.<br />

In conclusion, students will make Paella (a Spanish seafood rice dish).<br />

This section will <strong>in</strong>clude stock mak<strong>in</strong>g, seafood and shellfish preparation,<br />

assorted knife techniques and tast<strong>in</strong>g of the f<strong>in</strong>ished dish. It will also<br />

<strong>in</strong>clude historical <strong>in</strong>formation regard<strong>in</strong>g the orig<strong>in</strong> of this national dish.<br />

of bread-mak<strong>in</strong>g<br />

<strong>Cook<strong>in</strong>g</strong> <strong>in</strong> <strong>Cava</strong> is a one on one cook<strong>in</strong>g class <strong>in</strong> <strong>Cava</strong> Spanish Restaurant<br />

& Tapas Bar with a qualified chef. These classes <strong>in</strong>clude bread and dessert<br />

mak<strong>in</strong>g, tapas tast<strong>in</strong>g and mak<strong>in</strong>g, and an <strong>in</strong>troduction to Spanish cook<strong>in</strong>g<br />

as well as an <strong>in</strong>sight <strong>in</strong>to local fish and meat available <strong>in</strong> Galway. Students<br />

will get to experience first hand the work<strong>in</strong>gs of a modern professional<br />

kitchen.<br />

These classes are designed for those who have an <strong>in</strong>terest and passionate<br />

love of food and who want to experience the <strong>in</strong>s and outs of a modern<br />

kitchen. The classes can also be tailored for the more experienced student<br />

look<strong>in</strong>g for more specific experience <strong>in</strong> the kitchen <strong>in</strong>dustry. Furthermore,<br />

they will also suit couples who have a jo<strong>in</strong>t <strong>in</strong>terest <strong>in</strong> Spanish food and<br />

cook<strong>in</strong>g. No experience is necessary.<br />

A booklet of the recipes, which will also <strong>in</strong>clude a brief history of Spanish<br />

cook<strong>in</strong>g and <strong>Cava</strong> Spanish Restaurant & Tapas Bar, will also be available<br />

for students to take home.<br />

The class runs from 9am to 1pm. It beg<strong>in</strong>s with bread mak<strong>in</strong>g and a<br />

discussion of the students own food <strong>in</strong>terests. Follow<strong>in</strong>g bread mak<strong>in</strong>g, the<br />

chef will focus on a specific Spanish dessert, complex enough to enterta<strong>in</strong>,<br />

but simple enough to be recreated by the student <strong>in</strong> his or her own home.<br />

After the dessert mak<strong>in</strong>g, there will follow a brief talk about the specific<br />

fish and meat that <strong>Cava</strong> use <strong>in</strong> their cook<strong>in</strong>g, expla<strong>in</strong><strong>in</strong>g the region and<br />

seasonality of each specific fish. Students will get to prepare specific fish<br />

and meat for cook<strong>in</strong>g and this section will also <strong>in</strong>clude a discussion of<br />

match<strong>in</strong>g fish and meat with various sauces and w<strong>in</strong>es available <strong>in</strong> <strong>Cava</strong>.<br />
