In our 35th year of providing services to our seniors, very few<br />

would think that <strong>Nikkei</strong> <strong>Concerns</strong> (NC) has a very strong Los<br />

Angeles connection. One <strong>Nikkei</strong> gentleman that graciously<br />

offered to lend his expertise to our founding community leaders<br />

helped create what NC is today.<br />

<strong>Nikkei</strong> Horizon’s celebrates 20th year<br />

As <strong>Nikkei</strong> <strong>Concerns</strong> commemorates its 35th year serving our community, one of our<br />

programs, <strong>Nikkei</strong> Horizons (NH), also celebrates its anniversary.<br />

NH launched in September 1990 to offer social opportunities that promote wellness,<br />

creative expression and exploration through a variety of classes and activities. We<br />

started with six instructors and a limited number of classes and workshops. Programs<br />

and instructors were added as the demand grew. Today, more than 270 instructors<br />

have shared their insights and knowledge with almost 2,000 students/participants.<br />

Celebrating its 20th year, NH plans to expand the current offerings to include<br />

people of all ages who are interested in <strong>Nikkei</strong> culture or language. This summer,<br />

we encourage families to share the joy of cooking in Setsuko Agata’s new class,<br />

Anpan Baking with Setsuko and learn how to wear a yukata for bon odori.<br />

As we continue to develop our programs, travel will be a key area of growth.<br />

NH Adventures has already clocked over 500 tours. So far, NH explorers have<br />

toured the region and the globe on nine international, 30 national, and over 450<br />

day tours in Washington state. We welcome your thoughts on new adventures, so<br />

It is hard to believe that three months has already gone by since the Board hired Jeffrey Hattori as the new Chief<br />

Executive Officer of <strong>Nikkei</strong> <strong>Concerns</strong> (NC). He has truly hit the ground running, working to change the culture and<br />

focus of our organization during his first critical inaugural months.<br />

Fortunately for us, he brings with him established ties and relationships within our community and a familiarity of<br />

our organization as a former Seattle Keiro Administrator. He is also embracing our new Policy Governance model,<br />

permeating it throughout the internal structure of NC to align staff to Board goals and operational expectations.<br />

Fortunately for him, he inherits an organization in a good financial position with knowledgeable and competent staff.<br />

This makes for a great launch point for the future.<br />

I believe that this combination of new governance, new CEO and new staff focus is inspiring as we celebrate our<br />

35th anniversary year.<br />

“Okaerinasai!” This was the wonderful and warm reception I received from Yone Terada, Lead Receptionist, as I<br />

entered the front door of <strong>Nikkei</strong> <strong>Concerns</strong> upon my arrival as your CEO. In many respects, I feel as though I was on<br />

an extended vacation and have returned home to my “family”… where I belong… a little wiser, more experienced,<br />

with a greater passion to fulfill the mission of <strong>Nikkei</strong> <strong>Concerns</strong>.<br />

My life has been intricately tied with <strong>Nikkei</strong> <strong>Concerns</strong>, spanning over 33 years, starting as a 13-year-old volunteer to<br />

prepare the original Keiro, weekend janitor and dishwasher, board member, family member of a resident (my mother),<br />

co-founder of a sansei/yonsei fundraising group, Mi-Yo-I Kai, and as administrator of Seattle Keiro. The very essence<br />

of <strong>Nikkei</strong> <strong>Concerns</strong> is in my DNA.<br />

I have a vision of a premier <strong>Nikkei</strong> <strong>Concerns</strong> organization for today… and tomorrow. My primary focus is to enhance<br />

our current core programs and services. We must ensure “we make each day the best day” for our residents and<br />

participants, family members, staff, volunteers and supporters. However, I am also preparing to meet and work with<br />

all of you and the Board to create a plan, infrastructure and brand to meet the needs and wants of our rapidly evolving<br />

community.<br />

As we celebrate our 35th anniversary and prepare to launch the next 35 years, some things will never change…<br />

the respect of and commitment to the values, caring spirit and community that created <strong>Nikkei</strong> <strong>Concerns</strong>. Tadaima!<br />

Residents share Apolo’s victory<br />

<strong>Nikkei</strong> Manor residents experience the tension<br />

and thrill of Apolo’s races.<br />

Both Seattle Keiro and <strong>Nikkei</strong> Manor<br />

resonated with excitement and cheers<br />

as residents watched Apolo Ohno,<br />

their favorite young athlete, become<br />

the most decorated U.S. Olympian in<br />

history with seven medals in<br />

short track.<br />

Because his Olympic races aired<br />

late in the evening, staff recorded all<br />

of Ohno’s competitions and hosted<br />

encore presentation parties for all<br />

the residents and their families to<br />

watch. Some residents watched his races over and over and rooted for their hometown hero<br />

each time he crossed the finish line. Furthering the Ohno spirit, the <strong>Nikkei</strong> Manor residents<br />

were decked out with Apolo-style bandana headgear and goatees (soul patches) while they<br />

watched him triumph.<br />

Seattle native Apolo Anton Ohno is dear to <strong>Nikkei</strong> <strong>Concerns</strong>. Over the years, he has spent<br />

time with our residents, brought his energy and enthusiasm as our guest of honor at events and<br />

donated generously. As an extended member of our family and community, he inspires and<br />

delights residents, families, volunteers, and staff alike with his dedication and irresistible smile.<br />

Pat Ikegami — A dedicated volunteer<br />

When asked why she donated<br />

so much of her personal time and<br />

money on this project, this dedicated<br />

volunteer replies, “It is all about the<br />

residents.” She credits the staff and<br />

vendors, but it is her drive and vision<br />

that have given the residents’ home a<br />

new ambience.<br />

Pat Ikegami’s vision has given our<br />

Seattle Keiro (SK) residents a new<br />

décor. Out went the white privacy<br />

curtains and old bedspreads and<br />

in came stylish and contemporary<br />

patterns and colors. According to<br />

Ibtissam Davis, Support Services<br />

Manager, Ikegami helped coordinate<br />

the fabric designs for the residents’<br />

rooms. She spent a lot of time with<br />

the interior designer to choose colors<br />

and textures that create a friendly and<br />

welcome atmosphere.<br />

“We are very fortunate to have such<br />

caring and committed volunteers that<br />

truly serve our mission. Pat has given<br />

the rooms a facelift with warmer<br />

colors and a home-like feeling. Her<br />

work is recognized not only by the<br />

staff, but the residents and their<br />

families. We have received wonderful<br />

comments from our residents’<br />

families,” says Jeffrey Hattori, CEO.<br />

Davis adds that Ikegami has also<br />

donated a lot of her time to renovate<br />

the lobby. She wanted the lobby to<br />

have a modern Japanese-influenced<br />

look for everyone walking through the<br />

SK doors. Everything works together<br />

harmoniously and helps bring serenity<br />

and a pleasing Japanese sensibility to<br />

the space.<br />

Celebrating our volunteers<br />

Whether they have been with <strong>Nikkei</strong><br />

<strong>Concerns</strong> (NC) for 20 days or over<br />

20 years, more than 80 volunteers<br />

gathered at Seattle Keiro and<br />

<strong>Nikkei</strong> Manor to celebrate National<br />

Volunteer Appreciation Week (April<br />

18-24).<br />

We honored some of our loyal<br />

volunteers (5, 10, 15, 20, and<br />

25+ years) with service award pins<br />

and thanked all for giving so much<br />

to our residents and participants.<br />

When asked why the volunteers are<br />

so dedicated, Kokoro Kai Volunteer<br />

Mitsuyo Oki summed it up, saying,<br />

“It’s a family. It’s like we just got back<br />

together again.”<br />

In 2009, almost 1500 individuals<br />

gave their time, energy, and devotion<br />

to our residents and participants of<br />

NC. What do the volunteers do<br />

residents and other participants.<br />

Some like to entertain with songs,<br />

dance, and dramatic productions or<br />

be involved with creating artwork.<br />

Our volunteers make everyday tasks<br />

fun such as driving the bus for outings,<br />

helping clean up, tending the garden,<br />

or hemming pants for our residents.<br />

<strong>Nikkei</strong> Horizons Knitting Duo<br />

<strong>Nikkei</strong> Horizons’ (NH) volunteer instructors are the heart<br />

of the program. Many have shared their knowledge and<br />

experience for decades.. They have helped hundreds of<br />

people to learn new skills, enjoy new experiences<br />

and form new companionships. In return, the NH<br />

participants have undoubtedly taught their instructors<br />

a thing or two. As we look forward to NH’s upcoming<br />

20th anniversary, we will introduce you to some of<br />

these dedicated volunteers and their equally dedicated<br />

students who make NH so much more rewarding than<br />

other continuing education programs.<br />

Can you imagine a legacy knit together over four<br />

generations, lessons passed from mother to daughter,<br />

teacher to student, now generously shared with all who<br />

have a passion for knitting It might be hard to believe,<br />

but this mother and daughter team is also sharing their<br />

expertise at <strong>Nikkei</strong> Manor every Tuesday in the NH<br />

Program.<br />

Sallie Yamada retired in the 1960s but that didn’t slow<br />

her down. She kept active as a Kokoro Kai volunteer.<br />

When NH emerged 20 years ago, Yamada was asked if<br />

she would like to teach knitting, and lucky for us, she said<br />

yes. A hard-core dedicated volunteer, she now shares the<br />

class with her co-teacher and daughter Marcia Almassy.<br />

Almassy joined her mother’s knitting circle as a participant<br />

four years ago. “It feels more like a social circle of friends<br />

continues to share her expertise with this class.”<br />

Yamada, age 98, has too many favorite moments to<br />

recall, but she enjoys volunteering her time and teaching<br />

her students how to knit. She remembers when a few<br />

Seattle Keiro staff arrived unannounced halfway through<br />

the quarter for just one lesson to brush up on their skills.<br />

A rare mother and daughter treasure of the NH program,<br />

Yamada and Almassy both enjoy the interaction with<br />

students and have no plans on stopping. “As long as there<br />

are participants, we will be teaching,” says Yamada.<br />

Sallie and Marcia, this class is held Tuesdays at <strong>Nikkei</strong><br />

Manor from 1-3 p.m. Registration is required with NH.<br />

come up for sale often and building a new one would be<br />

difficult considering our limited experience and resources.<br />

With the backing of and a little sweat equity from the<br />

community, this facility could become a place to care for<br />

our Issei.<br />

Hiroto graciously gave us permission to use the name<br />

“Keiro” as part of our nursing home name. To bear no<br />

confusion with LA Keiro Services, we officially became<br />

Seattle Keiro.<br />

He continued to offer guidance as we launched our huge<br />

$500,000 capital fundraiser. Hiroto, fresh from managing<br />

a successful capital campaign in Los Angeles, sent<br />

Okamoto’s daughter, Joyce, who was an administrative<br />

assistant for the consortium that operated the Los Angeles<br />

Keiro. She shared her experience and expertise to help us<br />

set up an action plan.<br />

This Los Angeles visionary recognized key elements that<br />

helped us to achieve our dreams. Although Hiroto cannot<br />

join our celebration, as he passed away December 25,<br />

2008 in the San Juan Islands, he will be remembered for<br />

his contributions and has our eternal gratitude.<br />

Edwin Hiroto will always have an important place in our<br />

history, which we are recording in a 35th anniversary<br />

commemorative book. Our community has worked very<br />

hard to make NC what it is today. This book reflects on<br />

these efforts — how we started, where we are today and<br />

what our future holds.<br />

In the next edition of the Tayori, we will feature another<br />

excerpt from the first NC history book. Stay tuned.<br />

Matcha Mochiko Muffin Makes 12 muffins<br />

Ingredients:<br />

These muffins are fragrant and not too<br />

sweet, with a wonderful texture and a<br />

delightful surprise inside! They are so<br />

delicious and easy to make, you’ll want to<br />

bake an additional batch or two.<br />

Setsuko Agata, <strong>Nikkei</strong> Horizons Instructor<br />

and owner of Setsuko Pastry LLC, is the<br />

creator of this recipe. Her healthy desserts<br />

are available in several local restaurants:<br />

• 2 c. Mochiko (rice flour) • 1 /2 c. Red bean paste<br />

• 3 /4 c. Sugar • 1 /2 c. Vegetable oil<br />

• 4 tsp. Matcha (powdered green tea) • 1 c. Milk<br />

• 2 tsp. Baking Powder • 4 Eggs<br />

• 1 1 /3 tsp. Baking Soda<br />

• 1 1 /3 tsp. Salt (to taste, may reduce for<br />

sodium-conscious diets)<br />

Preparation:<br />

1. Preheat the oven to 375° F. Mix the dry<br />

ingredients – mochiko, matcha, baking powder,<br />

baking soda, salt and sugar – in a large bowl. Set aside.<br />

2. Mix the egg, milk and vegetable oil in a small bowl.<br />

3. Gently mix the egg mixture into the dry ingredients.<br />

4. Spoon the batter into the muffin pan and drop red bean paste on top of each muffin.<br />

5. Bake for 20 to 25 minutes.<br />
