challenges. Nikkei Concerns (NC) is keeping up with the
pace, and we are working smarter, enhancing our skills,
and preparing for the future. We want to serve you and
the ones you love and will do all we can to provide you
top-quality healthcare and wellness services.

New Partners: Accountable Care Organizations and
Managed Care Organizations
Accountable Care Organizations (ACOs)
coordinate care for those who participate in Medicare
and managed Medicare plans. They strive to provide
a continuum of high-quality care including rehabilitation
and manage costs through their network of providers (like
Seattle Keiro). The ACOs maintain high expectations of
their partners so that you receive the most effective care
with the best results.
Managed Care Organizations (MCOs) serve
those who are eligible for both Medicaid and Medicare
(dual-eligible individuals). MCOs will deliver Medicaid
benefits through their own network of care providers.
Next steps For Medicare, know your plan and
confirm that it meets your needs. Discover what services
and providers matter to you, as you have many options
for your care and that of your loved ones. Ensure that your
plan matches up with your preferences and requirements.
For Medicaid, dual-eligible residents at Seattle Keiro will
sign up with one of the MCOs in 2014, and we will
continue our 5-star service.

Change and growth have always been intrinsic to Nikkei Concerns, and we continue to evolve. We listen to the community and
constantly strive to anticipate and meet its needs. From our original focus on the Issei, we have expanded our services to embrace
the Nisei, Sansei, and all of the younger generations, including the Shin-issei and the blended families that are enriching our lives.
Nikkei Concerns continues to focus on quality of life, through culture, respect, trust, and kimochi.
Thank you to all who participated in the Puget Sound Asian Senior Care Survey. Your answers will help guide the
Board as we tackle new challenges. Healthcare reform and high expectations of a new generation have a huge impact on Nikkei
Concerns, and the Board will take all into consideration as we determine our future direction. We value your guidance and support.
With a sad heart, I bid farewell to Teresa Sato, Nikkei Concerns Board Secretary (2012-2013), as she relocates to Texas. I
thank her for her service to the community and Nikkei Concerns, and I congratulate her on her promotion. She has been a great
asset to the Board, both as a director and as an officer.

2013 is truly a significant year for Nikkei Concerns (NC). We are in the midst of unprecedented change, with health care reform
dictating new ways of providing a continuum of care, higher accountability to clinical outcomes, and new reimbursement models,
all while impacting individual choice. At the same time, we are experiencing an evolution of our own community. To prepare, we
embarked on two major initiatives:
• NC Way survey asking current residents, participants, and family members to share their thoughts on how we are performing
in respect to the Board’s “Results” and NC Way Values. 180 responded! The overall “rating” was gratifying and the feedback
extremely helpful in understanding what we do well and how we can enhance our service.
• Commissioned an elaborate research/analysis effort via the Blue Ribbon Committee to study community demographics, health
care reform policies/industry trends, and the “Voice of the Customer” that included focus groups and a needs assessment
survey and garnered over 1,000 responses! We learned much about what the future may portend.
I am so grateful to all who contributed to growing our knowledge… there are challenges ahead, but opportunity abounds to
enhance our service AND honor our legacy… and we are working on this now! To paraphrase my middle school librarian,
Mary Henry, “I am amazed at how NC has adapted to ever-changing needs/circumstances to care for an entire spectrum of
people.” I agree!
How does this happen I was reminded of this recently when I went to get my mail around 7 p.m. on a Friday… it took me an
hour to return to my office! This happens often… for I “bumped” into family members, residents, and staff and had wonderful
conversations… some with laughter… some with a little sadness… all in the spirit of respect, trust, kimochi, quality of life and
family for and with our community. This is the NC Way and will always serve as the foundation on how we “feel, think and do”
today… and tomorrow.

A gift from Hammerin’ Hank
The late Henry Hammerin’ Hank Taniguchi was a man
who lived life fully despite painful personal losses in the
WWII Hiroshima bombing. He was a single handicap
golfer with a powerful swing, a tenor who sang at
family gatherings, an accomplished ballroom dancer,
a jewelry craftsman, a world traveler, a fashion plate
extraordinaire, and a connoisseur of European cars.
Henry cared about business friends; golf buddies in
Seattle, California and Hawaii; and the neighborhood
Starbucks baristas (where his photo sat on the counter
following his death) and offered words of wisdom when
asked. He was a truly remarkable man who overcame
tragedy and sadness to live a life full of joy and
generosity, a man beloved by many

He combined his love of golf with his belief in community and played in the first two Nikkei
Concerns Founders’ Golf benefits. A generous donor, he honored the people he loved and
supported our dreams through capital campaigns for both Seattle Keiro and Nikkei Manor.
Nikkei Concerns expresses our profound gratitude to Henry Taniguchi for his very generous
bequest of $284,700. We are touched by his thoughtfulness and kindness.

NC Way Survey helps embed our values
A few months ago, we put our
customer service and core values
to the test with a short survey of our
program participants and family
members. NC Family members
provided feedback on how well we
follow through on our core values
of Respect, Trust, Kimochi
(compassion), Quality of Life,
and Family as well as the NC Way.
How did we do The short
answer is great! Our
four programs (Nikkei
Horizons, Kokoro Kai,
Nikkei Manor, and
Seattle Keiro) scored
an average 9 out of
a possible 10 (10
being the best) across
all 10 questions.
We received 180
completed surveys
with many comments.
The long answer
is that this survey
reflects a moment
in time and doesn’t
give us permission to
be satisfied with the
status quo. We will

Fresh perspective from NC’s new CFO
“The older you get, you realize you don’t know everything,”
fine wisdom for the quickly changing world of healthcare,
shared by Nikkei Concerns’ new Chief Financial Officer, Tina
Masuda Draughon. She launched her NC career on July 22
and is ready to “be a part of the vision and future of NC.”
Tina fully embraces the NC Way and the values that are
fundamental to all that we do. Of our core values (respect,
trust, kimochi/compassion, quality of life, family), kimochi
resonates with her the most. To her, it encompasses all of
our values, adding dimension and humanity to each of the others.
Tina has a first-hand appreciation for the care and concern that the volunteers
and staff give to the residents, participants, and their families. Tina’s mom
resided at Seattle Keiro, and her aunt currently attends Kokoro Kai. Her
experiences focus her on people and how Nikkei Concerns will make every
day the best day.
Smart, savvy, and prepared to face all challenges, Tina has extensive and
diverse experiences serving in fiscal leadership roles including CFO, primarily
with not-for-profit organizations and government agencies.
Far more than a number cruncher, Tina can see both the big picture as well
as the fine details. “I intend to build on the solid financial foundation that
has been established and partner with Jeffrey [Hattori, CEO] to explore
new opportunities and strategies that will ensure a stronger future for Nikkei
Concerns, staying true to our mission and core values.” Nikkei Concerns is
lucky to have Tina on board, and her combination of dedication, skills, and
talent will undoubtedly lead Nikkei Concerns to a secure future.

Nikkei Horizons continues to stretch its wings and expand in all directions. In the Fall
Schedule, you’ll find new locations, more family opportunities (like Mommy & Me Hula
Class!), weekend offerings, and informative workshops in Nihongo. It’s an exciting new
school year, and you are invited to make Nikkei Horizons part of your quest of lifelong learning.
Nikkei Horizons Blast, a one-day Family FunFest!
Kick off the new Nikkei Horizons school year with a
bang and bring the whole family to the Nikkei
Horizons Blast, a free, fun-filled festival for families
and kids of all ages! Mark your calendars for Saturday,
September 28, 1-5 p.m., at Bellevue Children’s
Academy (14640 NE 24th St., Bellevue, WA 98077).
Learn more about Nikkei Horizons and dance along with
O.K.K. Taiko, who will also lead a special Okinawan
taiko workshop after their performance. Additional live
entertainment, food, games, and kids’ activities will fill
your Saturday with laughter and enthusiasm for the new
quarter! Meet some of the Nikkei Horizons instructors and
the team behind the scenes.
Nikkei Horizons East
Nikkei Horizons is going strong on the Eastside! The
Spring quarter launch was an exciting blend of Japanese
and American cultures plus some yoga (in Japanese)
to round out our offerings. Summer quarter introduced
Infant Massage and a Baby Play Group to our Bellevue
location and ends in September with a free trial of Yoga
in Japanese and Hawaiian Hula & HOT HULA fitness
workshops (Saturday, September 14, Bellevue Children’s
Academy – Register today!).

Events
Ayame Kai Steak Dinner
This year’s Steak Dinner was humming
with activity! Between bites, guests talked with
family and friends, bid on silent auction items,
and purchased goodies at the delectable
bake sale. Outside, our new Toyota
Sienna Mobility Van was on display
for all to see. Everyone was amazed at how
luxurious it was and had fun trying it on for
size. Nikkei Concerns also sold unique and
beautiful plants from Yamamoto Landscaping.
Nikkei Horizons Instructor
Appreciation Luncheon
The Nikkei Horizons Hula Girls danced for
the Nikkei Horizons Instructors, We honored
two esteemed instructors who will retire
after Summer quarter, Pam Sho Ken Lee
(master shuji sensei) and Haruko Shimizu
(master mizuhiki sensei). Both have given
the gift of beauty to hundreds of students
through their courses for the last 22 years!
Domo arigato gozaimasu, ladies! Thanks
to the many Nikkei Horizons students who
performed, and of course, many thanks to all
of the instructors, whose talents make the highcaliber
Nikkei Horizons program possible.
Seattle Keiro Summer Festival
The crowd at the Seattle Keiro Summer
Festival celebrated with traditional and
contemporary dancing, enjoyed spirited taiko
performances, feasted on traditional snacks,
learned a few Okinawan dance steps,
cheered on the doughnut eating competition,
and witnessed the power of watermelon
smashing. Many thanks to the 2013
Court of the Japanese Queen Scholarship
Organization of Washington, the Seattle
Betsuin Dancers, Northwest Taiko and Matsuri
Taiko, the Nikkei Horizons Minyo Dancers,
O.K.K. Taiko, and Kara Chin of McDonald’s.
South China Dinner
Volunteers served as a synchronized team,
diners ate in great company, and all had a
great time at our 33rd Annual South
China Dinner! With deliveries to Nikkei
Manor and Seattle Keiro, plus diners and
takeout at the restaurant, we served over
1700 dinners. Thanks to our many volunteers,
especially our co-chairs – Sunnie Nagai,
Ellen Suzuki, and Pat Wakazuru – who kept
all of us going strong. (And thanks to Tomoko
Matsuno who filled in for Sunnie on event
day!) We are ever so grateful to the Ko
Family, who have given us incredible support
for all of these years.
giveBIG One-day Charitable
Campaign
In 24 hours, we raised over $20,000!
giveBIG, The Seattle Foundation’s
annual one-day online giving event, raised
awareness about the power of charitable
giving. The 122 generous Nikkei Concerns
donors increased the power of their gifts
with an additional $1800 from The Seattle
Foundation’s “Stretch” pool of funds. The
popularity of this event grows every year,
and so have our contributions! Domo arigato
gozaimasu to all who participated, spread
the word, and helped make every day the
best day for the residents and participants of
Nikkei Concerns.

and modern interpretation.

Silver Star Awards
NC in the community:
LeadingAge of Washington honored four of our employees with
the Silver Star Award. Carlota Baldoz, Teresita Pagulayan, Myung
Song, and Kinuyo Yokoyama have all worked at Nikkei Concerns
25 or more years. Congratulations and domo arigato, ladies!
Kawabe Memorial House
Nikkei Concerns shared some health and wellness
wisdom and met some great people at Kawabe’s Health
Fair. We also premiered our upcoming Living Well
Health Fair.

Listening to the “voice of the customer”
Nikkei Concerns launched the Puget Sound Asian
Senior Care Survey to gain concrete data on
expectations and needs regarding the senior healthcare
experience. Almost 1000 members of the API community
shared their opinions. Respondents confirmed our belief
that culture, healthcare services, lifestyle, and reputation
are all important, but found significant variations. Our Blue
Ribbon Committee, a volunteer group of professionals from
the community who are experts in a variety of disciplines,
incorporated their findings into their work on potential
future scenarios and presented them to the NC Board of
Directors in August.
On the road with NC
Wheels are in motion to expand our transportation
service. We are contracting with Logisticare and
looking into additional programs to leverage our resources
and generate revenue. Our routes will continue to serve
residents at Seattle Keiro and Nikkei Manor, along with
participants of Kokoro Kai and Nikkei Horizons. As our
program grows, we hope to serve community individuals
and other organizations. NC residents and participants
are always our first priority, but we are pleased to
increase our community participation.
NC going digital
We are currently investigating several electronic
health records systems to enhance NC’s service.
For the residents, this will mean better care through
improved health assessments and the power to quickly
provide complete information to doctors and hospitals.

The Nikkei Concerns Family has great moments
to preserve and share. As a family, we embrace
the residents, participants, volunteers, staff,
and community members. We honor long-held
traditions and value kind gestures of friendship

NC historian Mary Henry shares the NC Way
Local historian and writer Mary
T. Henry not only embodies
our core values but tells our story
through her writing. She shares
Nikkei Concerns with her vast
circle of friends and is amazed
at how we have adapted
to ever-changing needs and
circumstances over the years.
Mary discovered Nikkei Concerns as she wrote about Dr.
Ruby Inouye Shu and was inspired to learn about us. She
views NC as a very unique organization and is thrilled
that we “take care of an entire spectrum of people.” Of
all of her historical pieces, she enjoyed researching our
project the most, and according to her, “the best part of
it all is that the CEO was one of my students!” (NC CEO
Jeffrey Hattori was a student at Southshore Middle School,
where she illuminated the students as their librarian.)
Mary makes every day the best day, for herself and
everyone around her. She has written 75 essays for
historylink.org, a free online historical encyclopedia,
and a volume on the African American origins of many
significant Seattle locales. Family is important, but at
almost 90, she embraces health and wellness for herself
as well. The Missouri native walks two miles daily and
composes haiku. (She likes the challenge.)
And yes, she’s considering taking a class with Nikkei
Horizons, so if you see her on one of our adventures or in
a class, say “hi!”

Mizu Yokan
Nikkei Manor recently served this classic Japanese dessert to the residents.
The yokan was natsukashii, evoking memories of hot summer nights of long
ago. It was a “real treat” for the residents, just right for this time of year.

5 More Cool Summer Tips
If you must exert yourself when it’s hot, take
advantage of cooler times in early morning or
late evening.
Be Genki!
Take a shower with cool or tepid water and
go barefoot.
Sleep downstairs if your bedroom is on the
second floor. Warm air rises.
Make sure the elderly, infants, and anyone
with a chronic illness stay hydrated. They are
more susceptible to the heat.
Protect your pets from dehydration and heatrelated
illness. Give them shady spaces to
rest, ample water, and never leave your pet
unattended in a vehicle.

Mizu Yokan
Ingredients
1 stick of kanten also known as agar-agar (about 10 oz.)
3 c. water
3 1/2 oz. of sugar
1 fourteen oz. can of azuki bean puree or 2 cups azuki red beans
soaked overnight then cooked until tender
Method:
Agar-agar preparation:
Rinse the agar-agar and tear it into several pieces, cover with water
in a small bowl and soak for about 30 minutes. Squeeze out as
much water from the agar-agar as you can, tear into very small
pieces, and place in a in a small sauce pan. Add water and cook
over medium until the agar-agar has dissolved. Strain melted agaragar
through a small hand-held sieve into another pan. Make sure
it’s clear with no lumps.
Add sugar and continue stirring over medium heat until dissolved.
Remove from heat and add pureed azuki beans.
Return pan to the heat and cook until mixture comes to a boil,
reduce heat and simmer for 4-5 minutes, stirring continually.
Remove pan from heat and allow to cool.
Pour the kanten mixture into a cake pan, then refrigerate until set.
Cut into squares and serve.
