LIGHT & EASY<br />
We’re having a long summer, and it’s still too<br />
hot to spend hours sweating in the kitchen. The<br />
following ‘tried & tested’ recipes are quick to<br />
prepare, tasty, feel ‘summery’ and can make up<br />
a light lunch or supper or be part of both. The<br />
important thing to remember is that good eating<br />
starts with great shopping, so just make sure you<br />
have all ingredients to hand before you start and<br />
use your senses to select good produce.<br />
Here’s a few tips when you take a shopping trip to the market:<br />
FRUIT & VEG – Most fruit and vegetables stay fresher if you store them unwashed, but LETTUCE seems<br />
to keep better if washed, dried carefully and then stored in a bag in the salad drawer. (the best way to<br />
do this would be in a salad spinner.)<br />
TOMATOES – Should smell fragrant when bought. Ideally tomatoes should not be kept in a fridge as it<br />
makes them obtain a gritty rough texture. So buy what you need.<br />
HERBS –When you buy fresh herbs they usually last for three to four days in the fridge, especially if<br />
kept in a glass of water<br />
CITRUS FRUIT – When buying citrus fruit, look for fruit which is heavy but with thin skins. If you buy<br />
waxed fruit, give it a good scrub in hot soapy water before zesting. .<br />
