weekend health and wellness is better through classes<br />

(both one-time and ongoing) held at Bellevue Children’s<br />

Academy on Saturdays.<br />

Fun and easy cooking, yoga, Japanese culture, music,<br />

and entertainment all await you through <strong>Nikkei</strong> Horizons<br />

Dear Friends and Fellow Community Members,<br />

The <strong>Nikkei</strong> <strong>Concerns</strong> Way and the core values it embraces (respect, trust, kimochi, quality of life, and family) have<br />

strengthened connections with <strong>Nikkei</strong> <strong>Concerns</strong> and the community. I am very proud to be a board member and am grateful<br />

to the community for its strength and support.<br />

Respect and Quality of Life – We recently surveyed the community about what matters when it comes to senior care,<br />

either for you or your loved ones. Thanks to all who participated, to the key individuals who broadened our reach, and thank<br />

you Jeffrey, for your leadership.<br />

Kimochi – Arigato gozaimasu to all of the Volunteers and also to the Fukui and Gokami families for being there when<br />

we need a little extra help. (Thanks also to my wife for letting me attend all of the meetings, dinners, and other events<br />

throughout the year!)<br />

Trust – A special thank you to the late Henry Taniguchi for his very generous donation.<br />

Family – Celebrate life and family at our upcoming events. Don’t miss the South China Dinner (7/8), and the 12th Annual<br />

Founders’ Golf Benefit (8/23).<br />

Respect, trust, kimochi, quality of life, and family. These values bring <strong>Nikkei</strong> <strong>Concerns</strong> close to my heart, and the<br />

joint efforts of the community, volunteers, board, and staff “make every day the best day for residents, participants, staff, and<br />

“Family caring for family” inspired us as we developed the <strong>Nikkei</strong> <strong>Concerns</strong> (NC) Way. “Making every day the best day for<br />

residents, participants, staff, and community” became our rallying call, and family remains one of our core values… for this is<br />

what NC is all about.<br />

A “Family Affair” abounds on a daily basis throughout NC. Children and grandchildren visit their loved ones and dance and<br />

enjoy somen at Seattle Keiro’s Summer Festival. Several generations bake and nibble on Japanese sweets together at a <strong>Nikkei</strong><br />

Horizons class in Bellevue. They relax and swap stories in the beautiful <strong>Nikkei</strong> Manor garden. Families expand to embrace Kokoro<br />

Kai participants sharing a moment of fun as a group on an outing. Faithful volunteers set examples for the younger generation,<br />

creating a legacy of service and philanthropy. Staff members become “extended” family for those we serve and with whom we<br />

work… sharing smiles, laughter, and sometimes, tears.<br />

As you peruse through this vibrant <strong>Tayori</strong> issue, you will no doubt take away that “Life Happens at <strong>Nikkei</strong> <strong>Concerns</strong>!” and we work<br />

diligently to serve our evolving community in the midst of health care reform… At the heart of it all is “family caring for family.”<br />

I vividly recall asking J. Ellis Haw to “unretire” to serve as interim CFO for a few months. Three years later(!), J. Ellis is truly<br />

retiring to spend time with his wonderful family. A Navy man, he helped ensure the good ship NC sails full steam ahead. On behalf<br />

of your NC “crew,” thank you for all that you have done, and we wish you and yours all the best.<br />

Loving Kokoro Kai<br />

Masako Machida found kimochi,<br />

a second family, and an enhanced<br />

quality of life when she joined<br />

Kokoro Kai. Although she has<br />

family support with her daughter<br />

and son-in-law, Michiru and Russell<br />

Johnson, Masako was lonely<br />

when she first moved from Japan.<br />

Michiru Johnson, Masako Machida, and Muffy all love Kokoro Kai.<br />

She spoke little English and had<br />

no special hobbies or close friends. When the Johnsons discovered Kokoro Kai, they were<br />

thrilled. Kokoro Kai gave Masako a welcoming place where she could speak Japanese,<br />

socialize, and stay active.<br />

Every Monday and Friday, Masako spends time with her new friends in Kokoro Kai. They<br />

focus on the things that she can do, which gives her confidence. Her favorite activity, if she<br />

can pick only one, is singing. Masako-san loves the food, and she is touched by the kindness<br />

of the volunteers and staff. She doesn’t regret moving from Japan because she has a new<br />

home here and a place to belong. When she thinks about life in Seattle, she has happy<br />

thoughts of Kokoro Kai and the people who help make her time there special.<br />

She encourages more Japanese to join Kokoro Kai or move into <strong>Nikkei</strong> Manor, <strong>Nikkei</strong><br />

<strong>Concerns</strong>’ assisted living community, where Kokoro Kai takes place. Many <strong>Nikkei</strong> Manor<br />

residents also participate in Kokoro Kai, and more friends are always welcome.<br />

Ayame Kai Guild makes wishes come true<br />

Lillian Hayashi, Chair, Wish List Recommendation Committee<br />

For over 30 years, the Ayame Kai Guild has sponsored numerous events<br />

and generously supported the residents and participants of <strong>Nikkei</strong> <strong>Concerns</strong>.<br />

Our annual events – currently, the Steak Dinner and the Holiday Craft<br />

Fair – have raised over $1M and continue to strengthen community ties.<br />

The proceeds finance the annual Wish List, comprised of items that are not<br />

afforded by <strong>Nikkei</strong> <strong>Concerns</strong>’ annual operating budget.<br />

Each year, when <strong>Nikkei</strong> <strong>Concerns</strong> submits the annual Wish List, the Wish List<br />

Recommendation Committee carefully reviews each item for compliance with<br />

the Guidelines. Items must directly enhance the quality of life for the residents<br />

and/or participants in any of the four <strong>Nikkei</strong> <strong>Concerns</strong> programs.<br />

In 2012, the Committee recommended all 25 Wish List items (totaling<br />

$57,308), which the Guild members unanimously approved in its entirety.<br />

This year’s list included 35 items (totaling $58,840) which the Committee also<br />

recommended and the Membership approved.<br />

We honor the partnership with the community that we have built together – the<br />

residents, participants, and their families; thoughtful donors who contribute to<br />

our bake sales, drawings, and silent auctions; and the attendees and volunteers<br />

who join us for fun and a great cause. Your gifts enable us to maintain the high<br />

standards of our events each year and raise even more funds to enhance the<br />

lives of the residents and participants!<br />

Welcome to the NC Board!<br />

<strong>Nikkei</strong> <strong>Concerns</strong> is privileged to welcome three new members to our Board of Directors. Hideo Suganuma, Bill<br />

Tashima, and Pastor Joe Yoshihara joined in January, and we are fortunate to benefit from their experience,<br />

knowledge, and in-depth perspectives. These leaders embrace the NC Values of respect, trust, kimochi, quality of life,<br />

and family and are dedicated to the residents and participants we serve.<br />

Community. I have lived in the Seattle<br />

area for about 30 years, and though<br />

I have some ties with many <strong>Nikkei</strong>,<br />

I wish to widen my involvement with<br />

the community.” With confidence<br />

in NC’s CEO Jeffrey Hattori’s<br />

leadership, Hideo plans to help in<br />

any way possible.<br />

to Bill, as Seattle<br />

Keiro gave great comfort to his dad<br />

in the 80s. Bill wants to foster that<br />

same kimochi, the intuitive good<br />

feelings from which he feels that all of<br />

the NC values emanates.<br />

A hands-on guy, Bill also lends a<br />

helping hand to mail out the <strong>Tayori</strong>!<br />

He is a very active community<br />

member, also serving on the Seattle<br />

JACL Board.<br />

In May, we wished a fond retirement for Ellis Haw, <strong>Nikkei</strong> <strong>Concerns</strong>’<br />

Chief Financial Officer. For the last three years, Ellis has been the<br />

backbone of the Accounting Department, ensuring that <strong>Nikkei</strong><br />

<strong>Concerns</strong> stands on a solid financial base.<br />

He embraces the <strong>Nikkei</strong> <strong>Concerns</strong> values of respect, trust, kimochi,<br />

quality of life, and family, but quality of life currently stands out most at<br />

this pivotal point in time. He shared a bit of wisdom, “Remember, this<br />

life is not a dress rehearsal. There is but one opportunity, so do your<br />

best and be happy with the result.” Looking back, Ellis most enjoyed<br />

our 35th Anniversary Celebration and our annual Summer Festival.<br />

He has fond memories of Japanese American traditions and culture<br />

as well as community strength and spirit.<br />

Ellis has great confidence in the team he leaves behind, and that<br />

the community will continue to be well served.<br />

Ellis plans to make the most of his retirement in pursuit of fun. He<br />

and his wife, Joyce, will keep busy, volunteering (perhaps with<br />

<strong>Nikkei</strong> <strong>Concerns</strong>!) and exploring the world around them. Domo<br />

arigato, Ellis, for all you have been to <strong>Nikkei</strong> <strong>Concerns</strong>! If you see<br />

a couple in a snazzy sports car with the top down, wind rushing through<br />

their hair, give them a wave, it might be Ellis and Joyce!<br />

many years through<br />

family members that<br />

have participated in<br />

several programs. He volunteered to<br />

serve because of the shared values,<br />

especially quality of life. “I really<br />

want people to live in the fullness<br />

of life that they were created for.<br />

Every day holds so much potential<br />

for people, and there’s nothing more<br />

fulfilling and rewarding than knowing<br />

that you are loved by God and have<br />

immeasurable worth and purpose for<br />

your life.”<br />

Pastor Joe is lead pastor of<br />

Cornerstone Christian Fellowship, a<br />

predominately pan-Asian, Englishspeaking<br />

church in Bellevue with<br />

members from the greater Seattle area.<br />

during National Volunteer Appreciation Week,<br />

April 21-27.<br />

who will retire this year: Rose Asakura, Hiroko Gripman,<br />

Mariko Mano, Yuri Matsuzawa, Frank Mizukami,<br />

and one long-time volunteer who wished to remain<br />

Everybody dance! O.K.K. Taiko had everyone dancing<br />

in the aisles! <strong>Nikkei</strong> Horizons kicked off the new program<br />

offerings with a celebration at Uwajimaya in Bellevue.<br />

Shoppers also enjoyed hula, flute, shamisen, and dance<br />

performances. <strong>Nikkei</strong> Horizons featured new classes<br />

at the Eastside location with ayu mochi samples and a<br />

children’s craft table.<br />

Cherry Blossom Festival<br />

At the Cherry Blossom Festival, <strong>Nikkei</strong><br />

Manor and Kokoro Kai staff member<br />

Mariko Ueno explained the joys of<br />

spread the word about the new <strong>Nikkei</strong><br />

Horizons expansion to the Eastside<br />

and encouraged people of all ages to<br />

Oral History Project<br />

<strong>Nikkei</strong> Manor resident Fran Kato shared<br />

her wartime experience with students from<br />

Edmonds Community College. Six residents<br />

mentored the students for their <strong>Nikkei</strong> Oral<br />

History Project, recording their histories in<br />

cooperation with the Wing Luke Museum.<br />

First Hill Lions Pancake Breakfast<br />

Over pancakes, coffee, and tea, <strong>Nikkei</strong><br />

Manor resident Mariko Albertson and Lions<br />

Volunteer Debbie Nagasawa swap stories at<br />

the First Hill Lions Pancake Breakfast. Mariko<br />

and many other residents from <strong>Nikkei</strong> Manor<br />

and Seattle Keiro loved the hearty breakfast<br />

and the energy of the event. Extra thanks to<br />

the Lions for the extra-big takeout order for<br />

those residents who stayed at home.<br />

NW Buddhist Convention<br />

Attendees of the NW Buddhist<br />

Convention learned about all of<br />

the new and innovative <strong>Nikkei</strong><br />

<strong>Concerns</strong> projects. Many were<br />

amazed to learn about the special<br />

film presentations, our Guest<br />

Chef luncheons, and the new<br />

opportunities with <strong>Nikkei</strong> Horizons!<br />

Japanese Film Fest<br />

The Seattle Keiro “Moviehouse” was<br />

privileged to show three Japanese<br />

films, but the twitchy nose and<br />

winking eyelashes of Paro, a<br />

therapeutic robotic harp seal,<br />

stole the show for Seattle Keiro<br />

Resident Haruno Morishima and<br />

many others. Light Up Nippon and<br />

Fukushima Hula Girls documented<br />

stories of determination and<br />

perseverance. Domo arigato to the<br />

Consulate General of Japan, Seattle Office, for<br />

making this possible, including Paro! The third<br />

film, Jun-Ai, told the story of war and conflict,<br />

love and friendship. Many thanks to Midori<br />

Kikuchi, Keiko Kobayashi, Shogo Okuyama,<br />

and the Jun-Ai Family for making this special<br />

screening possible for the residents, their friends,<br />

and family!<br />

Kokoro Kai Shinnenkai<br />

Guests feasted, celebrated, and bonded<br />

at the Kokoro Kai Shinnenkai Luncheon.<br />

Everyone had a chance to gather, met<br />

those who volunteer on different days and<br />

in other areas (like transportation), and<br />

saw the huge impact that Kokoro Kai<br />

has made on the lives of participants,<br />

volunteers, and staff.<br />

Van Celebration<br />

Seattle Keiro Resident Haruyo Campbell indulged in<br />

the luxury of <strong>Nikkei</strong> <strong>Concerns</strong>’ new Toyota Sienna<br />

Mobility Van. To thank all of the people who helped<br />

us win the van in the Toyota 100 Cars for Good<br />

Contest (and show off the new van), we partied<br />

at Seattle Keiro. Voters, residents, and their family<br />

members dropped by and were amazed by the<br />

comfort and technology the van provides.<br />

Genki Gourmet<br />

Our Genki Gourmets have struck<br />

again, leaving satisfied diners with<br />

just a touch of wistfulness as the<br />

last bite of dessert disappeared.<br />

Shinya Asami (with the sweet<br />

talents of pastry chef Fumie<br />

Kumagai) returned in March to<br />

create masterful dishes for the<br />

residents and community guests. In<br />

May, Genki Gourmet Ibtissam Davis served<br />

mouth-watering healthy Lebanese cuisine.<br />

Dietician Randi Saeter eased any guilt with<br />

her discussion of the nutritious menus.<br />

In Concert at Seattle Keiro<br />

April showered Seattle Keiro with not<br />

one, but three wonderful concerts by<br />

engaging and talented musicians! Kochihira<br />

Takane’s Okinawan folk music had Seattle<br />

Keiro residents dancing in their seats!<br />

Kentaro Kihara’s jazz piano struck<br />

a chord with residents, volunteers,<br />

and community members, drawing<br />

in the audience with his playful<br />

style. Hiroshi Takano and his son,<br />

Hiromi, soothed the audience with<br />

acoustic and electric guitar, accompanied<br />

by Takano-san’s beautiful aquatic photography.<br />

FAMILY ALBUM<br />

The <strong>Nikkei</strong> <strong>Concerns</strong> Family has great moments to preserve<br />

and share. As a family, we embrace the residents, participants,<br />

volunteers, staff, and community members. We honor long-held<br />

traditions and value kind gestures of friendship and love. Our<br />

Family Album is full of precious and treasured memories.<br />

One of the many daily activities for Kokoro Kai<br />

participants is exercise. As Tomoko leads the<br />

group to run in place, her enthusiasm keeps the<br />

participants going! Standing or sitting, they work<br />

toward their goals of strength and flexibility.<br />

Laughing, crying, and smiling, these babies were<br />

full of emotions and action! The babies were<br />

able to play with each other while parents bond<br />

over parenthood. <strong>Nikkei</strong> Horizons’ baby play<br />

group creates new friendships of all ages!<br />

<strong>Nikkei</strong> Manor Resident Clara Stewart made a new<br />

friend after a beautiful and graceful Okinawan<br />

sanshin concert and dance. The young artists in<br />

vibrant costumes performed both at Seattle Keiro<br />

and <strong>Nikkei</strong> Manor and delighted everyone.<br />

GO MARINERS! Mary Osaki raised her<br />

autographed baseball and wished good luck to<br />

Mariners’ pitcher Hisashi Iwakuma. Iwakumasan<br />

spent time with his fans at Seattle Keiro<br />

residents and put smiles on everyone’s faces!<br />

Kokoro Kai participants made their way down<br />

to Olympia for the Day of Remembrance and to<br />

meet Senator Bob Hasegawa. Participants and<br />

community members were greeted with lunch and<br />

good company. After, participants were able to<br />

enjoy a rare sunny day, and posed for photos in<br />

front of the Capitol building!<br />

Koyadofu no Tamagotoji (4 servings)<br />

5 pieces of koya tofu (4 oz. / 1 package)<br />

1 1/2 c. dashi soup ( 1 1/2 t. dashi powder and 1 1/2 c. water)<br />

1/2 onion, sliced<br />

1/4 lb. carrots, chopped small<br />

3 T. sugar<br />

Are you craving Japanese comfort<br />

food that’s healthy, with ingredients<br />

you may already have on hand<br />

Try this dish that your grandmother<br />

may have made. It’s quick, easy,<br />

and delicious! The dried tofu gives<br />

the dish a hearty texture and<br />

absorbs all of the flavors.<br />

3 T. mirin<br />

3 T. sake<br />

3 T. soy sauce<br />

1/4 lb. green peas or cooked edamame<br />

1 egg, beaten<br />

1/4 t. salt<br />

Method:<br />

Soften koyadofu in water for 5 minutes, then squeeze gently to remove water. Repeat<br />

several times, then cut into bite-sized squares.<br />

Boil dashi in a saucepan, then add onion, carrots, sugar, mirin, sake, soy sauce, and<br />

koyadofu. Cover and cook for 5 minutes on low.<br />

Add peas (or edamame), replace the cover, and continue cooking for 5 minutes.<br />

Drizzle egg on the mixture, add salt, then turn off heat and steam, covered, for 3-4<br />

minutes.<br />

Serve and enjoy!<br />

5 Cool Summer Tips<br />

Stay hydrated – drink plenty of water, sports<br />

drinks, or other sources of electrolytes. Avoid<br />

caffeine and alcohol.<br />

Wear loose-fitting clothing, preferably white,<br />

which reflects instead of absorbs heat.<br />

Refrigerate water in a spray bottle for a cool<br />

spritz after spending time in the heat.<br />

Replace regular heavy meals with small,<br />

frequent, and lighter meals or snacks of cold<br />

fruit or lowfat dairy products. (You won’t have to<br />

stand near a hot stove!)<br />

Try sleeping on pillowcases made from Steen, a<br />

soft cotton fabric that resembles satin.<br />
