Makhani<br />

Marinated tikka ingredients are cooked in our very mild and sweet<br />

tomato based sauce, finished with coconut, butter and cream<br />

Dopiaza<br />

Dopiaza – literally meaning ‘double onion’ – is made with<br />

fresh onions and is mildly spiced, flavoured with garam masala<br />

(cinnamon, cardamom and cloves)<br />

Bhuna<br />

‘Bhuna’ refers to a style of cooking in which the ingredients are<br />

pan fried with spices, chilli, onions, tomatoes in oil to make a dry<br />

spicy thick sauce, finished with fresh coriander<br />

Saag<br />

Our saag dishes are cooked in puréed spinach sauce flavoured<br />

with garam masala (cinnamon, cardamom, cloves)<br />

Dhansak<br />

This dish is cooked with lentils and tomatoes with a hint of chilli<br />

in a creamy sauce. The addition of pineapple gives it a sweet and<br />

Chilli Balti<br />

Our Balti dishes are cooked in a spicy hot sauce with peppers,<br />

onions, ginger and garlic and flavoured with karahi spice masala<br />

Jalfrezi<br />

Jalfrezi dishes are cooked in a thick sauce with sliced onions,<br />

These are the first 7 spices that appear on the front cover of the<br />

main menu too. See how many your family and friends can guess...<br />

Curry leaves (known as sweet neem leaves in most<br />

Indian languages). They are sourced from a subtropical<br />

tree native to India. The leaves are used extensively in<br />

Southeast Asian cooking, adding a very distinct flavour<br />

and aroma<br />

Cinnamon sticks (known as dalchini) are a thick<br />

barked spice very popular in Asian cooking for its<br />

richness. The thinner barked cinnamon stick is preferred<br />

where a delicate sweeter flavour is needed<br />

Turmeric powder, (known as Haldi) provides a<br />

woody aroma and flavour. Turmeric comes from the root<br />

of the Curcuma longa plant and has a tough brown skin<br />

and a deep orange flesh. It has been used throughout<br />

history as a condiment, healing remedy and textile dye<br />

Fennel powder, called valiary in India. The<br />

powder is made from ground fennel seeds and used<br />

to add a delicate sweet flavour and aroma to curry<br />

Fenugreek leaves, called Methi Leaf in India,<br />

these dried leaves are used extensively in Indian food<br />

and come in powder, seed and leaf form<br />

Madras curry powder is actually a blend of<br />

up to 20 spices, herbs and seeds. Among those most<br />

commonly used are cardamom, chillis, cinnamon, cloves,<br />

coriander, cumin, fennel seed, fenugreek, mace, nutmeg,<br />

red and black pepper, poppy and sesame seeds, saffron,<br />

tamarind and turmeric<br />

Fennel seeds have a light liquorice like flavour and<br />

are popular in Asian cookery, often dry roasted before<br />

use. They are also chewed as an after meal digestive aid<br />
