On a mid-June Saturday<br />

morning, we take our weekly<br />

walk through the<br />

Farmers’ Market, enjoying<br />

the abundance of fresh produce.<br />

We are glad to see the<br />

return of trout, both fresh<br />

and smoked, after an<br />

absence of two years. Now I<br />

have to decide on our weekly<br />

treat — smoked trout or<br />

sheep cheese in olive oil and<br />

herbs. Decisions! Decisions!<br />

There are lots of bedding<br />

plants remaining but<br />

they will soon be replaced<br />

by lettuce, radishes, green<br />

onions and strawberries.<br />

Already there are bunches<br />

of spinach and asparagus,<br />

hot house tomatoes, cucumber<br />

and peppers.<br />

However, this Saturday<br />

my focus is on honey. There<br />

are several vendors selling<br />

their home-grown product,<br />

sweet and fresh and at a fair<br />

price. I buy a small tub from<br />

our former stock-broker and<br />

hurry off home to make a<br />

batch of granola and some<br />

honey-butter (2 tablespoons<br />

Becel mixed with 3 tablespoons<br />

honey) for our<br />

Sunday morning breakfast<br />

pancakes. There is something<br />

about honey which<br />

adds a flavour very different<br />

from sugar.<br />

Honey has a long history<br />

as a sweetener. It was<br />

regarded by the ancients as<br />

the food of the Gods and a<br />

symbol of wealth and happiness.<br />

In the Bible, the<br />

Promised Land is described<br />

as “the land of milk and<br />

honey” In the Middle Ages,<br />

honey was used medicinally<br />

and to make mead, an alcoholic<br />

beverage made with<br />

honey, yeast and ginger.<br />

Mead is too sweet for my<br />

taste but if anyone would<br />

like to make a batch, here is<br />

a recipe as printed on a souvenir<br />

tea towel bought in<br />

Cornwall, England.<br />

18th Century Mead<br />

3 pounds honey<br />

1 gallon water<br />

1 ounce yeast<br />

2 ounces Jamaican ginger<br />

Boil water for half an<br />

hour. (I can’t think why<br />

unless it is to drive off any<br />

impurities)<br />

Add honey and boil for<br />

an hour, skimming off the<br />

scum as it collects. Cut up<br />

ginger and bruise it, place in<br />

a muslin bag and add to the<br />

liquid. Put in yeast when it<br />

is almost cold. Pour into<br />

bottles and when the action<br />

of the yeast ceases, cork<br />

tightly. Drink hot or cold.<br />

Another old recipe using<br />

honey is Bar-Le-Duc. It is<br />

fiddly to make because you<br />

have to stem each black currant<br />

but it is delicious<br />

poured over ice-cream.<br />

Bar Le-Duc<br />

Wash and stem 3 quarts<br />

black currants. Crush a few<br />

at the bottom of the pot.<br />

Bring to the boiling point,<br />

then boil 2 minutes. Add 6<br />

cups heated sugar. Boil 2<br />

1/2 minutes. Add 1/2 cup<br />

honey in a slow stream so as<br />

not to disturb the boiling<br />

point. Boil 2 1/2 minutes<br />

longer. Pour into sterilized<br />

jars and cover with wax.<br />

As a child, the first<br />

honey I tasted was wild<br />

honey in the comb, given<br />

me by a friend whose father<br />

was adept at tracking bees<br />

to a bee-tree and smoking<br />

out the bees. As I chewed,<br />

trying to separate the wax<br />

from the sweet stuff inside, I<br />

decided that honey was definitely<br />

over-rated. My first<br />

encounter with commercial<br />

honey was an embarrassement<br />

when, being invited to<br />

a friend’s house for supper, I<br />

was passed an unused tin of<br />

creamed honey. I had never<br />

seen anything like that<br />

before (it looked like lard)<br />

and, much to the amusement<br />

of my hosts, had no<br />

idea what to do with it!<br />

In Victoria, we bought<br />

Babe’s honey in gallon jars<br />

from an unattended fruit<br />

stand on a side street. They<br />

sold on the honour system<br />

— customers dropped the<br />

correct money into a sealed<br />

box and helped themselves.<br />

That was over 40 years ago<br />

and I doubt that Babe still<br />

sells honey that way.<br />

Here’s a recipe good for<br />

an outdoor summer meal.<br />

Honeyed Garlic Chicken<br />

Wings<br />

1/4 cup soy sauce<br />

1/2 cup liquid honey<br />

2 cloves garlic, minced<br />

1 teaspoon sherry<br />

2 or 3 pounds chicken wings<br />

Combine soy sauce,<br />

honey, garlic and sherry.<br />

Bake the chicken wings in a<br />

shallow pan 325 degrees for<br />

about an hour, basting with<br />

the honey sauce until it has<br />

all been used. Watch carefully<br />

towards the end of the<br />

cooking time in case the<br />

wings become charred<br />

Unbreakable spirit<br />

Carolyn Ehrier is a young<br />

girl whose compassion and<br />

commitment to make this<br />

world a better place surpasses<br />

most. One year ago,<br />

Carolyn witnessed her<br />

grandfather losing his battle<br />

with cancer and since has<br />

decided to help make cancer<br />

a disease of the past.<br />

What could an 11-yearold<br />

really do that would<br />

make a difference<br />

As a toddler, Carolyn suffered<br />

from alopecia, a disorder<br />

that causes hair loss. As a<br />

result, when she was able to<br />

grow and keep her hair she<br />

cherished her long, blonde<br />

locks. She loved having it<br />

styled and planned to keep it<br />

her whole life. In February<br />

2002, Carolyn and her mother<br />

Christine were discussing<br />

cancer and how unfortunate<br />

it is that many people lose<br />

their hair through chemotherapy<br />

treatments. Carolyn’s<br />

mom mentioned how<br />

some people shave their hair<br />

to encourage people to<br />

donate money and time in<br />

support of cancer research.<br />

Carolyn just said, “I could do<br />

that and people would probably<br />

give a lot of money and<br />

that could help find a cure.”<br />

Christine was surprised at<br />

her daughter’s statement saying<br />

that, “Carolyn was a popular<br />

girl who valued her<br />

looks, social and fashion status<br />

greatly.”<br />

However, as time passed<br />

Carolyn’s determination and<br />

spirit to make a difference<br />

strengthened. She forged<br />

a<br />

when her family learned that<br />

the entire community of<br />

Sparwood had raised a total<br />

of $6,900 the previous year.<br />

However, as people learned<br />

of Carolyn’s endeavours, she<br />

was able to not only meet,<br />

but surpass her goal of<br />

$5,000 and raised a total of<br />

During her campaign,<br />

people would ask how short<br />

she was going to cut her hair.<br />

She always looked sort of<br />

puzzled, and replied that she<br />

would be shaving it all off, of<br />

course. After all, she was<br />

doing this both to raise<br />

money for research and to<br />

show her support of those<br />

who lost their hair to treatments.<br />

In this way she kept<br />

the spirit alive and encouraged<br />

people to remember the<br />

importance of donating for<br />

The theme for this year’s<br />

Terry Fox Run is “Unbreakable<br />

Spirit,” reflecting not<br />

only on Terry’s spirit, shown<br />

during his 1980 Marathon of<br />

Hope, but also that of supporters<br />

like Carolyn. If you<br />
