NC Values lead the NC Way! 

“Making Every Day The Best Day”– this is the “NC Way” 

and is now every staff member’s job responsibility. The 

NC Way is fully endorsed by the NC Board and is 

gaining momentum with staff… soon to be incorporated 

with volunteers and family members. Over the course of 

the year the NC Management and Staff have embraced 

this concept as a means to deliver high-quality service 

for our residents. Our core values, Respect, Trust, 

Kimochi (compassion), Quality of Life, and 

Family are intended to shape the attitude and behaviors

strategy around the NC Way, communicated the concept 

to all our staff, discussed the NC Way weekly in all our 

meetings, based many of our decisions through the NC 

Way and created a special advisory group called the NC 

Way Values Committee. 

“The NC Way, supported by our core values, will 

establish a foundation for exceptional service for our 

participants, staff, community and most importantly the 

residents we serve” noted Willon Lew, motivated as an 

NC family member of two former residents himself, who is 

helping lead this effort. It’s all about placing high value on 

the members of the NC Family.

As President I am working toward stronger kizuna (bond) between the Nikkei Concerns Board (moving forward with the NC 

Way) and the community. 

The Board members are Nikkei Concerns’ link to the community, sharing information with community members. We listen to you 

and convey your needs and concerns so everyone keeps up to date on current issues. For the good of the entire community, we 

link with fellow organizations to form partnerships. 

Three members of the Board, including myself, serve on CEO Jeffrey Hattori’s “Blue Ribbon” Committee. Over the next several 

months, we, along with the other members, will make recommendations for Nikkei Concerns’ future direction. My thanks to the 

Committee members and participating board members for their dedication. 

As we work together, we build a stronger Nikkei Concerns and a more connected community. Your involvement enriches the 

environment in which we serve. Thank you for making every day the best day for the residents, participants, staff, 

and community.

“When your values are clear to you, making decisions become easier.” This is a quote from Roy Disney, nephew of Walt 

Disney. How true! Nikkei Concerns was founded on core values that have remained firmly entrenched since 1975 and 

include Respect, Trust, Kimochi (compassion), Quality of Life, and Family. Over the past two plus years they have served as 

the driving force for how we “think and do.” 

Recently, we have rolled out the Nikkei Concerns (NC) Way initiative that is based on our core values and will flow 

throughout the organization. Making every day the best day for our residents, participants, staff and community is now the 

#1 job for all who work at Nikkei Concerns. Simply put, we want to be the best place to live, work and support! 

Each and every employee is critical in providing the highest quality of care and services and work environment. I am pleased 

to announce that we have created the NC Way Values Committee that is composed of representatives from all programs and 

departments to share and seek ideas and promote a culture that enhances Nikkei Concerns. It gives me goose bumps to see 

and hear their enthusiasm and passion! 

I had a chance to talk with Russ Akiyama, founding CEO, about what may be in the future for Nikkei Concerns and he said, 

“Jeffrey, the NC Way IS (and will lead) the future.” I suspect his quote will become much like Roy Disney’s… one to 

remember, live and work by.

The NC Values in action for Japan Relief

When Japan was devastated by the tsunami and subsequent earthquakes, Nikkei 

Concerns immediately mobilized fundraising efforts to help. Families and individuals, 

volunteers, and staff members gave generously to aid the people impacted by the 

disasters. Some donors had family in Japan, with a few in Miyagi-ken; many more 

gave out of the goodness of their hearts with a wish to help restore a sense of 

normalcy to the people who suffered so deeply. In all, Nikkei Concerns’ raised over 

$19,000. 

After an intense search for an eldercare organization in Miyagi-ken, Nikkei Concerns 

donated the funds to Miyagi-ken Shou Group Home Kyougi Kai, a 

non-profit association of group homes who care for residents with dementia and 

Alzheimer’s. The association was able to purchase a shower chair and a fall sensor 

Nikkei Concerns is competing to win a Toyota Sienna Mobility Van, and 

we need you!

Nikkei Manor Garden Courtyard Grand Opening 

Garden guests of all ages marveled at the new Nikkei Manor Courtyard Garden. Rainy skies 

gave way to gentle sunshine as the Garden received Shinto, Buddhist, and Christian blessings. 

Community leaders and representatives from the University of Washington Landscape Architecture 

Design-Build team shared their best wishes and experiences with attendees. Residents and guests 

tasted the delicious hors d’oeuvres, toured the new garden, found their favorite spots, and made 

a few new memories to take home and treasure.

Seattle Keiro Garden Project Major Donor Event and Grand Opening 

Consul General Kiyokazu Ota, Landscape Architect Scott Murase, Representative Sharon Tomiko 

Santos, Nikkei Concerns Board President Ted Tomita, and Seattle Keiro Family Member Carmen 

Tsuboi Chan participated in the “kagami-wari” ceremony – traditional breaking of the sake barrel 

to honor the formal opening of the Seattle Keiro Garden. O.K.K. Taiko’s performances drew from 

the spirit and energy of the garden and brought the guests to their feet. Seattle Keiro welcomed 

the residents, families, and community with two days of celebration for the new Seattle Keiro 

Garden. Visitors were filled with peace and tranquility as they strolled through the garden, finding 

new delights at every turn, especially the delicious sushi so generously provided by Billy Beach 

and Japonessa Sushi Cocina.

Ayame Kai’s 3rd Annual Steak Dinner 

Hungry cowpokes got their chow quickly at the 3rd Annual Ayame Kai Steak Dinner. Nikkei 

Manor residents Henry Matsubu, Yoshiko Murakami, and Kaz Ishimitsu supervised the grilling 

with volunteer Terry Takeuchi. Seattle Keiro residents also attended, with smiles all around 

for the tasty grub. Guests reconnected with friends and family, bid on silent auction items, 

and purchased tantalizing sweets from the bake sale. The dinner was a great success, with 

hundreds of happy families.

Nikkei Horizons Instructor Appreciation Luncheon 

At the Nikkei Horizons Instructor Appreciation Luncheon, retiring Nikkei Horizons Japanese 

instructor Miyoko Kaneta received recognition from Nikkei Manor Manager Rie Taki and Nikkei 

Concerns CEO Jeffrey Hattori for her 15 years of dedication to her students. Guests enjoyed a 

delicious lunch, exciting raffle prizes, words of heartfelt appreciation, and a sense of belonging 

to something important. As a thank you for all of the fascinating, exciting, educational, novel, and 

fun experiences that the Nikkei Horizons instructors provide, students and instructors entertained 

the group with minyo dance, singing, ukulele, and hula.

Seattle Keiro Guest Chef Event 

Chef Billy Beach of Japonessa was our Guest 

Chef this season. He graciously prepared lunch 

for the Seattle Keiro residents and almost 50 

community guests. His sushi pleased both the 

eye and the palate, and his crab soup was out 

of this world! Many, many thanks to Chef Beach 

for giving such a special gift to the residents!

Living Well Health & Wellness Series 

We kicked off our Living Well Health Fair Series 

with Living Well with Diabetes, partnering with 

the American Diabetes Association and Seattle 

JACL to bring better health and awareness 

of diabetes. Attendees gained much insight 

into diabetes from a full spectrum of expert 

presentations, and the EnhancedFitness and 

Chair Yoga demonstrations encouraged them to burn some excess 

blood sugar.

JACL、米国糖尿病協会との共催でベルビューで開催されました。 

32nd Annual South China Dinner 

Suma Yagi and Kats Okamoto enjoyed both 

the delectable food and the strong sense 

of community at the South China Dinner. 

Volunteers expertly dished up the food for all 

to see. Whether dinner was at South China 

Restaurant or delivered to Seattle Keiro or 

Nikkei Manor, the camaraderie and kizuna 

(bond) was easy to see. A special thanks goes 

out to the Ko Family and the South China staff.

Seattle Keiro Summer Festival 

The boom of taiko drums called all to join 

this year’s Seattle Keiro Summer Festival, our 

version of the traditional bon odori. Seattle 

Keiro Resident x and staff member Rosalinda 

Fernandez were entranced by the dancers. 

Many thanks to everyone who revived 

age-old traditions for the Seattle Keiro and 

Nikkei Manor residents with song and dance, 

including the new Japanese Queen’s Court, 

dancers from Seattle Betsuin Buddhist Church 

and White River Buddhist Temple, All-star Taiko, 

and the many volunteers who helped with the 

food booths and transporting the residents.

completely destroyed in the disaster. 

More than one year after the March 2011 disaster, the 

displaced residents are now secure, happy, and live in 

peace. In one home, they recently celebrated Tanabata 

(Star Festival) for the first time since the tsunami. Tomatoes 

and cucumbers are flourishing in their garden. The staff 

and residents expressed deep gratitude to each and 

every donor. 

日系コンサーンズでは、東日本大震災が発生した直後に 

東北地方の被災地の高齢者支援に特化した義援金を募 

りました。わたくしたちのように高齢者への敬意を払い活 

動する団体に義援金を役立てていただきたく慎重にパー 

トナーを探し、宮城県認知症グループホーム協議会を支 

援先に選びました。わたしたちの義援金は、協議会が運 

営する全壊しながらも運営を続けている 15のグルー 

プホームに配布され、シャワー・チェアー、センサーマット 

などの購入資金となり、入居者のみなさまの生活に役立 

っています。

meeting. Comprised of 30 select 

employees representing all factions 

of the organization, this committee 

helps promote the integration of 

the NC Way and Values into 

our workplace culture. They are 

a diverse group representing a 

multitude of races, ethnicities, and 

languages. Each and everyone of 

them share a deep commitment to 

the care of our residents. The NC 

Way Values Committee is all about 

improving the service to the NC 

Family. It meets monthly to listen to 

the family of residents share what 

is important to them; they obtain a 

better understanding of the needs

NC in the community: 

Volunteers Amy Hirasawa and Fujie Yamasaki were recognized by 

Senior Services at their Inspire Positive Aging Award ceremony. Between 

them, these long-time volunteers have almost 60 years of dedicated 

service to Seattle Keiro, and we are truly fortunate to include them in 

our family. They are stellar representatives of our volunteers, all of whom 

make every day the best day for the residents and participants.

The elegant and stately kiryu 

sculpture that has watched over gardens at 

Seattle Keiro and Nikkei Manor now graces the lawn at the Midori 

Condominiums. Artist Yasuhiro Kobayashi brought it to life in Gerard 

Tsutakawa’s art studio. In May, the kiryu received a formal blessing 

from Rev. Yoshiaka Takemura in its new home and the Midori residents 

welcomed its presence.

The famous Japanese enka singer dazzled residents at both 

Seattle Keiro and Nikkei Manor. This was a return visit for Ohisan, 

at least, to Nikkei Manor, where he performed last year. 

Domo arigato, Ohi-san! We also express our sincere thanks to 

Uguisu-kai, a choral group which performs at Seattle Keiro and 

Nikkei Manor semi-annually. Their kindness and urging brought 

Ohi-san to Nikkei Concerns.

The new Garden encourages residents and participants 

to spend lots of time outside and soak in the summer 

sun, and more scheduled activities are moving outside. 

Seattle Keiro resident Kil Chang gave the Mariners two 

thumbs-up at their recent game. The residents take on the 

cool windy Safeco Field with coats, scarves, and warm 

blankets as they cheer on their favorite team. Go Mariners! 

Activities Assistant Vicky Troung and Seattle Keiro Resident Chin 

Chu Lee celebrated Independence Day together. Surrounded by 

caring family, volunteers, and staff, the residents honored the stars 

and stripes with snacks, friendship, and festive hats.

Recently this group embarked upon 

a “Smiles Campaign” to increase 

smiling in the workforce. Smiling has 

been identified by family members 

as a compelling element in the 

delivery of quality service. Next time 

you see one of our staff members 

smiling, reinforce this behavior by 

smiling back. It’s one way in “Making 

Everyday The Best Day.” 

Working together on the 

Dragonfly Journey 

Simple gestures can make a huge 

impact, especially when everyone 

works toward one specific goal. The 

Dragonfly Journey Program 

provides comfort for families and 

dignity and peace for their loved one 

during his/her final journey. 

At Seattle Keiro, members of each 

department make an extra effort to 

do their part. Nurses provide comfort 

care, social workers are there to 

listen. Dietary staff bring snacks and 

refreshments for families, so they 

can stay by their loved one’s side. 

Maintenance workers offer families 

a reclining armchair where they can 

rest or even catch a few hours of 

sleep. Activities staff fill the resident’s 

room with peaceful music and offer 

a memory book for families to record 

their best memories of their loved one. 

Volunteers sit by a resident’s side, 

holding his/her hand so the resident 

knows that someone always cares. 

Nikkei Manor is also implementing 

the program and has already made 

a difference in the lives of the families 

and the ones they love.

Mixed Berry Crisp (6 Servings)

Seasoned at Nikkei 

Manor’s Foodie Forum 

Many Nikkei Manor residents, staff, 

volunteers, and family members can be seen 

proudly wearing Foodie Forum buttons 

that display shiitake mushroom with the 

words “I’m a Foodie!!” This is a fun group 

that meets quarterly to discuss all things foodrelated. 

On the first day of each season, the 

Foodie Forum talks about memories of great 

meals, family traditions, and cultural and 

historical ties to certain foods. Everyone has a chance 

to describe their favorite foods of the season. Treasured 

recipes are shared with the group and tasty tidbits are 

served and critiqued. 

Most importantly, many dishes discussed at the Foodie 

Forum find their way onto the menu at Nikkei Manor. 

Residents are delighted when they see their own 

suggestions on their dinner plates! At the summer meeting, 

several members described their love for fresh berries this 

time of year, and as a result, we prepared a mixed 

berry crisp for their enjoyment. Please try this easy 

recipe and enjoy the summer as you proudly proclaim, 

“I’m a Foodie!”

Dietary Manager, Nikkei Manor 

Filling: Topping: 

1 lb. Strawberries, washed, trimmed and sliced 4 oz Butter, cubed 

1 pt. Blueberries, washed 1 c. Flour 

1 pt. Blackberries, washed 1 c. Rolled oats, uncooked 

1 pt. Red raspberries, washed 1/2 c. Brown sugar 

1 each Zest and juice of one large orange 1/2 t. Nutmeg 

1 t. Vanilla extract 1 t. Cinnamon 

1/2 c. Sugar 

1/4 c. Brown sugar 

1/4 c. Cornstarch 

Method: 

1. Preheat oven to 350°. 

2. Combine all ingredients for filling. Spread evenly in a greased 9”x13”x2” baking dish. 

3. Mix topping ingredients together with hands until crumbly. Spread over berry mixture. 

4. Bake for 20-25 minutes until top is golden brown. 

5. Serve warm with whipped cream, ice cream, or cheese. Meshiagare! (Please eat!) 

Daikon Honey to the rescue! 

Got a sore throat Can’t stop coughing Daikon 

and honey will be your lifesaver! 

Daikon (white radish) contains vitamin C and 

important enzymes - diastase, amylase, and 

esterase. These enzymes in daikon juice are 

known to break down mucus and phlegm in the 

respiratory system. So next time you are a bit 

under the weather, chop daikon into small cubes, 

put them into a container, and cover them with 

honey. Leave them in fridge overnight and drink the 

juice! You will be on your way back to a healthy 

you! Daikon honey juice is excellent for coughs 

and sore throat. But it smells…

フが集まり、大好きな季節の食べ物やレシピ、思い出な 

どについて語り合います。そこで紹介されたレシピは日 

系マナーのメニューにもとりあげられます。夏といえば 

新鮮なベリー!このミックスベリー・クリスプもフーディ 

ー・フォーラム発のアイデアで実際に入居者のみなさま 

のデザートとして提供されました。 

喉の痛み& 咳にはハチミツ大根 ! 

喉が痛い! 咳が止まらない!そんなときには、大根 

1 本 ! 大根はビタミンCが豊富、かつ消炎作用をも 

つ酵素を多く含んでいるのです。角切りにした大根 

を容器に入れ、はちみつを大根全体にからむよう 

にかけましょう。冷蔵庫で一晩置くと大根ジュース 

がじわっとでてきます。これを飲めばいいのです。ち 

ょっと臭いますけど効果てきめん!
