<strong>NC</strong> <strong>Way</strong> is fully endorsed by <strong>the</strong> <strong>NC</strong> Board and is<br />

gaining momentum with staff… soon to be incorporated<br />

with volunteers and family members. Over <strong>the</strong> course of<br />

<strong>the</strong> year <strong>the</strong> <strong>NC</strong> Management and Staff have embraced<br />

this concept as a means to deliver high-quality service<br />

for our residents. Our core values, Respect, Trust,<br />

Kimochi (compassion), Quality of Life, and<br />

Family are intended to shape <strong>the</strong> attitude and behaviors<br />

of our staff in <strong>the</strong> care of our residents. We have built our<br />

strategy around <strong>the</strong> <strong>NC</strong> <strong>Way</strong>, communicated <strong>the</strong> concept<br />

to all our staff, discussed <strong>the</strong> <strong>NC</strong> <strong>Way</strong> weekly in all our<br />

meetings, based many of our decisions through <strong>the</strong> <strong>NC</strong><br />

<strong>Way</strong> and created a special advisory group called <strong>the</strong> <strong>NC</strong><br />

<strong>Way</strong> <strong>Values</strong> Committee.<br />

“The <strong>NC</strong> <strong>Way</strong>, supported by our core values, will<br />

establish a foundation for exceptional service for our<br />

participants, staff, community and most importantly <strong>the</strong><br />

residents we serve” noted Willon Lew, motivated as an<br />

<strong>NC</strong> family member of two former residents himself, who is<br />

helping <strong>lead</strong> this effort. It’s all about placing high value on<br />

<strong>the</strong> members of <strong>the</strong> <strong>NC</strong> Family.<br />

As President I am working toward stronger kizuna (bond) between <strong>the</strong> <strong>Nikkei</strong> <strong>Concerns</strong> Board (moving forward with <strong>the</strong> <strong>NC</strong><br />

<strong>Way</strong>) and <strong>the</strong> community.<br />

The Board members are <strong>Nikkei</strong> <strong>Concerns</strong>’ link to <strong>the</strong> community, sharing information with community members. We listen to you<br />

and convey your needs and concerns so everyone keeps up to date on current issues. For <strong>the</strong> good of <strong>the</strong> entire community, we<br />

link with fellow organizations to form partnerships.<br />

Three members of <strong>the</strong> Board, including myself, serve on CEO Jeffrey Hattori’s “Blue Ribbon” Committee. Over <strong>the</strong> next several<br />

months, we, along with <strong>the</strong> o<strong>the</strong>r members, will make recommendations for <strong>Nikkei</strong> <strong>Concerns</strong>’ future direction. My thanks to <strong>the</strong><br />

Committee members and participating board members for <strong>the</strong>ir dedication.<br />

As we work toge<strong>the</strong>r, we build a stronger <strong>Nikkei</strong> <strong>Concerns</strong> and a more connected community. Your involvement enriches <strong>the</strong><br />

“When your values are clear to you, making decisions become easier.” This is a quote from Roy Disney, nephew of Walt<br />

Disney. How true! <strong>Nikkei</strong> <strong>Concerns</strong> was founded on core values that have remained firmly entrenched since 1975 and<br />

include Respect, Trust, Kimochi (compassion), Quality of Life, and Family. Over <strong>the</strong> past two plus years <strong>the</strong>y have served as<br />

<strong>the</strong> driving force for how we “think and do.”<br />

Recently, we have rolled out <strong>the</strong> <strong>Nikkei</strong> <strong>Concerns</strong> (<strong>NC</strong>) <strong>Way</strong> initiative that is based on our core values and will flow<br />

throughout <strong>the</strong> organization. Making every day <strong>the</strong> best day for our residents, participants, staff and community is now <strong>the</strong><br />

#1 job for all who work at <strong>Nikkei</strong> <strong>Concerns</strong>. Simply put, we want to be <strong>the</strong> best place to live, work and support!<br />

Each and every employee is critical in providing <strong>the</strong> highest quality of care and services and work environment. I am pleased<br />

to announce that we have created <strong>the</strong> <strong>NC</strong> <strong>Way</strong> <strong>Values</strong> Committee that is composed of representatives from all programs and<br />

departments to share and seek ideas and promote a culture that enhances <strong>Nikkei</strong> <strong>Concerns</strong>. It gives me goose bumps to see<br />

and hear <strong>the</strong>ir enthusiasm and passion!<br />

I had a chance to talk with Russ Akiyama, founding CEO, about what may be in <strong>the</strong> future for <strong>Nikkei</strong> <strong>Concerns</strong> and he said,<br />

“Jeffrey, <strong>the</strong> <strong>NC</strong> <strong>Way</strong> IS (and will <strong>lead</strong>) <strong>the</strong> future.” I suspect his quote will become much like Roy Disney’s… one to<br />

remember, live and work by.<br />

Home before <strong>the</strong> tsunami<br />

The <strong>NC</strong> <strong>Values</strong> in action for Japan Relief<br />

日 本 復 興 へ、「<strong>NC</strong>バリュー」の 貢 献<br />

When Japan was devastated by <strong>the</strong> tsunami and subsequent earthquakes, <strong>Nikkei</strong><br />

<strong>Concerns</strong> immediately mobilized fundraising efforts to help. Families and individuals,<br />

volunteers, and staff members gave generously to aid <strong>the</strong> people impacted by <strong>the</strong><br />

disasters. Some donors had family in Japan, with a few in Miyagi-ken; many more<br />

gave out of <strong>the</strong> goodness of <strong>the</strong>ir hearts with a wish to help restore a sense of<br />

normalcy to <strong>the</strong> people who suffered so deeply. In all, <strong>Nikkei</strong> <strong>Concerns</strong>’ raised over<br />

$19,000.<br />

After an intense search for an eldercare organization in Miyagi-ken, <strong>Nikkei</strong> <strong>Concerns</strong><br />

donated <strong>the</strong> funds to Miyagi-ken Shou Group Home Kyougi Kai, a<br />

non-profit association of group homes who care for residents with dementia and<br />

Alzheimer’s. The association was able to purchase a shower chair and a fall sensor<br />

<strong>Nikkei</strong> <strong>Concerns</strong> is competing to win a Toyota Sienna Mobility Van, and<br />

we need you!<br />

<strong>Nikkei</strong> Manor Garden Courtyard Grand Opening<br />

Garden guests of all ages marveled at <strong>the</strong> new <strong>Nikkei</strong> Manor Courtyard Garden. Rainy skies<br />

gave way to gentle sunshine as <strong>the</strong> Garden received Shinto, Buddhist, and Christian blessings.<br />

Community <strong>lead</strong>ers and representatives from <strong>the</strong> University of Washington Landscape Architecture<br />

Design-Build team shared <strong>the</strong>ir best wishes and experiences with attendees. Residents and guests<br />

tasted <strong>the</strong> delicious hors d’oeuvres, toured <strong>the</strong> new garden, found <strong>the</strong>ir favorite spots, and made<br />

a few new memories to take home and treasure.<br />

Consul General Kiyokazu Ota, Landscape Architect Scott Murase, Representative Sharon Tomiko<br />

Santos, <strong>Nikkei</strong> <strong>Concerns</strong> Board President Ted Tomita, and Seattle Keiro Family Member Carmen<br />

Tsuboi Chan participated in <strong>the</strong> “kagami-wari” ceremony – traditional breaking of <strong>the</strong> sake barrel<br />

to honor <strong>the</strong> formal opening of <strong>the</strong> Seattle Keiro Garden. O.K.K. Taiko’s performances drew from<br />

<strong>the</strong> spirit and energy of <strong>the</strong> garden and brought <strong>the</strong> guests to <strong>the</strong>ir feet. Seattle Keiro welcomed<br />

<strong>the</strong> residents, families, and community with two days of celebration for <strong>the</strong> new Seattle Keiro<br />

Garden. Visitors were filled with peace and tranquility as <strong>the</strong>y strolled through <strong>the</strong> garden, finding<br />

new delights at every turn, especially <strong>the</strong> delicious sushi so generously provided by Billy Beach<br />

and Japonessa Sushi Cocina.<br />

Ayame Kai’s 3rd Annual Steak Dinner<br />

Hungry cowpokes got <strong>the</strong>ir chow quickly at <strong>the</strong> 3rd Annual Ayame Kai Steak Dinner. <strong>Nikkei</strong><br />

Manor residents Henry Matsubu, Yoshiko Murakami, and Kaz Ishimitsu supervised <strong>the</strong> grilling<br />

with volunteer Terry Takeuchi. Seattle Keiro residents also attended, with smiles all around<br />

for <strong>the</strong> tasty grub. Guests reconnected with friends and family, bid on silent auction items,<br />

and purchased tantalizing sweets from <strong>the</strong> bake sale. The dinner was a great success, with<br />

hundreds of happy families.<br />

At <strong>the</strong> <strong>Nikkei</strong> Horizons Instructor Appreciation Luncheon, retiring <strong>Nikkei</strong> Horizons Japanese<br />

instructor Miyoko Kaneta received recognition from <strong>Nikkei</strong> Manor Manager Rie Taki and <strong>Nikkei</strong><br />

<strong>Concerns</strong> CEO Jeffrey Hattori for her 15 years of dedication to her students. Guests enjoyed a<br />

delicious lunch, exciting raffle prizes, words of heartfelt appreciation, and a sense of belonging<br />

to something important. As a thank you for all of <strong>the</strong> fascinating, exciting, educational, novel, and<br />

fun experiences that <strong>the</strong> <strong>Nikkei</strong> Horizons instructors provide, students and instructors entertained<br />

<strong>the</strong> group with minyo dance, singing, ukulele, and hula.<br />

Seattle Keiro Guest Chef Event<br />

Chef Billy Beach of Japonessa was our Guest<br />

Chef this season. He graciously prepared lunch<br />

for <strong>the</strong> Seattle Keiro residents and almost 50<br />

community guests. His sushi pleased both <strong>the</strong><br />

eye and <strong>the</strong> palate, and his crab soup was out<br />

of this world! Many, many thanks to Chef Beach<br />

for giving such a special gift to <strong>the</strong> residents!<br />

Living Well Health & Wellness Series<br />

We kicked off our Living Well Health Fair Series<br />

with Living Well with Diabetes, partnering with<br />

<strong>the</strong> American Diabetes Association and Seattle<br />

JACL to bring better health and awareness<br />

of diabetes. Attendees gained much insight<br />

into diabetes from a full spectrum of expert<br />

presentations, and <strong>the</strong> EnhancedFitness and<br />

Chair Yoga demonstrations encouraged <strong>the</strong>m to burn some excess<br />

blood sugar.<br />

JACL、 米 国 糖 尿 病 協 会 との 共 催 でベルビューで 開 催 されました。<br />

32nd Annual South China Dinner<br />

Suma Yagi and Kats Okamoto enjoyed both<br />

<strong>the</strong> delectable food and <strong>the</strong> strong sense<br />

of community at <strong>the</strong> South China Dinner.<br />

Volunteers expertly dished up <strong>the</strong> food for all<br />

to see. Whe<strong>the</strong>r dinner was at South China<br />

Restaurant or delivered to Seattle Keiro or<br />

<strong>Nikkei</strong> Manor, <strong>the</strong> camaraderie and kizuna<br />

(bond) was easy to see. A special thanks goes<br />

out to <strong>the</strong> Ko Family and <strong>the</strong> South China staff.<br />

Seattle Keiro Summer Festival<br />

The boom of taiko drums called all to join<br />

this year’s Seattle Keiro Summer Festival, our<br />

version of <strong>the</strong> traditional bon odori. Seattle<br />

Keiro Resident x and staff member Rosalinda<br />

Fernandez were entranced by <strong>the</strong> dancers.<br />

Many thanks to everyone who revived<br />

age-old traditions for <strong>the</strong> Seattle Keiro and<br />

<strong>Nikkei</strong> Manor residents with song and dance,<br />

including <strong>the</strong> new Japanese Queen’s Court,<br />

dancers from Seattle Betsuin Buddhist Church<br />

and White River Buddhist Temple, All-star Taiko,<br />

and <strong>the</strong> many volunteers who helped with <strong>the</strong><br />

food booths and transporting <strong>the</strong> residents.<br />

completely destroyed in <strong>the</strong> disaster.<br />

More than one year after <strong>the</strong> March 2011 disaster, <strong>the</strong><br />

displaced residents are now secure, happy, and live in<br />

peace. In one home, <strong>the</strong>y recently celebrated Tanabata<br />

(Star Festival) for <strong>the</strong> first time since <strong>the</strong> tsunami. Tomatoes<br />

and cucumbers are flourishing in <strong>the</strong>ir garden. The staff<br />

and residents expressed deep gratitude to each and<br />

every donor.<br />

東 北 地 方 の 被 災 地 の 高 齢 者 支 援 に 特 化 した 義 援 金 を 募<br />

In May, <strong>Nikkei</strong><br />

<strong>Concerns</strong> held<br />

its first <strong>NC</strong> <strong>Way</strong><br />

<strong>Values</strong> Committee<br />

meeting. Comprised of 30 select<br />

employees representing all factions<br />

of <strong>the</strong> organization, this committee<br />

helps promote <strong>the</strong> integration of<br />

<strong>the</strong> <strong>NC</strong> <strong>Way</strong> and <strong>Values</strong> into<br />

our workplace culture. They are<br />

a diverse group representing a<br />

multitude of races, ethnicities, and<br />

languages. Each and everyone of<br />

<strong>the</strong>m share a deep commitment to<br />

<strong>the</strong> care of our residents. The <strong>NC</strong><br />

<strong>Way</strong> <strong>Values</strong> Committee is all about<br />

improving <strong>the</strong> service to <strong>the</strong> <strong>NC</strong><br />

Family. It meets monthly to listen to<br />

<strong>the</strong> family of residents share what<br />

is important to <strong>the</strong>m; <strong>the</strong>y obtain a<br />

better understanding of <strong>the</strong> needs<br />

<strong>NC</strong> in <strong>the</strong> community:<br />

Volunteers Amy Hirasawa and Fujie Yamasaki were recognized by<br />

Senior Services at <strong>the</strong>ir Inspire Positive Aging Award ceremony. Between<br />

<strong>the</strong>m, <strong>the</strong>se long-time volunteers have almost 60 years of dedicated<br />

service to Seattle Keiro, and we are truly fortunate to include <strong>the</strong>m in<br />

our family. They are stellar representatives of our volunteers, all of whom<br />

make every day <strong>the</strong> best day for <strong>the</strong> residents and participants.<br />

The elegant and stately kiryu<br />

sculpture that has watched over gardens at<br />

Seattle Keiro and <strong>Nikkei</strong> Manor now graces <strong>the</strong> lawn at <strong>the</strong> Midori<br />

Condominiums. Artist Yasuhiro Kobayashi brought it to life in Gerard<br />

Tsutakawa’s art studio. In May, <strong>the</strong> kiryu received a formal blessing<br />

from Rev. Yoshiaka Takemura in its new home and <strong>the</strong> Midori residents<br />

welcomed its presence.<br />

at least, to <strong>Nikkei</strong> Manor, where he performed last year.<br />

Domo arigato, Ohi-san! We also express our sincere thanks to<br />

Uguisu-kai, a choral group which performs at Seattle Keiro and<br />

<strong>Nikkei</strong> Manor semi-annually. Their kindness and urging brought<br />

Ohi-san to <strong>Nikkei</strong> <strong>Concerns</strong>.<br />

Seattle Keiro resident Kil Chang gave <strong>the</strong> Mariners two<br />

thumbs-up at <strong>the</strong>ir recent game. The residents take on <strong>the</strong><br />

cool windy Safeco Field with coats, scarves, and warm<br />

blankets as <strong>the</strong>y cheer on <strong>the</strong>ir favorite team. Go Mariners!<br />

a “Smiles Campaign” to increase<br />

smiling in <strong>the</strong> workforce. Smiling has<br />

been identified by family members<br />

as a compelling element in <strong>the</strong><br />

delivery of quality service. Next time<br />

you see one of our staff members<br />

smiling, reinforce this behavior by<br />

smiling back. It’s one way in “Making<br />

Everyday The Best Day.”<br />

Working toge<strong>the</strong>r on <strong>the</strong><br />

Dragonfly Journey<br />

Simple gestures can make a huge<br />

impact, especially when everyone<br />

works toward one specific goal. The<br />

Dragonfly Journey Program<br />

provides comfort for families and<br />

dignity and peace for <strong>the</strong>ir loved one<br />

during his/her final journey.<br />

At Seattle Keiro, members of each<br />

department make an extra effort to<br />

do <strong>the</strong>ir part. Nurses provide comfort<br />

care, social workers are <strong>the</strong>re to<br />

listen. Dietary staff bring snacks and<br />

refreshments for families, so <strong>the</strong>y<br />

can stay by <strong>the</strong>ir loved one’s side.<br />

Maintenance workers offer families<br />

a reclining armchair where <strong>the</strong>y can<br />

rest or even catch a few hours of<br />

sleep. Activities staff fill <strong>the</strong> resident’s<br />

room with peaceful music and offer<br />

a memory book for families to record<br />

<strong>the</strong>ir best memories of <strong>the</strong>ir loved one.<br />

Volunteers sit by a resident’s side,<br />

holding his/her hand so <strong>the</strong> resident<br />

knows that someone always cares.<br />

<strong>Nikkei</strong> Manor is also implementing<br />

<strong>the</strong> program and has already made<br />

a difference in <strong>the</strong> lives of <strong>the</strong> families<br />

and <strong>the</strong> ones <strong>the</strong>y love.<br />

Manor’s Foodie Forum<br />

Many <strong>Nikkei</strong> Manor residents, staff,<br />

volunteers, and family members can be seen<br />

proudly wearing Foodie Forum buttons<br />

that display shiitake mushroom with <strong>the</strong><br />

words “I’m a Foodie!!” This is a fun group<br />

that meets quarterly to discuss all things foodrelated.<br />

On <strong>the</strong> first day of each season, <strong>the</strong><br />

Foodie Forum talks about memories of great<br />

meals, family traditions, and cultural and<br />

historical ties to certain foods. Everyone has a chance<br />

to describe <strong>the</strong>ir favorite foods of <strong>the</strong> season. Treasured<br />

recipes are shared with <strong>the</strong> group and tasty tidbits are<br />

served and critiqued.<br />

Most importantly, many dishes discussed at <strong>the</strong> Foodie<br />

Forum find <strong>the</strong>ir way onto <strong>the</strong> menu at <strong>Nikkei</strong> Manor.<br />

Residents are delighted when <strong>the</strong>y see <strong>the</strong>ir own<br />

suggestions on <strong>the</strong>ir dinner plates! At <strong>the</strong> summer meeting,<br />

several members described <strong>the</strong>ir love for fresh berries this<br />

time of year, and as a result, we prepared a mixed<br />

berry crisp for <strong>the</strong>ir enjoyment. Please try this easy<br />

recipe and enjoy <strong>the</strong> summer as you proudly proclaim,<br />

Filling: Topping:<br />

1 lb. Strawberries, washed, trimmed and sliced 4 oz Butter, cubed<br />

1 pt. Blueberries, washed 1 c. Flour<br />

1 pt. Blackberries, washed 1 c. Rolled oats, uncooked<br />

1 pt. Red raspberries, washed 1/2 c. Brown sugar<br />

1 each Zest and juice of one large orange 1/2 t. Nutmeg<br />

1 t. Vanilla extract 1 t. Cinnamon<br />

1/2 c. Sugar<br />

1/4 c. Brown sugar<br />

1/4 c. Cornstarch<br />

Method:<br />

1. Preheat oven to 350°.<br />

2. Combine all ingredients for filling. Spread evenly in a greased 9”x13”x2” baking dish.<br />

3. Mix topping ingredients toge<strong>the</strong>r with hands until crumbly. Spread over berry mixture.<br />

4. Bake for 20-25 minutes until top is golden brown.<br />

5. Serve warm with whipped cream, ice cream, or cheese. Meshiagare! (Please eat!)<br />

Daikon Honey to <strong>the</strong> rescue!<br />

Got a sore throat Can’t stop coughing Daikon<br />

and honey will be your lifesaver!<br />

Daikon (white radish) contains vitamin C and<br />

important enzymes - diastase, amylase, and<br />

esterase. These enzymes in daikon juice are<br />

known to break down mucus and phlegm in <strong>the</strong><br />

respiratory system. So next time you are a bit<br />

under <strong>the</strong> wea<strong>the</strong>r, chop daikon into small cubes,<br />

put <strong>the</strong>m into a container, and cover <strong>the</strong>m with<br />

honey. Leave <strong>the</strong>m in fridge overnight and drink <strong>the</strong><br />

juice! You will be on your way back to a healthy<br />

you! Daikon honey juice is excellent for coughs<br />

and sore throat. But it smells…<br />
