<strong>The</strong> <strong>Role</strong> <strong>of</strong> <strong>Beef</strong> <strong>in</strong> <strong>the</strong> <strong>American</strong> <strong>Diet</strong><br />

Us<strong>in</strong>g a Food <strong>The</strong>rmometer<br />

S<strong>in</strong>ce color is not a reliable <strong>in</strong>dicator <strong>of</strong> whe<strong>the</strong>r beef or o<strong>the</strong>r meat<br />

or poultry is safe to eat, a food <strong>the</strong>rmometer should be used every time<br />

<strong>the</strong>se foods are prepared. Many types <strong>of</strong> food <strong>the</strong>rmometers are available,<br />

and <strong>the</strong>y all work well with large pieces <strong>of</strong> food. For small pieces<br />

<strong>of</strong> food, such as a hamburger or chicken breast, <strong>the</strong> most convenient<br />

type <strong>of</strong> <strong>the</strong>rmometer to use is a digital <strong>in</strong>stant-read <strong>the</strong>rmometer. If <strong>the</strong><br />

food is thick enough, it may be possible to <strong>in</strong>sert <strong>the</strong> <strong>the</strong>rmometer from<br />

<strong>the</strong> top. If not, or if you must use a dial <strong>in</strong>stant-read <strong>the</strong>rmometer, <strong>in</strong>sert<br />

<strong>the</strong> <strong>the</strong>rmometer from <strong>the</strong> side and make sure that it reaches <strong>the</strong> center<br />

<strong>of</strong> <strong>the</strong> food. It may be necessary to remove <strong>the</strong> food from <strong>the</strong> heat and<br />

transfer it to a clean plate before <strong>in</strong>sert<strong>in</strong>g <strong>the</strong> <strong>the</strong>rmometer. If <strong>the</strong> <strong>the</strong>rmometer<br />

shows that <strong>the</strong> food has not yet reached a safe temperature,<br />

cont<strong>in</strong>ue cook<strong>in</strong>g and wash <strong>the</strong> <strong>the</strong>rmometer probe (<strong>the</strong> part that goes<br />

<strong>in</strong>to <strong>the</strong> food) thoroughly before check<strong>in</strong>g <strong>the</strong> food’s temperature aga<strong>in</strong>.<br />

Freez<strong>in</strong>g <strong>Beef</strong><br />

People sometimes buy beef <strong>in</strong> quantities greater than <strong>the</strong>y can use<br />

right away, with <strong>the</strong> <strong>in</strong>tention <strong>of</strong> freez<strong>in</strong>g some <strong>of</strong> <strong>the</strong> meat for later use.<br />

Freez<strong>in</strong>g is a safe way to store beef and o<strong>the</strong>r foods, provided that <strong>the</strong>
