HAWAII PACIFIC ISLANDS REGION NEWSLETTER FALL 2008
LAURENCE VOGEL, BAILLI PROVINCIAL
Anna Lise and I are looking forward with eager anticipation to returning to Hawaii. As I write
this note, we are winding up a glorious vacation at our farm in New York State. It seems like only
yesterday that a number of us were lucky enough to be in Boston in July, to celebrate another
"Changing of the Guards." I had the pleasure at that time, on your behalf, to present a beautiful
maile lei to our international President, Yam Atallah. We welcomed in Bailli Délégué George
Brown, and said "mahalo" to Bailli Délégué Joe Caruso for his inspired leadership of our great
organization. Last year, as you will remember, Joe honored us by attending and participating in
our Big Island Assemblage. Great leadership is ever present throughout our region, too.
I celebrate and thank all of our Hawaii Baillis, and their inspired and hard working
officers, for all they have done to make our region so highly effective and internationally
respected. You all have brought great honor and praise worthy distinction to our shores. All of us
are in your debt.
FRED HELLEKES, CHAMBELAN PROVINCIAL
We have come a long way from our humble beginnings. It was on April 14, 1973 that
14 members of the newly formed chapter of the Confrerie de la Chaîne des Rotisseurs
and its Bailli, Colonel Dutton had their first dinner at the Ala Moana Hotel with the
unheard of tab of $22.50, a price that was worth mention on the evening news.
Today, 265 plus members should feel privileged to belong to a society whose
purpose is to promote a better understanding and greater appreciation of the art of fine
dining. In this day and age when cooking has been simplified in more than one way, it
is crucial not to lose sight of what fine dining and the pleasure of the table are all
about.
The planning and execution of a Chaîne event involves an extraordinary effort on the part of your officers
and well as the host establishment. I invite every member to show your support and appreciation for their efforts
by attending future functions whenever possible.
JUDITH KELLOGG, CHARGÉE DE PRESSE PROVINCIALE
Transitions, Treasured Memories, and Traditions
I have one of the best jobs
in the Chaîne, having the
privilege of being the first
to read about all the
wonderful events
happening in the Hawai‘i
Pacific Islands Region.
And the photos make me
wish I could be at every
one of those functions. The black-tie galas are
always magnificent, with the Big Island adding a
little local color with their “Christmas in
Kealakekua.” Garrett Saikley’s “Truffle Court”
established his own witty and fun-loving leadership
style as Honolulu Bailli, presiding as bewigged
judge. And then there is the warm personal touch
with Bailli Chris Speere and his family cooking the
Italian dinner that welcomed in new Bailli Werner
Boettner. Bailli Mark Monoscalco’s special attention
to fine wines and perfect pairings has consistently
enhanced his many venues.
Every chapter has been well represented over
the past year in the Gastronome, and the Baillis’ reports
here in the newsletter provide a good overview of all
the great food, wine, and parties. I am fortunate to be
working with excellent Vice Chargés de Presse in each
chapter. Thank you to Donna Bebber (Honolulu),
Michael Blaksteen (Hawai‘i Island), Robert Cartwright
(Maui), and Christel Yount (Kauai/Oahu).
Of special note is that two articles from the
region were featured in the International Chaîne des
Rotisseurs Magazine: one on last year’s amazing Big
Island Assemblage organized by Bailli Wilhelm
Pirngruber and Vice Chargé de Presse Michael
Blaksteen, and a feature on guitarist, Chevalier
d’Honneur Carlos Barbosa-Lima of the Honolulu
chapter. It is exhilarating to know that the outstanding
events from our special Paradise can be appreciated by
such a wide audience
HAWAII PACIFIC ISLANDS REGION NEWSLETTER FALL 2008
Once again, the
Hawaii/Pacific Jeune
Commis competition
held on April 12, at
the Culinary Institute
of the Pacific at
Kapiolani
Community College
was a great success.
This year, special help was provided by The US
Army Culinary Arts Team Hawaii, supported by
Staff Sergeant David Marcelli, Aide to the
Commanding General of US Army Pacific, who
served as Kitchen Floor Judge. Former regional
Jeune Commis winner, Jarren Otake also assisted.
We had seven talented contestants, but the winner
turned out to be Sonny Acosta, who represented
Hawai‘i for the second year in a row at the national
competition. All the contestants’ achievements were
celebrated at a special luncheon at the Outrigger
Canoe Club following the competition.
KUSUMA COORAY, CONSEILLER CULINAIRE PROVINCIALE
ROBERT LEE, JR., BAILLI PROVINCIAL HONORAIRE
La Chaîne des
Rôtisseurs was founded by
a group of so to say
“military chefs” returning
from the Crusades in 1248.
They wanted to preserve
the standards of the royal
table. The Chaîne was in
existence until the French
Revolution, when it was disbanded. It was inactive
until 1949 when several chefs and writers wished to
restore French cuisine to the high standards lost during
the two World Wars. This is now the 21 st century, and
there is again a world conflict, with various branches of
our military involved.
For the past several years, a corporate
chef of the Honolulu Chapter, Chef Rôtisseur
Ernesto Limcaco, has been teaching, advising,
and demonstrating the art of cuisine preparation
to various military chefs. The various branches
of the military, including the National Guard,
have yearly competitions throughout the United
States. Two chefs trained by Chef Limcaco
competed at the Army competitions and won
silver medals.
In addition to the specific branches of
the military, there are also chefs at the various
academies and military hospitals, with many
belonging to culinary associations, but none as
yet to the Chaîne. So it is time for history to
repeat itself, with the formation of a Chaîne
sub-organization of military chefs. This would
be the Chaîne Chefs Militaire Société, modeled
on the other Chaîne sub-organizations, such as
the Société Mondiale du Vin and the Brillat
Savarin. After I proposed the Société at the
National meeting in Boston, it was approved by
the National Council. The rules and regulations
are now under consideration by the National
Juris Prudence.
Anyone having military contacts,
please contact me or our Culinaire National,
John Nihoff at the New Jersey office.
HAWAII PACIFIC ISLANDS REGION NEWSLETTER FALL 2008
FRED HONDA, BAILLI PROVINCIAL HONORAIRE AND CHAIR, CONSEIL D’HONNEUR
In our last
newsletter, I
described the
establishment of the
Conseil d’Honneur
and its purpose,
which is to provide
an entity within the
Bailliage des Etats-
Unis that would
effectively
encourage the
ongoing
participation of
those members who have served the Chaîne des
Rôtisseurs with distinction as senior officers, and
who no longer hold active office.
The eligibility requires a confrère to have
served as a National or Regional Officer for an
effective tour of duty, and not to currently hold one
of the aforementioned offices. This individual must
be a member in good standing of the Chaîne des
Rôtisseurs for 10 consecutive years.
An amendment was accepted at the Chaîne
Board meeting in January 2008 at San Antonio,
whereby, recognition also be accorded to Baillis
WERNER BOETTNER, BAILLI, MAUI
I have been in
office exactly one
month as Bailli, so
don’t have much to
report. My first
event, at Bella
Cucina, was managed
by outgoing Maui
Bailli Chris Speere
all the way. On
September 6 th we
will have a sunset
sail to Japan with
sushi and other
Japanese goodies
prepared right on
board by Chef Clement Enomoto. And yes we will
have Sake too!!
who have served with distinction as Chapter Baillis
for more than 20 years with similar eligibility
criteria.
At our National Assemblage held in Boston in
June 2008, the following members were approved for
recognition to the Conseil d’Honneur, Class of 2008:
National/Regional Officers
• Zane Lubin, Chargé de Presse Provincial Far West
• Dr. Robert Lee Jr., Bailli Provincial Hawaii/Pacific
• Dr. Paul H. Weisberg, Chambellan Provincial Mid
Atlantic
Baillis (20 or more years)
• Dr. Richard Yadeau, Bailli Minneapolis (25 years 9
months)
• Jean M. Yadley, Bailli Tampa Sun Coast (22 years 6
months)
• Adi Kohler, Bailli Hawaii Island (22 years 3 months)
• Dr. Robert Lee Jr. was present at the National
Meeting and was officially recognized as a member
of the Conseil d’Honneur. It was my personal
pleasure to present Adi Kohler with the Conseil
d’Honneur award at our regional Assemblage in
September.
Our formal function, with induction, will be on
November 29 th at the 5 Palms Restaurant in the
Manikai Hotel in Kihei. This will be our 30 th year on
Maui celebration, and promises to be a grand affair.
Planning for future events is in hand for 2009.
DAVID GOCHROS, ECHANSON PROVINCIAL
Société Mondiale du Vin
A Night in
Burgundy
The Honolulu
Chapter of the
l’Ordre de
Mondiale kicked off
2008 with an event
at Kapiolani
Community College
in Honolulu on Feb.
21st. The event was
called “une Soirée en Bourgogne” and featured
fine wines from the Burgundy region paired
with matching dishes prepared by the Chefs
from KCC’s Culinary Program. The Dining
Room provided a spectacular back drop with
Diamond Head and distant ocean views. The
wines were top notch, starting with a 2004
Chablis Premier Cru Fourchaumes from
Domaine Laroche, followed by three Grand
Crus 2003 Bienvenues-Bâtard-Montrachet,
Paul Pernot, 1996 Clos de la Roche, Dominique
Laurent, and the 1990 Clos Vougeot from
Domaine Daniel Rion & Fils. Chef Sato and
his staff from KCC did a wonderful job
incorporating local ingredients such as Big
Island abalone, Island snapper, and Big Island
beef, into a classic French menu. Echanson
Provincial David Gochros moderated the dinner
with comments about the wines. Une soirée
formidable!
Société Mondial du Vin Induction
On the same night at KCC, and in full
regalia, the Chaîne Officers inducted 6 new
members into the Société Mondial du Vin
Mondiale. The Honolulu chapter now has 66
members, the Kaua‘i/ O‘ahu Chapter 34, the
Big Island 9, and Maui 3, making a total of 112
Mondiale members in the region. We hope to
build further on that number.
Young Sommelier Competition
The finals for the Pacific Isles Young
Sommelier Competition were held on April 7 th
at the Halekulani Hotel in Honolulu. After
making through the preliminary rounds, three
competitors vied for the title and the chance to
compete in the National Finals in Las Vegas.
This year’s winner was: Patrick Okubo of
Formaggio Wine Bar. The first runner up was
David Castleberry of the Mauna Lani Resort,
and 2nd runner up was Jason Castle, formerly
of Du Vin, now at Merriman’s on Maui. The
judges were Roberto Viernes, M.S. from
Southern W&S, Chuck Furuya, M.S. of Vino
and DK Restaurants, and Mark Shishido from
Alan Wong’s. The competitors all had a
positive experience, and they all plan on
competing again next year. The Halekulani
Hotel provided the facilities, and Kevin
Toyama, sommelier at the Halekulani,
volunteered his time doing all of the set-up for
the judging. We held an awards luncheon at the
Halekulani Hotel following the competition for
the competitors, judges, and regional officers of
the Chaine.
Mondiale National Convention and Young
Sommelier Nation Finals
The finals were held at the National
Convention on May 24 in Las Vegas. Kaua‘i/
O‘ahu Bailli Mark Monoscalco and Conseiller
Gastronomique Mirella Monoscalo, and
Echanson Provincial David Gochros were on
hand to root for Patrick Okubo. Patrick did a
great job, and received glowing reviews from
Fred Dame M.S., and received an Honorable
Mention. All three officers were awarded
ribbons from Echanson Dan Gulbronsen for
their hard work in the Chaine.
Coming up…
We are working on putting together a
special educational tasting event in November,
but we can’t announce any details until we
have confirmation.
We will also be working on presenting
an offering of some of the wines from the
Chaîne cellar. We have some wines leftover
from previous events which we will be selling
to raise funds for future wines for upcoming
events. More details to follow.
HAWAII PACIFIC ISLANDS REGION NEWSLETTER FALL 2008
GARRETT SAIKLEY, BAILLI, HONOLULU
As the year winds down,
we can look back at fun past
events: the Hawai‘i regional
Assemblage on the Big Island,
our “Truffle Court” dinner at
Le Bistro, the “Holiday Gala
Dinner Dance” at the Oahu
Country Club, a cruise on the
Oceania Regatta from Los
Angeles to Miami, the Société
Mondiale du Vin dinner with
grand cru Burgundy wines at
Kapiolani Community College,
a “One Night Cruise to
Nowhere” on the Pride of
Aloha, and the Jeunes Commis
contest and luncheon. One
highlight for me was awarding
scholarships to two KCC
culinary arts students from the
funds we raised this past year,
with a matching grant from the
national Chaîne Foundation. A
second highlight was learning
that our bailliage is now the
largest in the United States—we
must be doing something right!
The Honolulu bailliage
looks forward to some exciting
events:
September 12-13, 2008:
Hawai‘i Regional Assemblage,
hosted by our bailliage.
December 13, 2008: Our
Christmas Gala at Washington
Place.
March 15-27, 2009: A
Chaîne Gang cruise from
Honolulu to Hong Kong on the
Crystal Symphony.
The March 15 cruise will be nonstop,
twelve days of forced
relaxation on what has always
been rated as the world’s best
large cruise line. Events are
being planned while on the ship
as well as once we arrive in
Hong Kong.
And some good news!
Our new member, Maître
Hôtelier John Blanco, General
Manager of the Kahala Hotel and
Resort, is generously offering all
Chaîne members a Kahala
Epitome card. The Kahala
Epitome program offers a 10%
discount on Catering site rentals,
Spa Suites treatments, and CHI
membership. There is no charge
for the card. Please contact Ms.
Joy Umehira, Food and Beverage
Administration, tel. 739-8702, to
receive the card. Perhaps other
Chaîne-affiliated hotels and
restaurants, as well as other
establishments, will follow Mr.
Blanco’s lead.
And lastly, your hard
working volunteer officers are
always looking for a little extra
help in running our operation. If
you have computer or printing
savvy, or would like to assist in
planning and executing events,
please let us know. And if you
have any comments or
suggestions for future events,
don’t hesitate to email them to
me.
HAWAII PACIFIC ISLANDS REGION NEWSLETTER FALL 2008
JULIE’S CORNER BY JULIE HONDA, CHARGÉE DE PRESSE PROVINCIALE HONORAIRE
“UPSTAIRS
WELCOMES
HAWAIIAN
CHAÎNE
FRIENDS” was
boldly scripted
across the specially
printed menu
presented to Bailli
Provincial Larry
and Dame Anna
Lise Vogel and
Bailli Provincial
Honoraire Fred Honda and Chargée de Presse
Provinciale Honoraire Julie Honda on the night of
their arrival for the Grand Chapître 2008, held in
Boston’s InterContinental Hotel June 27 – July 1,
2008.
Boston Bailli Marshall Berenson and
his wife, Kathy, jumpstarted the event at one of
Cambridge’s favorite restaurants, Upstairs.
Chef Steven Brand personally prepared the
entire nine course gourmet dinner. The
Berensons were at Halekulani last October,
celebrating their 17 th wedding anniversary, and
Bailli Provincial Vogel hosted a party in their
honor at the newly opened Nobu’s at Waikiki.
As we dashed out of the Inter-Continental
Hotel’s lobby with Marshall Berenson for dinner, we
met part of the 15 member delegation from Hawaii that
included Bailli Provincial Honoraire Dr. Robert Lee,
Honolulu Bailli Garrett Saikley, Kauai/Oahu Bailli
Honoraire Bruce Liebert, Chargée de Presse Provinciale
Judith Kellogg who were preparing to depart for their
first night of dining experience.
Kauai/Oahu’s Bailli Mark Monalscalco and
Vice Conseiller Gastronomique Mirella arrived later
from Chicago Vice Echanson Maurice Nicholson and
his wife Kathryn arrived via New York where they
celebrated their second wedding anniversary.
Honolulu’s Vice Conseiller Gastronomique Robert
Carpenter arrived later in the evening.
Rounding up the group were Dames Lucille
Boston and Gina Schultz, two jetsetters who always go
the extra mile to be part of the Chaîne Chapître.
The Hawaii delegation tripled in number from
the last Boston Assemblage in July 1996, at which time,
both Carol Brooks and Julie Honda were officially
elevated to Kauai/Oahu Bailli and Chargée de Presse
Pronviciale, at the historical Faneuille Hall. Bailli
Provincial Fred Honda, Bailli Provincial Honorarie
Hans Strasser and Officier Claire Strasser witnessed the
impressive ceremony, far away from home.
This year, Dr. Robert Lee hand carried maile
leis for the majority of the male officers who were
attired in traditional formal Hawaiian wear, with
open collared dress shirts and green sashes (green to
reflect their roles as Baillis, past/present). Bailli
Saikley preferred to dress thoroughly “Tommy
Bahamas” in his Aloha shirt topped with a lauhala
hat and the legendary maile lei.
Dr. Lee also had beautiful Christina orchid
leis for newly inducted National Chancelier Sandra
Miller and Dame Elizabeth Brown, and maile leis
for outgoing Bailli Délégué Joe Caruso and
incoming Bailli Délégué George Brown. Mahalo to
Bob for his generous contribution of the maile and
Christina orchid leis.
One of our highlights in Boston was time
spent with former UH President Evan Dobelle and
his wife, Kit. Evan is now President of Westfield
State College, and is still a member of the Honolulu
chapter. The Dobelles picked us up and drove us to
Cambridge, as I had expressed a desire to visit
Harvard. He gave us a grand tour which included
walking into Harvard Yard, where the magnificent
Library towered over students studying. An
unexpected stop at MIT, where Kit led us to
experience the walk through the endless hallway.
Evan was a most insightful tour guide.
At the end of our Chaîne Conference in
Boston, we drove to the Catskill Mountains with the
Vogels to their beautifully restored country farm
house (built in 1845), with red barns will soon to be
converted into guest houses that keep the original
integrity. The landscaping is incredibly beautiful and
surreal, which is expected with Dame Vogel’s known
penchant for gardening and farming. As for Larry, he
is making use of this luxury to stop, smell and enjoy
the fragrances of Anna Lisa’s “garden,” comprising
30 acres of garden and meadow, and 40 acres of
woodland. Meanwhile, Kauai/Oahu’s Chevalier
Wallace and Ann Ching visited and the foursome
drove to the Cooperstown Baseball Hall of Fame
with the Ching’s young grandson. The Vogel’s
hospitality and generosity runneth over and over
again.
Chambellan Provincial Fred Hellekes and
Mira Hahn enjoyed a fabulous dream vacation in
Europe, beginning at one of the world’s most idyllic
locations, Lake Como, Italy, and stayed a stone’s
brother. From there, he and Mira drove through the
Alps past Seefeld, site of the Olympics, through St.
Moritz. Somewhere in the midst of all the majestic
snow and ice sculptures, they met Bailli Provincial
Honoraire Hans Strasser and Claire and played two
rounds of golf. The Strassers arrived back in
Honolulu in August.
I spoke with Bailli of Hawaii, Willie
Pirngruber, who is anticipating the arrival of the new
General Manager of the Hilton Waikoloa in the middle
of August, replacing Bailli Honoraire Dieter Seeger.
Seeger, who hosted our Regional Assemblage in
September 2007, now has relocated to Redding,
Washington, enjoying retirement.
Big Island’s Chaîne activities have been
temporarily curtailed, but Bailli Pirngruber will be
making an announcement shortly for an event at the
Fairmont’s premier Grill Room and a wine reception at
the Mixx Lounge in Kailua-Kona, planned by
Proprietor/ Vice Echanson Fernand Desilits. Fernand
and his wife, Joan, recently returned from their
Canadian vacation.
The Honolulu Chapter is delighted that Dame
Donna Bebber will become their Vice Chargée de
Presse. Donna, who covets an impressive list of clients,
the likes of Hawaiian Romance Festival Matt
Cattingub, specializes in local special events and
fundraising. She took a month off, partly business and
to refuel with good friend and mentor, Dame Caroline
Berry at her beach house outside of Tampa.
An event benefiting the Maui Community
College was spearheaded by Bailli Honoraire Mitch
Kysar, with support from Proprietor/Chef Patrick
Callarec’s Chez Paul at Olowalu. The nine course
menu billed as “Michelin Stars Tour de France,” was
inspired by his trip through Paris, Reims and Beaune,
dining at some of the world’s finest restaurants. Kysar
selected 6 wines, aged and ready to drink, to
accompany each meal. Kysar has been a collector of 3
star Michelin establishments, and to date, has collected
97 Michelin stars, 3 stars short of his 100 Michelin stars
lifetime goal. He amassed 27 Michelin stars in his most
recent 21 days tour. When I asked, “What next” his
answer simply, “Start Over”. Amazing!
Maui Bailli Honoraire Harold and Keiko
Hardcastle (former New York residents) returned
from New York with their daughter Essence after
their wining, dining and shopping marathon. They
were extremely pleased with their dinner at Alain
Ducasse Restaurant at the St. Regis, and at
Morimoto. Hardcastle met Morimoto who is
opening a restaurant at the Ilikai Hotel later this
year.
After Boston, Mark and Mirella Monoscalco
retuned to their usual summer in hometown,
Chicago, before heading off for one of Dan
Gulbronson’s Mondiale “wine escape” cruises, this
time to South Africa. While in Boston, Mark
commented “I can’t believe it, I am the senior Bailli
of our Hawaii/Pacific region”.
Kusuma Cooray was an enthusiastic first
time observer at the Annual Black Pool Dance
Festival. The eight days of World Championship
Latin and Ballroom Competition with her mentor,
dance- instructor, Christopher Bayot, were inspiring.
They flew to Manchester, England via Frankfurt for
an opportunity to be in the company of the world’s
best, and to be personally introduced to the Japanese
featured actor of the film, “Shall We Dance”.
Aloha Oe to Maître Hôtelier Janice Clapoff,
who touched many in her brief tenure as General
Manager of Halekulani. Her very special attention
to details in her management style and her approach
had an endearing appeal. Janis, with her teenage
twins Jayme and Jessie, returned to the West Coast
as General Manager of the Triple A Ojai Valley Inn
and Golf Course, located 30 miles from Santa
Barbara. Eight year veteran, Executive Assistant
Manager, Maître de Table Gerald Glennon, has been
officially announced as Halekulani’s General
Manager. Congratulations!
Domestically and Chaine-wise, I don’t
believe anyone can top our Chargée de Presse
Provinciale Judith Kellogg and Kauai/Oahu Bailli
Honoraire Bruce Liebert for traveling the distance in
less than a month, making Chaîne connections. After
Boston, they flew to Boulder to be with her entire
family, to scatter her late father’s ashes on his
favorite peak on their property, followed by driving
to Aspen, to visit with former Kauai/Oahu member
Barbi Benton and her husband George Gradow.
They flew home by way of Seattle, to visit Bruce’s
mother and sister’s family. They capped their Seattle
visit dining with newly inducted Bailli Délégué
George and Dame Elizabeth Brown at their favorite
restaurant, Cafe Juanita, enjoying a bottle of the first
vintage from the Brown’s own winery, Rockwell-
Brown Estasy 2006.
