The upcoming Regional Assemblage, Hula-La, hosted by the Honolulu Chapter, promises to be<br />
spectacular! The Friday, September 12, “Hula” will be a cocktail reception like you’ve never enjoyed before at<br />
the beautiful Outrigger Canoe Club! Cocktails, wonderful wines, a fabulous and extensive array of pupus (no<br />
need for dinner afterwards), sunset, green flash, Honolulu city lights, and even fireworks.<br />
For the Saturday, September 13, “LA” extravaganza, the STAGE (restaurant) is set! A red carpet gala!<br />

Anna Lise and I are looking forward with eager anticipation to returning to Hawaii. As I write<br />
this note, we are winding up a glorious vacation at our farm in New York State. It seems like only<br />
yesterday that a number of us were lucky enough to be in Boston in July, to celebrate another<br />
"Changing of the Guards." I had the pleasure at that time, on your behalf, to present a beautiful<br />
maile lei to our international President, Yam Atallah. We welcomed in Bailli Délégué George<br />
Brown, and said "mahalo" to Bailli Délégué Joe Caruso for his inspired leadership of our great<br />
organization. Last year, as you will remember, Joe honored us by attending and participating in<br />
our Big Island Assemblage. Great leadership is ever present throughout our region, too.<br />
I celebrate and thank all of our Hawaii Baillis, and their inspired and hard working<br />
officers, for all they have done to make our region so highly effective and internationally<br />
respected. You all have brought great honor and praise worthy distinction to our shores. All of us<br />
are in your debt.<br />
FRED HELLEKES, CHAMBELAN PROVINCIAL<br />
We have come a long way from our humble beginnings. It was on April 14, 1973 that<br />
14 members of the newly formed chapter of the Confrerie de la Chaîne <strong>des</strong> <strong>Rotisseurs</strong><br />
and its Bailli, Colonel Dutton had their first dinner at the Ala Moana Hotel with the<br />
unheard of tab of $22.50, a price that was worth mention on the evening news.<br />
Today, 265 plus members should feel privileged to belong to a society whose<br />
purpose is to promote a better understanding and greater appreciation of the art of fine<br />
dining. In this day and age when cooking has been simplified in more than one way, it<br />
is crucial not to lose sight of what fine dining and the pleasure of the table are all<br />
about.<br />
The planning and execution of a Chaîne event involves an extraordinary effort on the part of your officers<br />
and well as the host establishment. I invite every member to show your support and appreciation for their efforts<br />
by attending future functions whenever possible.<br />

Transitions, Treasured Memories, and Traditions<br />
I have one of the best jobs<br />
in the Chaîne, having the<br />
privilege of being the first<br />
to read about all the<br />
wonderful events<br />
happening in the Hawai‘i<br />
Pacific Islands Region.<br />
And the photos make me<br />
wish I could be at every<br />
one of those functions. The black-tie galas are<br />
always magnificent, with the Big Island adding a<br />
little local color with their “Christmas in<br />
Kealakekua.” Garrett Saikley’s “Truffle Court”<br />
established his own witty and fun-loving leadership<br />
style as Honolulu Bailli, presiding as bewigged<br />
judge. And then there is the warm personal touch<br />
with Bailli Chris Speere and his family cooking the<br />
Italian dinner that welcomed in new Bailli Werner<br />
Boettner. Bailli Mark Monoscalco’s special attention<br />
to fine wines and perfect pairings has consistently<br />
enhanced his many venues.<br />
Every chapter has been well represented over<br />
the past year in the Gastronome, and the Baillis’ reports<br />
here in the newsletter provide a good overview of all<br />
the great food, wine, and parties. I am fortunate to be<br />
working with excellent Vice Chargés de Presse in each<br />
chapter. Thank you to Donna Bebber (Honolulu),<br />
Michael Blaksteen (Hawai‘i Island), Robert Cartwright<br />
(Maui), and Christel Yount (Kauai/Oahu).<br />
Of special note is that two articles from the<br />
region were featured in the International Chaîne <strong>des</strong><br />
<strong>Rotisseurs</strong> Magazine: one on last year’s amazing Big<br />
Island Assemblage organized by Bailli Wilhelm<br />
Pirngruber and Vice Chargé de Presse Michael<br />
Blaksteen, and a feature on guitarist, Chevalier<br />
d’Honneur Carlos Barbosa-Lima of the Honolulu<br />
chapter. It is exhilarating to know that the outstanding<br />
events from our special Paradise can be appreciated by<br />
such a wide audience<br />

Hawaii/Pacific Jeune<br />
Commis competition<br />
held on April 12, at<br />
the Culinary Institute<br />
of the Pacific at<br />
Kapiolani<br />
Community College<br />
was a great success.<br />
This year, special help was provided by The US<br />
Army Culinary Arts Team Hawaii, supported by<br />
Staff Sergeant David Marcelli, Aide to the<br />
Commanding General of US Army Pacific, who<br />
served as Kitchen Floor Judge. Former regional<br />
Jeune Commis winner, Jarren Otake also assisted.<br />
We had seven talented contestants, but the winner<br />
turned out to be Sonny Acosta, who represented<br />
Hawai‘i for the second year in a row at the national<br />
competition. All the contestants’ achievements were<br />
celebrated at a special luncheon at the Outrigger<br />
Canoe Club following the competition.<br />

La Chaîne <strong>des</strong><br />
Rôtisseurs was founded by<br />
a group of so to say<br />
“military chefs” returning<br />
from the Crusa<strong>des</strong> in 1248.<br />
They wanted to preserve<br />
the standards of the royal<br />
table. The Chaîne was in<br />
existence until the French<br />
Revolution, when it was disbanded. It was inactive<br />
until 1949 when several chefs and writers wished to<br />
restore French cuisine to the high standards lost during<br />
the two World Wars. This is now the 21 st century, and<br />
there is again a world conflict, with various branches of<br />
our military involved.<br />
For the past several years, a corporate<br />
chef of the Honolulu Chapter, Chef Rôtisseur<br />
Ernesto Limcaco, has been teaching, advising,<br />
and demonstrating the art of cuisine preparation<br />
to various military chefs. The various branches<br />
of the military, including the National Guard,<br />
have yearly competitions throughout the United<br />
States. Two chefs trained by Chef Limcaco<br />
competed at the Army competitions and won<br />
silver medals.<br />
In addition to the specific branches of<br />
the military, there are also chefs at the various<br />
academies and military hospitals, with many<br />
belonging to culinary associations, but none as<br />
yet to the Chaîne. So it is time for history to<br />
repeat itself, with the formation of a Chaîne<br />
sub-organization of military chefs. This would<br />
be the Chaîne Chefs Militaire Société, modeled<br />
on the other Chaîne sub-organizations, such as<br />
the Société Mondiale du Vin and the Brillat<br />
Savarin. After I proposed the Société at the<br />
National meeting in Boston, it was approved by<br />
the National Council. The rules and regulations<br />
are now under consideration by the National<br />
Juris Prudence.<br />

which is to provide<br />
an entity within the<br />
Bailliage <strong>des</strong> Etats-<br />
Unis that would<br />
effectively<br />
encourage the<br />
ongoing<br />
participation of<br />
those members who have served the Chaîne <strong>des</strong><br />
Rôtisseurs with distinction as senior officers, and<br />
who no longer hold active office.<br />
The eligibility requires a confrère to have<br />
served as a National or Regional Officer for an<br />
effective tour of duty, and not to currently hold one<br />
of the aforementioned offices. This individual must<br />
be a member in good standing of the Chaîne <strong>des</strong><br />
Rôtisseurs for 10 consecutive years.<br />
An amendment was accepted at the Chaîne<br />
Board meeting in January <strong>2008</strong> at San Antonio,<br />
whereby, recognition also be accorded to Baillis<br />

criteria.<br />
At our National Assemblage held in Boston in<br />
June <strong>2008</strong>, the following members were approved for<br />

of the Conseil d’Honneur. It was my personal<br />
pleasure to present Adi Kohler with the Conseil<br />
d’Honneur award at our regional Assemblage in<br />
September.<br />
Our formal function, with induction, will be on<br />
November 29 th at the 5 Palms Restaurant in the<br />
Manikai Hotel in Kihei. This will be our 30 th year on<br />
Maui celebration, and promises to be a grand affair.<br />
Planning for future events is in hand for 2009.<br />

A Night in<br />
Burgundy<br />

Mondiale kicked off<br />
<strong>2008</strong> with an event<br />
at Kapiolani<br />
Community College<br />
in Honolulu on Feb.<br />
21st. The event was<br />
called “une Soirée en Bourgogne” and featured<br />
fine wines from the Burgundy region paired<br />
with matching dishes prepared by the Chefs<br />
from KCC’s Culinary Program. The Dining<br />
Room provided a spectacular back drop with<br />
Diamond Head and distant ocean views. The<br />
wines were top notch, starting with a 2004<br />
Chablis Premier Cru Fourchaumes from<br />
Domaine Laroche, followed by three Grand<br />
Crus 2003 Bienvenues-Bâtard-Montrachet,<br />
Paul Pernot, 1996 Clos de la Roche, Dominique<br />
Laurent, and the 1990 Clos Vougeot from<br />
Domaine Daniel Rion & Fils. Chef Sato and<br />
his staff from KCC did a wonderful job<br />
incorporating local ingredients such as Big<br />
Island abalone, Island snapper, and Big Island<br />
beef, into a classic French menu. Echanson<br />
Provincial David Gochros moderated the dinner<br />
with comments about the wines. Une soirée<br />
formidable!<br />
Société Mondial du Vin Induction<br />
On the same night at KCC, and in full<br />
regalia, the Chaîne Officers inducted 6 new<br />
members into the Société Mondial du Vin<br />
Mondiale. The Honolulu chapter now has 66<br />
members, the Kaua‘i/ O‘ahu Chapter 34, the<br />
Big Island 9, and Maui 3, making a total of 112<br />
Mondiale members in the region. We hope to<br />
build further on that number.<br />
Young Sommelier Competition<br />
The finals for the Pacific Isles Young<br />
Sommelier Competition were held on April 7 th<br />
at the Halekulani Hotel in Honolulu. After<br />
making through the preliminary rounds, three<br />
competitors vied for the title and the chance to<br />
compete in the National Finals in Las Vegas.<br />
This year’s winner was: Patrick Okubo of<br />
Formaggio Wine Bar. The first runner up was<br />
David Castleberry of the Mauna Lani Resort,<br />
and 2nd runner up was Jason Castle, formerly<br />
of Du Vin, now at Merriman’s on Maui. The<br />
judges were Roberto Viernes, M.S. from<br />
Southern W&S, Chuck Furuya, M.S. of Vino<br />
and DK Restaurants, and Mark Shishido from<br />
Alan Wong’s. The competitors all had a<br />
positive experience, and they all plan on<br />
competing again next year. The Halekulani<br />
Hotel provided the facilities, and Kevin<br />
Toyama, sommelier at the Halekulani,<br />
volunteered his time doing all of the set-up for<br />
the judging. We held an awards luncheon at the<br />
Halekulani Hotel following the competition for<br />
the competitors, judges, and regional officers of<br />
the <strong>Chaine</strong>.<br />
Mondiale National Convention and Young<br />
Sommelier Nation Finals<br />
The finals were held at the National<br />
Convention on May 24 in Las Vegas. Kaua‘i/<br />
O‘ahu Bailli Mark Monoscalco and Conseiller<br />
Gastronomique Mirella Monoscalo, and<br />
Echanson Provincial David Gochros were on<br />
hand to root for Patrick Okubo. Patrick did a<br />
great job, and received glowing reviews from<br />
Fred Dame M.S., and received an Honorable<br />
Mention. All three officers were awarded<br />
ribbons from Echanson Dan Gulbronsen for<br />
their hard work in the <strong>Chaine</strong>.<br />
Coming up…<br />
We are working on putting together a<br />
special educational tasting event in November,<br />
but we can’t announce any details until we<br />
have confirmation.<br />
We will also be working on presenting<br />
an offering of some of the wines from the<br />
Chaîne cellar. We have some wines leftover<br />
from previous events which we will be selling<br />
to raise funds for future wines for upcoming<br />
events. More details to follow.<br />

Vino Honolulu. 34 members and guests were<br />
present at our Société Mondiale du Vin<br />
educational event led by Master Sommelier<br />
Chuck Furuya and Vice Echanson Dr. Maurice<br />
Nicholson.<br />
• “A Golden Holiday Celebration,” Sunday, December<br />
9, 2007 at Halekulani Hotel. 72 members and<br />
guests celebrated the holiday season in high<br />
fashion, dining on the creative menu of Chef Daryl<br />
Fujita.<br />
• Jeunes Commis Competition Awards Luncheon,<br />
Saturday, April 12, <strong>2008</strong> at the Outrigger Canoe<br />
Club. 36 members and guests congratulated our<br />
young chef competitors.<br />
• Annual Meeting April 13, <strong>2008</strong> at 3660 on the Rise.<br />
65 members and guests were treated to an<br />
elaborate meal and wine pairing dinner prior to<br />
our annual business meeting.<br />
• Sunday, May 18, <strong>2008</strong> “Un Diner Extraordinaire,” at<br />
Elua. 32 members and guests were served one of<br />
the most creative menus in the long and illustrious<br />
history of the Kauai/Oahu Bailliage. Chefs<br />
Donato Loperfido and Philippe Padovani created a<br />
menu that could only be <strong>des</strong>cribed as<br />
“Extraordinaire”<br />

Our congratulations go to the two young<br />

Umeno of La Mer placed second in our regional<br />
competition.<br />
Our Young Sommelier Contestant Patrick<br />
Okubo of Formaggio Grill, Kailua won the regional<br />
competition and represented the Hawaii/Pacific Region<br />
in our National Competition in Las Vegas this past May.<br />

Le Bistro, the “Holiday Gala<br />
Dinner Dance” at the Oahu<br />
Country Club, a cruise on the<br />
Oceania Regatta from Los<br />
Angeles to Miami, the Société<br />
Mondiale du Vin dinner with<br />
grand cru Burgundy wines at<br />
Kapiolani Community College,<br />
a “One Night Cruise to<br />
Nowhere” on the Pride of<br />
Aloha, and the Jeunes Commis<br />
contest and luncheon. One<br />
highlight for me was awarding<br />
scholarships to two KCC<br />
culinary arts students from the<br />
funds we raised this past year,<br />
with a matching grant from the<br />
national Chaîne Foundation. A<br />
second highlight was learning<br />
that our bailliage is now the<br />
largest in the United States—we<br />
must be doing something right!<br />

twelve days of forced<br />
relaxation on what has always<br />
been rated as the world’s best<br />
large cruise line. Events are<br />
being planned while on the ship<br />
as well as once we arrive in<br />
Hong Kong.<br />

Boston Bailli Marshall Berenson and<br />
his wife, Kathy, jumpstarted the event at one of<br />
Cambridge’s favorite restaurants, Upstairs.<br />
Chef Steven Brand personally prepared the<br />
entire nine course gourmet dinner. The<br />
Berensons were at Halekulani last October,<br />
celebrating their 17 th wedding anniversary, and<br />
Bailli Provincial Vogel hosted a party in their<br />
honor at the newly opened Nobu’s at Waikiki.<br />
As we dashed out of the Inter-Continental<br />
Hotel’s lobby with Marshall Berenson for dinner, we<br />
met part of the 15 member delegation from Hawaii that<br />
included Bailli Provincial Honoraire Dr. Robert Lee,<br />
Honolulu Bailli Garrett Saikley, Kauai/Oahu Bailli<br />
Honoraire Bruce Liebert, Chargée de Presse Provinciale<br />
Judith Kellogg who were preparing to depart for their<br />
first night of dining experience.<br />
Kauai/Oahu’s Bailli Mark Monalscalco and<br />
Vice Conseiller Gastronomique Mirella arrived later<br />
from Chicago Vice Echanson Maurice Nicholson and<br />
his wife Kathryn arrived via New York where they<br />
celebrated their second wedding anniversary.<br />
Honolulu’s Vice Conseiller Gastronomique Robert<br />
Carpenter arrived later in the evening.<br />
Rounding up the group were Dames Lucille<br />
Boston and Gina Schultz, two jetsetters who always go<br />
the extra mile to be part of the Chaîne Chapître.<br />
The Hawaii delegation tripled in number from<br />
the last Boston Assemblage in July 1996, at which time,<br />
both Carol Brooks and Julie Honda were officially<br />

Provincial Fred Honda, Bailli Provincial Honorarie<br />
Hans Strasser and Officier Claire Strasser witnessed the<br />
impressive ceremony, far away from home.<br />
This year, Dr. Robert Lee hand carried maile<br />
leis for the majority of the male officers who were<br />
attired in traditional formal Hawaiian wear, with<br />
open collared dress shirts and green sashes (green to<br />
reflect their roles as Baillis, past/present). Bailli<br />
Saikley preferred to dress thoroughly “Tommy<br />
Bahamas” in his Aloha shirt topped with a lauhala<br />
hat and the legendary maile lei.<br />
Dr. Lee also had beautiful Christina orchid<br />
leis for newly inducted National Chancelier Sandra<br />
Miller and Dame Elizabeth Brown, and maile leis<br />
for outgoing Bailli Délégué Joe Caruso and<br />
incoming Bailli Délégué George Brown. Mahalo to<br />
Bob for his generous contribution of the maile and<br />
Christina orchid leis.<br />
One of our highlights in Boston was time<br />
spent with former UH President Evan Dobelle and<br />
his wife, Kit. Evan is now President of Westfield<br />
State College, and is still a member of the Honolulu<br />
chapter. The Dobelles picked us up and drove us to<br />
Cambridge, as I had expressed a <strong>des</strong>ire to visit<br />
Harvard. He gave us a grand tour which included<br />
walking into Harvard Yard, where the magnificent<br />
Library towered over students studying. An<br />
unexpected stop at MIT, where Kit led us to<br />
experience the walk through the endless hallway.<br />
Evan was a most insightful tour guide.<br />
At the end of our Chaîne Conference in<br />
Boston, we drove to the Catskill Mountains with the<br />
Vogels to their beautifully restored country farm<br />
house (built in 1845), with red barns will soon to be<br />
converted into guest houses that keep the original<br />
integrity. The landscaping is incredibly beautiful and<br />
surreal, which is expected with Dame Vogel’s known<br />
penchant for gardening and farming. As for Larry, he<br />
is making use of this luxury to stop, smell and enjoy<br />
the fragrances of Anna Lisa’s “garden,” comprising<br />
30 acres of garden and meadow, and 40 acres of<br />
woodland. Meanwhile, Kauai/Oahu’s Chevalier<br />
Wallace and Ann Ching visited and the foursome<br />
drove to the Cooperstown Baseball Hall of Fame<br />
with the Ching’s young grandson. The Vogel’s<br />
hospitality and generosity runneth over and over<br />
again.<br />
Chambellan Provincial Fred Hellekes and<br />
Mira Hahn enjoyed a fabulous dream vacation in<br />
Europe, beginning at one of the world’s most idyllic<br />
locations, Lake Como, Italy, and stayed a stone’s<br />

throw from George Clooney’s compound. After 30<br />
years, Fred had time to spend a holiday with his<br />
brother. From there, he and Mira drove through the<br />
Alps past Seefeld, site of the Olympics, through St.<br />
Moritz. Somewhere in the midst of all the majestic<br />
snow and ice sculptures, they met Bailli Provincial<br />
Honoraire Hans Strasser and Claire and played two<br />
rounds of golf. The Strassers arrived back in<br />
Honolulu in August.<br />
I spoke with Bailli of Hawaii, Willie<br />
Pirngruber, who is anticipating the arrival of the new<br />
General Manager of the Hilton Waikoloa in the middle<br />
of August, replacing Bailli Honoraire Dieter Seeger.<br />
Seeger, who hosted our Regional Assemblage in<br />
September 2007, now has relocated to Redding,<br />
Washington, enjoying retirement.<br />
Big Island’s Chaîne activities have been<br />
temporarily curtailed, but Bailli Pirngruber will be<br />
making an announcement shortly for an event at the<br />
Fairmont’s premier Grill Room and a wine reception at<br />
the Mixx Lounge in Kailua-Kona, planned by<br />
Proprietor/ Vice Echanson Fernand Desilits. Fernand<br />
and his wife, Joan, recently returned from their<br />
Canadian vacation.<br />
The Honolulu Chapter is delighted that Dame<br />
Donna Bebber will become their Vice Chargée de<br />
Presse. Donna, who covets an impressive list of clients,<br />
the likes of Hawaiian Romance Festival Matt<br />
Cattingub, specializes in local special events and<br />
fundraising. She took a month off, partly business and<br />
to refuel with good friend and mentor, Dame Caroline<br />
Berry at her beach house outside of Tampa.<br />
An event benefiting the Maui Community<br />
College was spearheaded by Bailli Honoraire Mitch<br />
Kysar, with support from Proprietor/Chef Patrick<br />
Callarec’s Chez Paul at Olowalu. The nine course<br />
menu billed as “Michelin Stars Tour de France,” was<br />
inspired by his trip through Paris, Reims and Beaune,<br />
dining at some of the world’s finest restaurants. Kysar<br />
selected 6 wines, aged and ready to drink, to<br />
accompany each meal. Kysar has been a collector of 3<br />
star Michelin establishments, and to date, has collected<br />
97 Michelin stars, 3 stars short of his 100 Michelin stars<br />
lifetime goal. He amassed 27 Michelin stars in his most<br />
recent 21 days tour. When I asked, “What next” his<br />
answer simply, “Start Over”. Amazing!<br />
Maui Bailli Honoraire Harold and Keiko<br />
Hardcastle (former New York residents) returned<br />
from New York with their daughter Essence after<br />
their wining, dining and shopping marathon. They<br />
were extremely pleased with their dinner at Alain<br />
Ducasse Restaurant at the St. Regis, and at<br />
Morimoto. Hardcastle met Morimoto who is<br />
opening a restaurant at the Ilikai Hotel later this<br />
year.<br />
After Boston, Mark and Mirella Monoscalco<br />
retuned to their usual summer in hometown,<br />
Chicago, before heading off for one of Dan<br />
Gulbronson’s Mondiale “wine escape” cruises, this<br />
time to South Africa. While in Boston, Mark<br />
commented “I can’t believe it, I am the senior Bailli<br />
of our Hawaii/Pacific region”.<br />
Kusuma Cooray was an enthusiastic first<br />
time observer at the Annual Black Pool Dance<br />
Festival. The eight days of World Championship<br />
Latin and Ballroom Competition with her mentor,<br />
dance- instructor, Christopher Bayot, were inspiring.<br />
They flew to Manchester, England via Frankfurt for<br />
an opportunity to be in the company of the world’s<br />
best, and to be personally introduced to the Japanese<br />
featured actor of the film, “Shall We Dance”.<br />
Aloha Oe to Maître Hôtelier Janice Clapoff,<br />
who touched many in her brief tenure as General<br />
Manager of Halekulani. Her very special attention<br />
to details in her management style and her approach<br />
had an endearing appeal. Janis, with her teenage<br />
twins Jayme and Jessie, returned to the West Coast<br />
as General Manager of the Triple A Ojai Valley Inn<br />
and Golf Course, located 30 miles from Santa<br />
Barbara. Eight year veteran, Executive Assistant<br />
Manager, Maître de Table Gerald Glennon, has been<br />
officially announced as Halekulani’s General<br />
Manager. Congratulations!<br />
Domestically and <strong>Chaine</strong>-wise, I don’t<br />
believe anyone can top our Chargée de Presse<br />
Provinciale Judith Kellogg and Kauai/Oahu Bailli<br />
Honoraire Bruce Liebert for traveling the distance in<br />
less than a month, making Chaîne connections. After<br />
Boston, they flew to Boulder to be with her entire<br />
family, to scatter her late father’s ashes on his<br />
favorite peak on their property, followed by driving<br />
to Aspen, to visit with former Kauai/Oahu member<br />
Barbi Benton and her husband George Gradow.<br />
They flew home by way of Seattle, to visit Bruce’s<br />
mother and sister’s family. They capped their Seattle<br />
visit dining with newly inducted Bailli Délégué<br />
George and Dame Elizabeth Brown at their favorite<br />
restaurant, Cafe Juanita, enjoying a bottle of the first<br />
vintage from the Brown’s own winery, Rockwell-<br />
Brown Estasy 2006.<br />
