The School of Travel Industry Management’s annual signature event,
Celebrate a Legacy in Tourism, exemplified another outstanding year
of community support for the School in its 46th anniversary. The gala
banquet held on April 5, 2012 at the Sheraton Waikīkī Hotel
Ballroom was attended by 620 visitor industry movers and shakers
who were treated to a gourmet feast and fabulous entertainment. This
year’s Legacy honorees are both distinguished TIM alumni, namely
Ernest Nishizaki (‘69), Executive Vice President of Kyo-ya Hotels &
Honorees Allan Lum and Ernest Nishizaki
Resorts and Allan Lum (‘73), General Manager of the Wai‘alae
Country Club. Special guests included Senator Daniel K. Inouye, Governors Neil Abercrombie,
George and Jean Ariyoshi, John and Lynne Waihee, Ben Cayetano and Event Chair
Vicky Cayetano; Representatives Robert and Joanna Herkes, Tom Brower, James Tokioka and
Angus McKelvey; Mayors Alan Arakawa and Mufi Hannemann; UH Board of Regents Chair
Eric Martinson and Chuck Y. Gee; and UH President Dr. M.R.C. Greenwood.
Senator Inouye emphasized the vital role that the TIM School plays
with its synergies of education, research, and partnership with industry
and community groups. He stated that the TIM School provides
homegrown leadership for the tourism industry, which is the backbone
of Hawai‘i’s economy. Because of this, the TIM School is the envy of
other destinations that rely on tourism. Senator Inouye cited the United
Nations World Tourism Organization TEDQUAL ranking of the TIM
School as one of the top two tourism and hospitality programs in the
nation and eighth worldwide.
Senator Daniel K. Inouye
President Greenwood further emphasized the importance of tourism by stating that ninety percent of
new jobs are in services, according to the U.S. Department of Labor. The TIM School is preparing the
future leaders of these industries through its degree and certificate programs. President Greenwood also
acknowledged the important partnership of the TIM School with the Hawai‘i Tourism Authority and
DBEDT in developing a visitor data portal that is cutting edge in data analytics.
Governor Abercrombie addresses the crowd
Governor Abercrombie pointed out that the aloha spirit is leading the way for a peaceful
world and how the TIM School is central to this legacy. With reference to this year’s
honorees, he said, “The achievements of Mr. Nishizaki and Mr. Lum have resulted in the
institution’s well-earned reputation as a world-class educational academy and producer of
future leaders in the tourism and travel management industry.” He stressed the importance of
the School as an independent unit so that it can continue to fulfill its mission which is central
to the State and the region in hosting the fastest growing tourism markets in the world.
Ernest Nishizaki was presented with the Legacy in Tourism Award for his
outstanding leadership in Hawai‘i’s travel industry for more than 40 years. He oversees
Kyo-ya properties, including the Moana Surfrider, A Westin Resort & Spa;
The Royal Hawaiian, A Luxury Collection Resort; Sheraton Waikīkī; Sheraton
Princess Kaiulani; and Sheraton Maui Resort & Spa. Along with being a driving
force behind the Waikīkī beach restoration project, Nishizaki also funded the
Kyo-ya Sustainable Coastal Tourism Fellowship Program within the UH Sea Grant
Center. It is a collaborative effort between the TIM School, the College of Social
Sciences, the Hawai‘inuiākea School of Hawaiian Knowledge, and the School of
Ocean and Earth Sciences. He is a loyal supporter of the TIM School, serving on its
Message from the Dean
Aloha! This year we celebrated a banner year of accomplishments with increasing enrollments, new
hires, new courses, and a record amount of financial assistance granted to students. This Fall, enrollments
in TIM increased by an remarkable 15 percent. In two years our freshman class and summer enrollments
have tripled. TIM is the 6th largest major on the UHM campus with 350 – 400 students. TIM also attracts the
largest number of foreign students on campus, or twenty percent of all international undergraduates at
UHM. Two out of three TIM students are Hawai‘i residents. Eighty undergraduate scholarships and five
graduate assistantships have been awarded for a total of $250,000.
Our curriculum is delivered by a healthy mix of 24 faculty, half full-time and half practitioners, enabling us to offer new
courses like revenue or resort management, as well as incorporating sufficient Ma noa gened requirements making it
possible to shorten time to graduation by an entire semester. Our recent appointments are featured in this newsletter.
Along with this new talent, TIM is able to assist in the design of the State’s online visitor Data Explorer. The School is also
hosting a TIM Analytics Portal (TIMAP) that will enable users to custom design visitor dashboards. Faculty are working on
two research projects with the Sea Grant Program, one in the Kyo-ya Fellows Program to develop Native Hawaiian indicators
and another to survey Hanauma Bay visitors. Projects in agri-tourism and health and wellness are being explored
with other colleges. As the industry moves toward sustainability, it is hoped that these efforts will assist town and gown.
For TIM’s 46th anniversary, our signature Celebrate a Legacy event honored for the first time our own alumnus Ernest
Nishizaki, featured in the lead article. We also gratefully received new endowments started by the TIM International, Inc.
alumni association and DFS Hawai‘i. Generous donations were also received from the Hastings Memorial Scholarship,
alumni and other donors. Ministerial and professional training programs were held for groups from China, Japan, Taiwan,
Korea and in Abu Dhabi, along with the 34th summer Executive Development in Tourism Institute. Altogether, external
funds of almost $800,000 were generated to support students and projects within the School.
With the turnaround in tourism growth in Hawai‘i and in the Asia Pacific Region, we are poised to increase our capacity to
accommodate the burgeoning demand for graduates with four-year degrees. Toward this end, we are expanding our
programs, seeking more overseas internships, and finding ways to increase access for qualified students. Indeed, the TIM
School at the University of Hawai‘i is the natural bridge between East and West in tourism, hospitality, and transportation
education, as well as professional training, for the fastest growing industry in the Asia Pacific Region.
TIM Students at APEC—the Experience of a Lifetime!
Fifty TIM students got a birds-eye
view of the Asia Pacific Economic
Council (APEC) CEO Summit at
the Sheraton Waikīkī on November
10-12, 2011. As volunteers, their
duties were registering and hosting 40
CEO delegations and the press, as
well as ushering, security, and
meetings assistance.
TIM graduate students Lorenn Swesey and Elissia Wahl fielded the question and answer
portion of the conference. Lorenn, who served as APEC intern under APEC Chair
Muriel Anderson of the Hawai‘i Tourism Authority, said that the most rewarding part of
this experience was “being in on every panel session, and learning an incredible amount
about world affairs and global trade.” Undergraduate student Jeremy Tomono remarked
that hearing speakers like President Barack Obama, Secretary of State Hillary
Clinton, and China’s President Hu Jintao, will always be remembered as a highlight of
his university career. Elissia added that it was fascinating to experience the latest
innovations in meetings technologies at the conference.
The TIM School also helped plan APEC Night, which featured an evening of educational displays,
food and cultural presentations held on November 3, 2011 at the Campus Center Ballroom. The
planning committee, co-chaired by Political Science and Economics seniors Kelly Park and
Jeremy Shao, were advised by Laura Gershuni and Juanita Liu. The four winners of the YouTube
video contest: “What does APEC mean to me as a UHM student” were announced. Graduate
students Sherilyn Wee and Iman Nasseri won first prize for
their video highlighting energy efficiency initiatives being
implemented on campus. About 400 attended this exciting event,
sponsored by the ASUH, Campus Center, UHERO, TIM School,
and Shidler College. Students in Gershuni’s class on Food and
World Cultures created colorful displays of the food, geography
Instructor Gershuni evaluates TIM student
displays for the 21 APEC countries
and customs of the 21 APEC countries, while the UHERO
interns presented displays on the economies. Honolulu Mayor Peter Carlisle noted, “I think
it’s great for UH students to be involved in APEC; it is a once-in-a generation event.”
On February 19-24, 2012, TIM undergraduates
Maria Todo and Hitomi Ozaki were selected as
interns for the APEC Learning Community
TIM Alumni Hotel Executives Discuss Sustainability Trends
L to R: Paul Yokota, Ren Hirose, Paul Tang, & Christina Gabriel
Four distinguished TIM alumni came back into the classroom as
speakers for the annual Ambassador Bill Lane, Jr. and Mrs. Jean
Lane Lecture Series on Sustainable Tourism on April 4, 2012.
Now in its 11th year, the theme for this year’s lecture was
“Hotel Trends with a Focus on a Sustainable Hawai‘i”.
Christina Gabriel (‘92), General Manager of Marriott’s
Waiohai Beach Club and Marriott’s Kaua‘i Lagoons, Kalanipuu
gave her presentation on timeshares, which make up 13 percent
of all rooms in Hawai‘i. Christina stated that timeshares are
valuable to Hawai‘i because they are resilient to fluctuations in
the economy and visitors typically stay longer than regular hotel
guests. Additionally, timeshare visitors are repeat visitors who
have a deeper sense of a connection to the local community. She
shared how her hotels provide cultural activities and enrichment
for their guests.
Ren Hirose (‘85), General Manager of the W Scottsdale in
Arizona, discussed branding and its connection to sustainability.
Ren said that in addition to marketing, the W brand focuses on
building a global footprint. He also stated that hotels are obligated
to give back and the W Scottsdale does this by using art and
music to develop a close connection with the community.
Further, he illustrated how community events at the W in Los
Angeles, which he previously managed,
attracted up to 1,000 people and launched
a number of celebrity careers.
Christina Gabriel and
Paul Tang field questions
from the audience
Paul Tang (‘70) is the Vice President and
Managing Director of the Hyatt Regency
Grand Cypress Hotel in Orlando, Florida
and chairman of Visit Orlando and the
Central Florida Hotel & Lodging
Association. He spoke about how
branding strategy can promote a
destination for a
sustainable future.
Using some of the
successful branding
strategies from
BMW, he drew
some analogies of
how best practices
in destination
Ren Hirose discusses customer loyalty programs
branding can be
applied in Hawai‘i’s. He also emphasized how visitor feedback
has been used to allocate resources to sustain Hawai‘i tourism.
Paul Yokota (‘79), President of FCH Enterprises, including
Zippy’s Restaurants, Napoleon’s Bakery, Food Solutions
International, and A Catered Experience, served as the emcee
for the event. He joined FCH after 30 years in the hotel
industry with Westin, Stouffer and Prince Hotels in locations on
the mainland, Oahu and the neighbor islands. Previous positions
include General Manager for multiple properties as well as
Senior Vice President and Chief Operating Officer for Prince
Resorts Hawai‘i. He currently serves as Chair of the TIM
School Advisory Board.
The speakers addressed an overflow audience with more than
150 students attending. The lecture concluded with a lively
question and answer period. TIM International, Inc. alumni
association sponsored the reception that followed. The program
was broadcast on
public television
and a DVD is available
from the TIM
School.
The Ambassador L.W. “Bill” Lane, Jr. and Mrs. Jean Lane
Lecture on Sustainable Tourism and the Environment
This lecture series was established in 2001 to address key issues on
sustainability in the tourism industry. It also extends the effort to
educate and raise awareness in the
Hawai‘i community of the importance of
sustainable tourism and how the concept is
being embraced across the globe. An additional
gift of $125,000 from the Bill Lane
Trust to support this endowment was
recently granted.
It Takes a Village (or an Industry) to Raise a TIM Graduate
Students give mock presentations to panelists
In Spring 2012 the School was filled with students and coaches for the first “O”
Assessment day designed to improve student communication and presentation skills.
The TIM Human Resource (HR) Management core course has been reformatted to
meet the UHM requirements as an orally-designated “O” course. Instructors are
veteran HR expert Marie Kumabe and Sarah Kalicki-Nakamura with broadcast
journalism education and training facilitation skills. Both have industry experience
as well. During the morning session the students engaged in content presentations,
behavior-based interviews, and simulated labor negotiations. During the afternoon
session, the students attended a seminar on how to improve presentation skills by
Pam Chambers, a professional coach and author of “Life is a Presentation.”
One of the key reasons the TIM School has
enjoyed so much success over the years has been its collaborative relationship with its
industry. Whenever we can partner to augment classroom learning with practical
guidance and experiences, it is a “win-win” situation for our students. Our industry
partners came through with tremendous expertise on “O” Day. Coaches for a hotel labor
negotiation simulation included Julie Walker, Director of HR at Hilton Hawaiian
Village; Marty Woodward, President of Woodward Labor Relations; Bill Chung,
President of People Profits; Jason Yamamoto, Internal Auditor/Labor at Hawaiian
Airlines; Cindy Sakai, Co-Owner of TH!NK Training; Pamai Cano, Assistant Director
of HR at Hyatt Kauai; and Laura Witter, Training Director at Hyatt Waikīkī.
Marty Woodward coaches the group on how to bargain
Student reaction was enthusiastic and appreciative. Li Shan Liu said, “Through this
workshop, we are exposed to inspiring information on how to unlock the freedom of speech. This workshop has made me realize
that no one is born to be a great presenter but everyone has the potential to become one. After the workshop, I concluded that
good presentation skill requires continuous practice of common sense, wisdom, and creativity.” Classmate Ryan Bautista added,
“I thought the workshop with Pam Chambers was amazing. I usually have bad
anxiety when in front of a group of people. The strategies on how to overcome
anxiety have helped me a lot.”
Bill Chung caucuses on negotiation strategies
After this semester’s “O” Day, Pamai Cano commented, “ My impression is that
the presentation skills of this class were much improved over last semester. It’s
funny how we learn as we go along and our impact on the students was clearly
evident. It was impressive how none of them referred to notes and while a few
might have had memory stumbles, it all comes with practice. Those groups that
practiced together were evident and had a stronger impact in their presentations.”
Students hone their negotiation skills
Jason Yamamoto debriefs the group
Edu-tourism is alive and well at the TIM School
Edu-tourism is one of the niche markets for Hawai‘i tourism and TIM School
offers a variety of programs here and abroad. Our signature summer program is
the Executive Development Institute for Tourism (EDIT) now in its 34th
year with several scholarships granted by the Pacific Asia Travel Association
(PATA) and Gloria Henderson. The eleven-day institute is designed to build
leadership proficiency and managerial skills to help professionals better adapt
and innovate in the ever changing tourism environment. The program prepares
leaders to develop strategic approaches to global destination marketing and
management, product development, information communications technology
and tourism and transportation policy. For many EDIT graduates, completion of
the program has meant promotions back at home.
Every year many groups of industry professionals, government officials, and
students study at the TIM School for short-term custom training. Whether it’s
developing a business, promoting higher quality tourism experiences, or
developing cultural understanding– these are all examples of how edutourism in
Hawai‘i brings new meaning to the phrase “learning by doing.”
Front row: Rachel Soma, Gloria Henderson, Juanita Liu,
Chris Lim, and Chuck Gee.
Second row: Mufi Hannemann and EDIT participants
For example, a five-day professional training program was arranged for 35
travel agents from the Tourism Bureau Taiwan. Group leader Liu Yazhen,
GM of Qiaoxin Travel Service, said that the objective was to cultivate the
global outlook of travel employees in Taiwan in anticipation of visa-free travel
for Taiwan citizens to the U.S. Group Coordinator Tiger Yang, GM of Zion
Tours, remarked that there is much to learn from Hawai‘i, a model island
destination, such as applying marketing strategies to attract Taiwan visitors to
the Neighbor Islands by catering to niche markets in ocean activities, recreation,
and eco-travel. Deputy leader Jennifer Wu, GM of Mark Travel Service, noted
Travel Agents from Taiwan
that “the group represented various competing companies in Taiwan, but the
genuine feeling of hospitality and the culture of sharing in Hawai‘i made us forget about the competition back home.”
Candy Cheng, Chair of the Taiwan Barrier-Free Travel Development Association and owner of Love Travel Co, specializes in
organizing tours for people with disabilities. She was impressed with how well Hawai‘i accommodates visitors with disabilities
and their kindness, and thus will be recommending Hawai‘i to her clients.
Last year an intensive 3-day program on tourism management for 55 CEOs from Yunnan University EMBA Program was held.
Professor Yao Jianwen, Vice Dean of the Business and Tourism Management Institute of Yunnan University, said that it ranks
19 among 256 universities in China and the TIM School is their first choice for the group’s learning experience abroad. They were
pleased with the courses, especially the differences between eastern and western approaches to
travel industry management.
This summer, the TIM School hosted 15 students from the University of the Ryukyus for a
two-week program to study tourism in Hawai‘i for the first time. This was a customized
program designed to provide students a unique opportunity to learn about the tourism industry
in Hawai‘i. The goal is to cultivate strong individuals who will contribute to Okinawan tourism
in the future. The students were accompanied by Professors Kaoruko Miyakuni,
Keiryu Uechi, and Yosuke Tsuji. The students were grouped into teams for supervised projects.
The Kariyushi Hotel Group, one of the largest hotel companies in Okinawa, has funded
this program for ten years.
The TIM School also provides ministerial training for the Abu Dhabi Tourism Authority
(ADTA) in Abu Dhabi for government officials and industry executives, now on its 6th cohort.
Professors Dexter Choy and Daniel Spencer teach courses on global tourism, transportation,
sustainable tourism planning and policy. Other courses include strategic marketing, visitor
attractions, product development, convention management, and more. The ADTA said that the
TIM School was chosen because it is “widely regarded as a pioneer in the field of integrating all
aspects of the tourism industry into a single study program,” and because the School is “one of
the world’s most respected institutions for hospitality and tourism management study.”
Duty Free Shoppers (DFS) Group Ltd. Endows Peter Fithian Scholarship
At a festive gathering held at the beautiful DFS Galleria
Waikīkī, the retailer donated US$50,000 to the TIM School to
mark its 50th anniversary in Hawai‘i. DFS Group Limited,
the world's largest luxury travel retailer, has 770 employees
and operates a number of stores at the Honolulu International
Airport and the Kahului International Airport, along with its
three-story Waikīkī location.
The DFS endowment to the TIM School was given in the name of Peter Fithian,
founder and owner of Greeters of Hawai‘i, who was instrumental in establishing the
first DFS (then Duty Free Shoppers) store at the Honolulu International Airport in
1962. DFS Co-founder Robert Miller said, “We are so pleased to be able to honor
Peter in this way and we thank him for all he has helped us with in Hawai‘i over the
UH Foundation President and CEO Donna Vuchinich,
DFS Co-Founder Robert Miller, Peter Fithian,
Juanita Liu and DFS Chairman and CEO Ed Brennan
years.” Governor Neil Abercrombie said: “We can say, probably without much of an argument from anybody, that this is the
single most successful private-public partnership of its kind anywhere in the history of the State.”
Fithian, who is originally from Boston, started working in the hospitality industry in 1955 as manager of the Kona Inn and later as
the Assistant Manager at the Hilton Hawaiian Village Hotel. In 1959, he founded the Kona Billfish Tournament, which helped
Kona become the big game fishing capital of the world. He also served as Chairman of the Hawai‘i Visitors Bureau and has been a
loyal supporter of the TIM School throughout the years.
Edwin M. Hastings Memorial Scholarships Awarded to 34 Students
This year’s Edwin M. Hastings Memorial Scholarship awards totaling $60,000 were awarded to 34 students. Last
year 27 students were awarded $52,000. Established in 2009, the merit-based scholarships support TIM students
who are Hawai‘i residents with a preference given to those who graduated from local high schools. The awardees
include qualified undergraduate and graduate students, including those from the Academies of Hospitality and
Tourism (AOHT) in the high schools.
Born in Brooklyn, the late Edwin “Ed” Hastings spent his entire career in the tourism industry, which began in
New York with World Cruises. When Conrad Hilton purchased the famous Waldorf Astoria, he promoted
Hastings to general manager. In 1955, Hastings moved to Hawai‘i to manage Matson’s hotels, but returned to
New York to rejoin Conrad Hilton when the Matson properties were sold to Sheraton in 1959. Eventually, Hastings returned to
Hawai‘i to manage the Hilton Hawaiian Village and then the regional operations of Hilton Hotels in the Pacific and the Far East.
He supervised the Hilton Hotel openings in Kona and Maui and was instrumental in developing the Japanese market by making
frequent visits to Japan to establish business relationships.
Hastings was honored posthumously as a travel industry pioneer at the TIM School’s annual Celebrate a Legacy in Tourism
Banquet in 2007 and inducted into the charter class of the Hawai‘i Hospitality Hall of Fame. Said Dean Juanita Liu, “This generous
support for our hard-working students during these economic times is very much appreciated. It reaffirms the commitment
from our community and the industry in supporting our efforts to prepare future professionals for the State’s largest industry.
We are truly grateful for the foresight and generosity of the Hastings family and their continued support of our students.”
This year’s awardees are listed on page 10. During the 2011-2012 academic year, the awardees were: Kimberly Agonoy, Jose
Aviles, Florante Baptista, Florelei Baris, Marla Ben-Dor, Chelsey-Mei Borge, Sierra Borge, Mary Duldulao, Elizabeth Eguchi,
In Memory of Bernice C. Loui & Morton Fox
Bernice C. Loui
Bernice Kun Jun Char Loui from Honolulu passed away in January 18, 2012 at the age of
104. She and her late husband, Leong Hop Loui, started Hawai‘i’s first tour
agency, International Travel Service, with parent companies Trade Wind
Tours, Trade Wind Transportation, and Hawaiian Cruises. She founded Travel
Women Hawai‘i and was chair of her family’s business Hawaiian Rent-All.
Her lack of opportunity to further her own education was the impetus for her
generous contributions to the University of Hawai‘i. In 1987 she established
the “Leong Hop and Bernice C. Loui Computer Laboratory” in the School
of Travel Industry Management in memory of her late husband. She was honored
with the TIM Distinguished Service Award.
In April the computer laboratory was rededicated with a remembrance ceremony with a Hawaiian blessing ceremony
conducted by Kahu Solomon Kekoa. It was attended by TIM faculty, students and alumni. Special guests included
Bernice’s son Gordon and wife Betty Loui and Dean Emeritus Chuck Gee.
Gordon and Betty Loui, Juanita Liu,
Kahu Solomon “Hotch” Kekoa, and Chuck Gee.
Dean Juanita Liu said that the Leong Hop and Bernice C. Loui Computer Lab
has been an invaluable resource for TIM students for over 25. The travel industry
has always been a leader in applying information technologies in reservations,
point of sales (POS), and security systems. The TIM School is being proactive in
informatics by utilizing the thousands of visitor data series for the visitor industry
through newly established data portals for the State and the School. Today’s
global tourism education requires knowledge of Information Communications
Technology (ICT) and social media. Faculty need state-of-the-art tools to teach
students to be proficient in analyzing data and creating dashboards and power
points. Many instructors use computer simulations in the classroom, which assist
in the understanding of strategic management, revenue management, as well as
risk and crisis management. Thanks to visionaries like Bernice Loui, we have
the ability to help students keep current in this age of technology.
Professor Emeritus Morton Fox
Dr. Morton Fox, born in Easton, MD, passed away on
October 22, 2011 at the age of 79. He is survived by wife
Giselle Fox and children. Professor Fox joined the TIM
School in the early 1980s and taught courses on food and
beverage management. He was an expert on food science
technology and was instrumental in the development of the
Meals Ready-to-Eat (MREs). He supervised the food sensory
and production laboratories and taught in the TIM School’s
professional development EDIT program, as well as seminars
in China, Hong Kong, Singapore, Nepal and Bangladesh,
Prior to his teaching career, Professor Fox served with distinction in the U.S.
Army and retired with the rank of Lieutenant Colonel after 24 years of service.
He received his bachelor and masters degrees in food service from the
University of Maryland and received his doctorate degree in chemical engineering
from the University of Karlsruhe in Germany. Upon retirement, Professor
Fox moved to Las Vegas, Nevada and hosted annual Hawaiian luaus to raise
scholarships for the University of Hawai‘i Alumni
Association. He enjoyed golf and was an accomplished
barbershop quartet singer. Dr. Fox will be fondly remembered
and we wish all the best to Giselle and family.
