The <strong>School</strong> <strong>of</strong> <strong>Travel</strong> <strong>Industry</strong> <strong>Management</strong>’s annual signature event,<br />

Celebrate a Legacy in Tourism, exemplified another outstanding year<br />

<strong>of</strong> community support for the <strong>School</strong> in its 46th anniversary. The gala<br />

banquet held on April 5, 2012 at the Sheraton Waikīkī Hotel<br />

Ballroom was attended by 620 visitor industry movers and shakers<br />

who were treated to a gourmet feast and fabulous entertainment. This<br />

year’s Legacy honorees are both distinguished TIM alumni, namely<br />

Ernest Nishizaki (‘69), Executive Vice President <strong>of</strong> Kyo-ya Hotels &<br />

Honorees Allan Lum and Ernest Nishizaki<br />

Resorts and Allan Lum (‘73), General Manager <strong>of</strong> the Wai‘alae<br />

Country Club. Special guests included Senator Daniel K. Inouye, Governors Neil Abercrombie,<br />

George and Jean Ariyoshi, John and Lynne Waihee, Ben Cayetano and Event Chair<br />

Vicky Cayetano; Representatives Robert and Joanna Herkes, Tom Brower, James Tokioka and<br />

Angus McKelvey; Mayors Alan Arakawa and Mufi Hannemann; UH Board <strong>of</strong> Regents Chair<br />

Eric Martinson and Chuck Y. Gee; and UH President Dr. M.R.C. Greenwood.<br />

Senator Inouye emphasized the vital role that the TIM <strong>School</strong> plays<br />

with its synergies <strong>of</strong> education, research, and partnership with industry<br />

and community groups. He stated that the TIM <strong>School</strong> provides<br />

homegrown leadership for the tourism industry, which is the backbone<br />

<strong>of</strong> Hawai‘i’s economy. Because <strong>of</strong> this, the TIM <strong>School</strong> is the envy <strong>of</strong><br />

other destinations that rely on tourism. Senator Inouye cited the United<br />

Nations World Tourism Organization TEDQUAL ranking <strong>of</strong> the TIM<br />

<strong>School</strong> as one <strong>of</strong> the top two tourism and hospitality programs in the<br />

nation and eighth worldwide.<br />

President Greenwood further emphasized the importance <strong>of</strong> tourism by stating that ninety percent <strong>of</strong><br />

new jobs are in services, according to the U.S. Department <strong>of</strong> Labor. The TIM <strong>School</strong> is preparing the<br />

future leaders <strong>of</strong> these industries through its degree and certificate programs. President Greenwood also<br />

acknowledged the important partnership <strong>of</strong> the TIM <strong>School</strong> with the Hawai‘i Tourism Authority and<br />

DBEDT in developing a visitor data portal that is cutting edge in data analytics.<br />

Governor Abercrombie addresses the crowd<br />

Governor Abercrombie pointed out that the aloha spirit is leading the way for a peaceful<br />

world and how the TIM <strong>School</strong> is central to this legacy. With reference to this year’s<br />

honorees, he said, “The achievements <strong>of</strong> Mr. Nishizaki and Mr. Lum have resulted in the<br />

institution’s well-earned reputation as a world-class educational academy and producer <strong>of</strong><br />

future leaders in the tourism and travel management industry.” He stressed the importance <strong>of</strong><br />

the <strong>School</strong> as an independent unit so that it can continue to fulfill its mission which is central<br />

to the State and the region in hosting the fastest growing tourism markets in the world.<br />

Ernest Nishizaki was presented with the Legacy in Tourism Award for his<br />

outstanding leadership in Hawai‘i’s travel industry for more than 40 years. He oversees<br />

Kyo-ya properties, including the Moana Surfrider, A Westin Resort & Spa;<br />

The Royal Hawaiian, A Luxury Collection Resort; Sheraton Waikīkī; Sheraton<br />

Princess Kaiulani; and Sheraton Maui Resort & Spa. Along with being a driving<br />

force behind the Waikīkī beach restoration project, Nishizaki also funded the<br />

Kyo-ya Sustainable Coastal Tourism Fellowship Program within the UH Sea Grant<br />

Center. It is a collaborative effort between the TIM <strong>School</strong>, the College <strong>of</strong> Social<br />

Sciences, the Hawai‘inuiākea <strong>School</strong> <strong>of</strong> Hawaiian Knowledge, and the <strong>School</strong> <strong>of</strong><br />

Ocean and Earth Sciences. He is a loyal supporter <strong>of</strong> the TIM <strong>School</strong>, serving on its<br />

Advisory Board and has mentored many graduates in the industry.<br />

TIM Hall <strong>of</strong> Honor<br />

Awardee Allan Lum<br />

Allan Lum was selected by his peers, namely directors <strong>of</strong> the TIM International Alumni Association Board,<br />

to be inducted in the TIM Hall <strong>of</strong> Honor for his outstanding record <strong>of</strong> leadership and support <strong>of</strong> the TIM<br />

<strong>School</strong> throughout the years. Lum has served as General Manager <strong>of</strong> the Wai‘alae Country Club for over 30<br />

years. Wai‘alae Country Club is recognized as one <strong>of</strong> the finest clubs in the country and under Lum’s<br />

leadership has hosted numerous high-pr<strong>of</strong>ile golf tournaments including the prestigious Sony Open <strong>of</strong><br />

Hawai‘i. In fact, Michelle Wie, daughter <strong>of</strong> former TIM Pr<strong>of</strong>essor Byung-Wook Wie, got her start here to<br />

become the youngest woman to compete in the Sony Open at the 2004 tournament.<br />

To add to the evening’s success, TIM alumni association president Audrey<br />

Higuchi presented Dean Juanita Liu with a $17,500 check to kick <strong>of</strong>f the<br />

TIM International Alumni Association Scholarship Endowment Fund.<br />

Additional donations from individuals, as well as the Singapore and Hong Kong alumni who<br />

held fundraising events, subsequently raised the total to $25,000, well on the way towards the<br />

goal <strong>of</strong> $35,000 to fund the endowment.<br />

Hawaiian Host chocolates and Maui Gold pineapples. As we celebrate another<br />

successful event that raised more than $135,000 for student scholarships, special<br />

acknowledgements go to Noel Trainor, Ted Sakai, Lee-Ann Choy and<br />

Deborah Fitzgerald. On behalf <strong>of</strong> the TIM <strong>School</strong>, we would like to extend our<br />

Message from the Dean<br />

Aloha! This year we celebrated a banner year <strong>of</strong> accomplishments with increasing enrollments, new<br />

hires, new courses, and a record amount <strong>of</strong> financial assistance granted to students. This Fall, enrollments<br />

in TIM increased by an remarkable 15 percent. In two years our freshman class and summer enrollments<br />

have tripled. TIM is the 6th largest major on the UHM campus with 350 – 400 students. TIM also attracts the<br />

largest number <strong>of</strong> foreign students on campus, or twenty percent <strong>of</strong> all international undergraduates at<br />

UHM. Two out <strong>of</strong> three TIM students are Hawai‘i residents. Eighty undergraduate scholarships and five<br />

graduate assistantships have been awarded for a total <strong>of</strong> $250,000.<br />

Our curriculum is delivered by a healthy mix <strong>of</strong> 24 faculty, half full-time and half practitioners, enabling us to <strong>of</strong>fer new<br />

courses like revenue or resort management, as well as incorporating sufficient Ma noa gened requirements making it<br />

possible to shorten time to graduation by an entire semester. Our recent appointments are featured in this newsletter.<br />

Along with this new talent, TIM is able to assist in the design <strong>of</strong> the State’s online visitor Data Explorer. The <strong>School</strong> is also<br />

hosting a TIM Analytics Portal (TIMAP) that will enable users to custom design visitor dashboards. Faculty are working on<br />

two research projects with the Sea Grant Program, one in the Kyo-ya Fellows Program to develop Native Hawaiian indicators<br />

and another to survey Hanauma Bay visitors. Projects in agri-tourism and health and wellness are being explored<br />

with other colleges. As the industry moves toward sustainability, it is hoped that these efforts will assist town and gown.<br />

For TIM’s 46th anniversary, our signature Celebrate a Legacy event honored for the first time our own alumnus Ernest<br />

Nishizaki, featured in the lead article. We also gratefully received new endowments started by the TIM International, Inc.<br />

alumni association and DFS Hawai‘i. Generous donations were also received from the Hastings Memorial Scholarship,<br />

alumni and other donors. Ministerial and pr<strong>of</strong>essional training programs were held for groups from China, Japan, Taiwan,<br />

Korea and in Abu Dhabi, along with the 34th summer Executive Development in Tourism Institute. Altogether, external<br />

funds <strong>of</strong> almost $800,000 were generated to support students and projects within the <strong>School</strong>.<br />

With the turnaround in tourism growth in Hawai‘i and in the Asia Pacific Region, we are poised to increase our capacity to<br />

accommodate the burgeoning demand for graduates with four-year degrees. Toward this end, we are expanding our<br />

programs, seeking more overseas internships, and finding ways to increase access for qualified students. Indeed, the TIM<br />

<strong>School</strong> at the University <strong>of</strong> Hawai‘i is the natural bridge between East and West in tourism, hospitality, and transportation<br />

education, as well as pr<strong>of</strong>essional training, for the fastest growing industry in the Asia Pacific Region.<br />

TIM Students at APEC—the Experience <strong>of</strong> a Lifetime!<br />

Fifty TIM students got a birds-eye<br />

view <strong>of</strong> the Asia Pacific Economic<br />

Council (APEC) CEO Summit at<br />

the Sheraton Waikīkī on November<br />

10-12, 2011. As volunteers, their<br />

duties were registering and hosting 40<br />

CEO delegations and the press, as<br />

well as ushering, security, and<br />

meetings assistance.<br />

TIM graduate students Lorenn Swesey and Elissia Wahl fielded the question and answer<br />

portion <strong>of</strong> the conference. Lorenn, who served as APEC intern under APEC Chair<br />

Muriel Anderson <strong>of</strong> the Hawai‘i Tourism Authority, said that the most rewarding part <strong>of</strong><br />

this experience was “being in on every panel session, and learning an incredible amount<br />

about world affairs and global trade.” Undergraduate student Jeremy Tomono remarked<br />

that hearing speakers like President Barack Obama, Secretary <strong>of</strong> State Hillary<br />

Clinton, and China’s President Hu Jintao, will always be remembered as a highlight <strong>of</strong><br />

his university career. Elissia added that it was fascinating to experience the latest<br />

innovations in meetings technologies at the conference.<br />

The TIM <strong>School</strong> also helped plan APEC Night, which featured an evening <strong>of</strong> educational displays,<br />

food and cultural presentations held on November 3, 2011 at the Campus Center Ballroom. The<br />

planning committee, co-chaired by Political Science and Economics seniors Kelly Park and<br />

Jeremy Shao, were advised by Laura Gershuni and Juanita Liu. The four winners <strong>of</strong> the YouTube<br />

video contest: “What does APEC mean to me as a UHM student” were announced. Graduate<br />

students Sherilyn Wee and Iman Nasseri won first prize for<br />

their video highlighting energy efficiency initiatives being<br />

implemented on campus. About 400 attended this exciting event,<br />

sponsored by the ASUH, Campus Center, UHERO, TIM <strong>School</strong>,<br />

and Shidler College. Students in Gershuni’s class on Food and<br />

World Cultures created colorful displays <strong>of</strong> the food, geography<br />

and customs <strong>of</strong> the 21 APEC countries, while the UHERO<br />

interns presented displays on the economies. Honolulu Mayor Peter Carlisle noted, “I think<br />

it’s great for UH students to be involved in APEC; it is a once-in-a generation event.”<br />

TIM Alumni Hotel Executives Discuss Sustainability Trends<br />

Four distinguished TIM alumni came back into the classroom as<br />

speakers for the annual Ambassador Bill Lane, Jr. and Mrs. Jean<br />

Lane Lecture Series on Sustainable Tourism on April 4, 2012.<br />

Now in its 11th year, the theme for this year’s lecture was<br />

“Hotel Trends with a Focus on a Sustainable Hawai‘i”.<br />

Christina Gabriel (‘92), General Manager <strong>of</strong> Marriott’s<br />

Waiohai Beach Club and Marriott’s Kaua‘i Lagoons, Kalanipuu<br />

gave her presentation on timeshares, which make up 13 percent<br />

<strong>of</strong> all rooms in Hawai‘i. Christina stated that timeshares are<br />

valuable to Hawai‘i because they are resilient to fluctuations in<br />

the economy and visitors typically stay longer than regular hotel<br />

guests. Additionally, timeshare visitors are repeat visitors who<br />

have a deeper sense <strong>of</strong> a connection to the local community. She<br />

shared how her hotels provide cultural activities and enrichment<br />

for their guests.<br />

Ren Hirose (‘85), General Manager <strong>of</strong> the W Scottsdale in<br />

Arizona, discussed branding and its connection to sustainability.<br />

Ren said that in addition to marketing, the W brand focuses on<br />

building a global footprint. He also stated that hotels are obligated<br />

to give back and the W Scottsdale does this by using art and<br />

music to develop a close connection with the community.<br />

Further, he illustrated how community events at the W in Los<br />

Angeles, which he previously managed,<br />

attracted up to 1,000 people and launched<br />

a number <strong>of</strong> celebrity careers.<br />

has been used to allocate resources to sustain Hawai‘i tourism.<br />

Paul Yokota (‘79), President <strong>of</strong> FCH Enterprises, including<br />

Zippy’s Restaurants, Napoleon’s Bakery, Food Solutions<br />

International, and A Catered Experience, served as the emcee<br />

for the event. He joined FCH after 30 years in the hotel<br />

industry with Westin, Stouffer and Prince Hotels in locations on<br />

the mainland, Oahu and the neighbor islands. Previous positions<br />

include General Manager for multiple properties as well as<br />

Senior Vice President and Chief Operating Officer for Prince<br />

Resorts Hawai‘i. He currently serves as Chair <strong>of</strong> the TIM<br />

<strong>School</strong> Advisory Board.<br />

The speakers addressed an overflow audience with more than<br />

150 students attending. The lecture concluded with a lively<br />

question and answer period. TIM International, Inc. alumni<br />

The Ambassador L.W. “Bill” Lane, Jr. and Mrs. Jean Lane<br />

Lecture on Sustainable Tourism and the Environment<br />

This lecture series was established in 2001 to address key issues on<br />

sustainability in the tourism industry. It also extends the effort to<br />

educate and raise awareness in the<br />

Hawai‘i community <strong>of</strong> the importance <strong>of</strong><br />

sustainable tourism and how the concept is<br />

being embraced across the globe. An additional<br />

gift <strong>of</strong> $125,000 from the Bill Lane<br />

Trust to support this endowment was<br />

recently granted.<br />

It Takes a Village (or an <strong>Industry</strong>) to Raise a TIM Graduate<br />

Students give mock presentations to panelists<br />

In Spring 2012 the <strong>School</strong> was filled with students and coaches for the first “O”<br />

Assessment day designed to improve student communication and presentation skills.<br />

The TIM Human Resource (HR) <strong>Management</strong> core course has been reformatted to<br />

meet the UHM requirements as an orally-designated “O” course. Instructors are<br />

veteran HR expert Marie Kumabe and Sarah Kalicki-Nakamura with broadcast<br />

journalism education and training facilitation skills. Both have industry experience<br />

as well. During the morning session the students engaged in content presentations,<br />

behavior-based interviews, and simulated labor negotiations. During the afternoon<br />

session, the students attended a seminar on how to improve presentation skills by<br />

Pam Chambers, a pr<strong>of</strong>essional coach and author <strong>of</strong> “Life is a Presentation.”<br />

One <strong>of</strong> the key reasons the TIM <strong>School</strong> has<br />

enjoyed so much success over the years has been its collaborative relationship with its<br />

industry. Whenever we can partner to augment classroom learning with practical<br />

guidance and experiences, it is a “win-win” situation for our students. Our industry<br />

partners came through with tremendous expertise on “O” Day. Coaches for a hotel labor<br />

Student reaction was enthusiastic and appreciative. Li Shan Liu said, “Through this<br />

workshop, we are exposed to inspiring information on how to unlock the freedom <strong>of</strong> speech. This workshop has made me realize<br />

that no one is born to be a great presenter but everyone has the potential to become one. After the workshop, I concluded that<br />

good presentation skill requires continuous practice <strong>of</strong> common sense, wisdom, and creativity.” Classmate Ryan Bautista added,<br />

“I thought the workshop with Pam Chambers was amazing. I usually have bad<br />

anxiety when in front <strong>of</strong> a group <strong>of</strong> people. The strategies on how to overcome<br />

anxiety have helped me a lot.”<br />

the presentation skills <strong>of</strong> this class were much improved over last semester. It’s<br />

funny how we learn as we go along and our impact on the students was clearly<br />

might have had memory stumbles, it all comes with practice. Those groups that<br />

practiced together were evident and had a stronger impact in their presentations.”<br />

17 th Annual Nā Kukui Netlinks Connects Students with <strong>Industry</strong><br />

The TIM <strong>School</strong>’s annual networking event, Nā Kukui<br />

Netlinks, was held at The Pacific Club on April 12, 2012<br />

with 150 students and industry leaders attending. Nā Kukui<br />

allows students the opportunity to connect with a wide<br />

variety <strong>of</strong> pr<strong>of</strong>essionals in the travel industry through a<br />

speed-networking format.<br />

Students taking the Events Planning and Marketing course<br />

organized and planned the event. The students formed<br />

committees for venue, program, invitations, media, registration,<br />

and decorations. This year’s co-chairs, Cara Nonaka<br />

and Elena Chen, did an excellent job <strong>of</strong> directing their<br />

classmates for a successful evening.<br />

The program included the announcement <strong>of</strong> this year’s<br />

winners <strong>of</strong> the coveted outstanding students and teaching<br />

Visiting Scholars from China<br />

The TIM school was honored to host two visiting associate pr<strong>of</strong>essors from China this past<br />

academic year. Associate Pr<strong>of</strong>essor Defang (Alice) Zhao from the Shanghai Institute <strong>of</strong><br />

Tourism, Shanghai Normal University and Dr. Zhiyong Fan from the Economics and<br />

<strong>Management</strong> <strong>School</strong> at Wuhan University, Hubei, attended classes, researched materials in the<br />

UH libraries, participated in the <strong>School</strong>’s events, and collaborated on research with TIM faculty<br />

on topics such as tourists’ perception <strong>of</strong> inter-cultural service encounters, American tourists’<br />

perception <strong>of</strong> China tourism, and the management <strong>of</strong> public tourism services.<br />

Pr<strong>of</strong>essor Zhao said that her experiences at the UH broadened her vision <strong>of</strong> research and<br />

enhanced her knowledge <strong>of</strong> tourism management. In addition, she learned various teaching<br />

methods, including encouraging students’ classroom participation, organizing class activities,<br />

and evaluating student performance.<br />

Dr. Fan teaches courses in tourism management and administration, including Administration <strong>of</strong> <strong>Travel</strong> Agencies, Tourism<br />

Policies and Regulations for undergraduates and Tourism Planning at the graduate level at Wuhan University. During the year, he<br />

developed a new course on tourism administration and attended the International Academy <strong>of</strong> Business and Public Administration<br />

Disciplines (IABPAD) Conference in Memphis, Tennessee.<br />

The TIM <strong>School</strong> is currently hosting visiting colleague, Dr. Li Xing-ming, Associate Pr<strong>of</strong>essor and<br />

Director <strong>of</strong> the Tourism Department at the <strong>School</strong> <strong>of</strong> Urban and Environmental Science at Hua<br />

Zhong Normal University in Wuhan, Hubei Province, China. He will study culture and tourism<br />

landscape design. He has published eleven articles in tourism culture studies and several books<br />

including Introduction to Tourism Culture, The Comparative Study <strong>of</strong> Regional Culture<br />

Development in Central China. His dissertation was entitled: A Study on the Cultural Ecological<br />

Theory for Tourism Planning and its Application. His year <strong>of</strong> study with the TIM <strong>School</strong> is<br />

Edu-tourism is alive and well at the TIM <strong>School</strong><br />

Edu-tourism is one <strong>of</strong> the niche markets for Hawai‘i tourism and TIM <strong>School</strong><br />

<strong>of</strong>fers a variety <strong>of</strong> programs here and abroad. Our signature summer program is<br />

the Executive Development Institute for Tourism (EDIT) now in its 34th<br />

year with several scholarships granted by the Pacific Asia <strong>Travel</strong> Association<br />

(PATA) and Gloria Henderson. The eleven-day institute is designed to build<br />

leadership pr<strong>of</strong>iciency and managerial skills to help pr<strong>of</strong>essionals better adapt<br />

and innovate in the ever changing tourism environment. The program prepares<br />

leaders to develop strategic approaches to global destination marketing and<br />

management, product development, information communications technology<br />

and tourism and transportation policy. For many EDIT graduates, completion <strong>of</strong><br />

the program has meant promotions back at home.<br />

Every year many groups <strong>of</strong> industry pr<strong>of</strong>essionals, government <strong>of</strong>ficials, and<br />

students study at the TIM <strong>School</strong> for short-term custom training. Whether it’s<br />

developing a business, promoting higher quality tourism experiences, or<br />

developing cultural understanding– these are all examples <strong>of</strong> how edutourism in<br />

Hawai‘i brings new meaning to the phrase “learning by doing.”<br />

For example, a five-day pr<strong>of</strong>essional training program was arranged for 35<br />

travel agents from the Tourism Bureau Taiwan. Group leader Liu Yazhen,<br />

GM <strong>of</strong> Qiaoxin <strong>Travel</strong> Service, said that the objective was to cultivate the<br />

global outlook <strong>of</strong> travel employees in Taiwan in anticipation <strong>of</strong> visa-free travel<br />

for Taiwan citizens to the U.S. Group Coordinator Tiger Yang, GM <strong>of</strong> Zion<br />

Tours, remarked that there is much to learn from Hawai‘i, a model island<br />

destination, such as applying marketing strategies to attract Taiwan visitors to<br />

the Neighbor Islands by catering to niche markets in ocean activities, recreation,<br />

and eco-travel. Deputy leader Jennifer Wu, GM <strong>of</strong> Mark <strong>Travel</strong> Service, noted<br />

<strong>Travel</strong> Agents from Taiwan<br />

that “the group represented various competing companies in Taiwan, but the<br />

genuine feeling <strong>of</strong> hospitality and the culture <strong>of</strong> sharing in Hawai‘i made us forget about the competition back home.”<br />

Candy Cheng, Chair <strong>of</strong> the Taiwan Barrier-Free <strong>Travel</strong> Development Association and owner <strong>of</strong> Love <strong>Travel</strong> Co, specializes in<br />

organizing tours for people with disabilities. She was impressed with how well Hawai‘i accommodates visitors with disabilities<br />

and their kindness, and thus will be recommending Hawai‘i to her clients.<br />

Last year an intensive 3-day program on tourism management for 55 CEOs from Yunnan University EMBA Program was held.<br />

Pr<strong>of</strong>essor Yao Jianwen, Vice Dean <strong>of</strong> the Business and Tourism <strong>Management</strong> Institute <strong>of</strong> Yunnan University, said that it ranks<br />

19 among 256 universities in China and the TIM <strong>School</strong> is their first choice for the group’s learning experience abroad. They were<br />

pleased with the courses, especially the differences between eastern and western approaches to<br />

travel industry management.<br />

This summer, the TIM <strong>School</strong> hosted 15 students from the University <strong>of</strong> the Ryukyus for a<br />

two-week program to study tourism in Hawai‘i for the first time. This was a customized<br />

program designed to provide students a unique opportunity to learn about the tourism industry<br />

in Hawai‘i. The goal is to cultivate strong individuals who will contribute to Okinawan tourism<br />

in the future. The students were accompanied by Pr<strong>of</strong>essors Kaoruko Miyakuni,<br />

Keiryu Uechi, and Yosuke Tsuji. The students were grouped into teams for supervised projects.<br />

The Kariyushi Hotel Group, one <strong>of</strong> the largest hotel companies in Okinawa, has funded<br />

this program for ten years.<br />

The TIM <strong>School</strong> also provides ministerial training for the Abu Dhabi Tourism Authority<br />

(ADTA) in Abu Dhabi for government <strong>of</strong>ficials and industry executives, now on its 6th cohort.<br />

Pr<strong>of</strong>essors Dexter Choy and Daniel Spencer teach courses on global tourism, transportation,<br />

sustainable tourism planning and policy. Other courses include strategic marketing, visitor<br />

attractions, product development, convention management, and more. The ADTA said that the<br />

TIM <strong>School</strong> was chosen because it is “widely regarded as a pioneer in the field <strong>of</strong> integrating all<br />

aspects <strong>of</strong> the tourism industry into a single study program,” and because the <strong>School</strong> is “one <strong>of</strong><br />

the world’s most respected institutions for hospitality and tourism management study.”<br />

Duty Free Shoppers (DFS) Group Ltd. Endows Peter Fithian Scholarship<br />

At a festive gathering held at the beautiful DFS Galleria<br />

Waikīkī, the retailer donated US$50,000 to the TIM <strong>School</strong> to<br />

mark its 50th anniversary in Hawai‘i. DFS Group Limited,<br />

the world's largest luxury travel retailer, has 770 employees<br />

and operates a number <strong>of</strong> stores at the Honolulu International<br />

Airport and the Kahului International Airport, along with its<br />

three-story Waikīkī location.<br />

The DFS endowment to the TIM <strong>School</strong> was given in the name <strong>of</strong> Peter Fithian,<br />

founder and owner <strong>of</strong> Greeters <strong>of</strong> Hawai‘i, who was instrumental in establishing the<br />

first DFS (then Duty Free Shoppers) store at the Honolulu International Airport in<br />

1962. DFS Co-founder Robert Miller said, “We are so pleased to be able to honor<br />

Peter in this way and we thank him for all he has helped us with in Hawai‘i over the<br />

UH Foundation President and CEO Donna Vuchinich,<br />

years.” Governor Neil Abercrombie said: “We can say, probably without much <strong>of</strong> an argument from anybody, that this is the<br />

single most successful private-public partnership <strong>of</strong> its kind anywhere in the history <strong>of</strong> the State.”<br />

Fithian, who is originally from Boston, started working in the hospitality industry in 1955 as manager <strong>of</strong> the Kona Inn and later as<br />

the Assistant Manager at the Hilton Hawaiian Village Hotel. In 1959, he founded the Kona Billfish Tournament, which helped<br />

Kona become the big game fishing capital <strong>of</strong> the world. He also served as Chairman <strong>of</strong> the Hawai‘i Visitors Bureau and has been a<br />

loyal supporter <strong>of</strong> the TIM <strong>School</strong> throughout the years.<br />

Edwin M. Hastings Memorial Scholarships Awarded to 34 Students<br />

This year’s Edwin M. Hastings Memorial Scholarship awards totaling $60,000 were awarded to 34 students. Last<br />

year 27 students were awarded $52,000. Established in 2009, the merit-based scholarships support TIM students<br />

who are Hawai‘i residents with a preference given to those who graduated from local high schools. The awardees<br />

include qualified undergraduate and graduate students, including those from the Academies <strong>of</strong> Hospitality and<br />

Tourism (AOHT) in the high schools.<br />

Born in Brooklyn, the late Edwin “Ed” Hastings spent his entire career in the tourism industry, which began in<br />

New York with World Cruises. When Conrad Hilton purchased the famous Waldorf Astoria, he promoted<br />

Hastings to general manager. In 1955, Hastings moved to Hawai‘i to manage Matson’s hotels, but returned to<br />

New York to rejoin Conrad Hilton when the Matson properties were sold to Sheraton in 1959. Eventually, Hastings returned to<br />

Hawai‘i to manage the Hilton Hawaiian Village and then the regional operations <strong>of</strong> Hilton Hotels in the Pacific and the Far East.<br />

He supervised the Hilton Hotel openings in Kona and Maui and was instrumental in developing the Japanese market by making<br />

frequent visits to Japan to establish business relationships.<br />

Hastings was honored posthumously as a travel industry pioneer at the TIM <strong>School</strong>’s annual Celebrate a Legacy in Tourism<br />

Banquet in 2007 and inducted into the charter class <strong>of</strong> the Hawai‘i Hospitality Hall <strong>of</strong> Fame. Said Dean Juanita Liu, “This generous<br />

She previously worked with the College<br />

Kwanglim Seo, Ph.D., an<br />

Assistant Pr<strong>of</strong>essor, has expertise<br />

in hospitality finance<br />

and revenue management. His<br />

research interests lie in managerial<br />

decision making and its<br />

impact on firm financial performance,<br />

executive compensation and<br />

agency-related issues, and franchising and<br />

strategic investments in the hospitality<br />

industry. He was actively involved in several<br />

interdisciplinary research projects<br />

funded by the USDA and SSRI. He received<br />

his M.S. in International Hospitality<br />

<strong>Management</strong> from the University <strong>of</strong><br />

Strathclyde and his Ph.D. in Hospitality<br />

<strong>Management</strong> from Penn State, where he<br />

also taught several classes. His industry<br />

experience includes work with the Holiday<br />

Inn Hotel in Glasgow, U.K., Accor<br />

hotel in Tenerife, Spain, and the Riviera<br />

Hotel in Daejeon, Korea.<br />

Daniel Spencer, Ph.D., an<br />

Associate Pr<strong>of</strong>essor at the TIM<br />

<strong>School</strong>, previously worked for<br />

Black Hills State University as<br />

an Associate Pr<strong>of</strong>essor <strong>of</strong><br />

Tourism and Hospitality <strong>Management</strong>.<br />

He holds M.S. and Ph.D. degrees<br />

in outdoor recreation and tourism<br />

planning and marketing from Michigan<br />

State University, with minors in Geography.<br />

His areas <strong>of</strong> expertise include tourism<br />

planning, policy, management, research,<br />

and outreach. In 2012, he received<br />

the TIM Excellence in Teaching Award.<br />

Erin Bratton, Graduate Assistant, is an<br />

MS candidate at the TIM <strong>School</strong>. Erin<br />

graduated from the University <strong>of</strong> Wyoming<br />

in 2006, with a BA in International<br />

Studies and French. She participated in<br />

two exchange programs, to Besancon,<br />

France for one year and Hilo, Hawaii for<br />

one semester. Erin is interested in green<br />

hotels and sustainable destinations.<br />

Jessica Haywood, Graduate<br />

Assistant, is a second year candidate<br />

program. While pursuing her<br />

BFA in Creative Writing from<br />

the University <strong>of</strong> North Carolina<br />

at Wilmington, she worked at the Holiday<br />

in Sports Studies, and a Masters in<br />

variety <strong>of</strong> publications, ranging from local<br />

magazines to scholarly works. Currently,<br />

Huston is working towards a PhD in<br />

In Memory <strong>of</strong> Bernice C. Loui & Morton Fox<br />

Bernice C. Loui<br />

Bernice Kun Jun Char Loui from Honolulu passed away in January 18, 2012 at the age <strong>of</strong><br />

104. She and her late husband, Leong Hop Loui, started Hawai‘i’s first tour<br />

agency, International <strong>Travel</strong> Service, with parent companies Trade Wind<br />

Tours, Trade Wind Transportation, and Hawaiian Cruises. She founded <strong>Travel</strong><br />

Women Hawai‘i and was chair <strong>of</strong> her family’s business Hawaiian Rent-All.<br />

Her lack <strong>of</strong> opportunity to further her own education was the impetus for her<br />

generous contributions to the University <strong>of</strong> Hawai‘i. In 1987 she established<br />

the “Leong Hop and Bernice C. Loui Computer Laboratory” in the <strong>School</strong><br />

<strong>of</strong> <strong>Travel</strong> <strong>Industry</strong> <strong>Management</strong> in memory <strong>of</strong> her late husband. She was honored<br />

with the TIM Distinguished Service Award.<br />

In April the computer laboratory was rededicated with a remembrance ceremony with a Hawaiian blessing ceremony<br />

conducted by Kahu Solomon Kekoa. It was attended by TIM faculty, students and alumni. Special guests included<br />

Bernice’s son Gordon and wife Betty Loui and Dean Emeritus Chuck Gee.<br />

Dean Juanita Liu said that the Leong Hop and Bernice C. Loui Computer Lab<br />

has been an invaluable resource for TIM students for over 25. The travel industry<br />

has always been a leader in applying information technologies in reservations,<br />

point <strong>of</strong> sales (POS), and security systems. The TIM <strong>School</strong> is being proactive in<br />

informatics by utilizing the thousands <strong>of</strong> visitor data series for the visitor industry<br />

through newly established data portals for the State and the <strong>School</strong>. Today’s<br />

global tourism education requires knowledge <strong>of</strong> Information Communications<br />

Technology (ICT) and social media. Faculty need state-<strong>of</strong>-the-art tools to teach<br />

students to be pr<strong>of</strong>icient in analyzing data and creating dashboards and power<br />

points. Many instructors use computer simulations in the classroom, which assist<br />

in the understanding <strong>of</strong> strategic management, revenue management, as well as<br />

risk and crisis management. Thanks to visionaries like Bernice Loui, we have<br />

the ability to help students keep current in this age <strong>of</strong> technology.<br />

Pr<strong>of</strong>essor Emeritus Morton Fox<br />

Dr. Morton Fox, born in Easton, MD, passed away on<br />

October 22, 2011 at the age <strong>of</strong> 79. He is survived by wife<br />

Giselle Fox and children. Pr<strong>of</strong>essor Fox joined the TIM<br />

<strong>School</strong> in the early 1980s and taught courses on food and<br />

beverage management. He was an expert on food science<br />

technology and was instrumental in the development <strong>of</strong> the<br />

Meals Ready-to-Eat (MREs). He supervised the food sensory<br />

and production laboratories and taught in the TIM <strong>School</strong>’s<br />

pr<strong>of</strong>essional development EDIT program, as well as seminars<br />

in China, Hong Kong, Singapore, Nepal and Bangladesh,<br />

Prior to his teaching career, Pr<strong>of</strong>essor Fox served with distinction in the U.S.<br />

Army and retired with the rank <strong>of</strong> Lieutenant Colonel after 24 years <strong>of</strong> service.<br />

He received his bachelor and masters degrees in food service from the<br />

University <strong>of</strong> Maryland and received his doctorate degree in chemical engineering<br />

from the University <strong>of</strong> Karlsruhe in Germany. Upon retirement, Pr<strong>of</strong>essor<br />

Fox moved to Las Vegas, Nevada and hosted annual Hawaiian luaus to raise<br />

scholarships for the University <strong>of</strong> Hawai‘i Alumni<br />

Association. He enjoyed golf and was an accomplished<br />

barbershop quartet singer. Dr. Fox will be fondly remembered<br />

and we wish all the best to Giselle and family.<br />

Carolyn Baba Aquino (‘83) is<br />

Outrigger, Carolyn worked for<br />

the Princeville Resort on Kaua‘i and the<br />

Renaissance ‘Ilikai Waikīkī Hotel.<br />

Julie Arigo (‘88) was promoted<br />

to General Manager for the<br />

Waikīkī Parc Hotel, where she<br />

oversees all aspects <strong>of</strong> operating<br />

the 297-room hotel. She has<br />

been Manager <strong>of</strong> the Waikīkī<br />

Parc Hotel since 1994.<br />

Daniel Chun (‘02) is the<br />

Regional Manager <strong>of</strong> Sales and<br />

Community Marketing, in<br />

Hawai‘i for Alaska Airlines,<br />

where he is in charge <strong>of</strong> the<br />

marketing and community<br />

outreach efforts for the Hawaiian Islands<br />

Alaska Airlines serves. He previously<br />

worked as the Executive Assistant to the<br />

State <strong>of</strong> Hawai‘i tourism liaison. He<br />

currently serves on the TIM International<br />

Alumni Association Board <strong>of</strong> Directors.<br />

Christina Gabriel (’92) has an<br />

expanded role as General<br />

Manager <strong>of</strong> two Marriott<br />

properties on Kaua‘i: Waiohai<br />

Beach Club and Kaua‘i Lagoons,<br />

Kalanipuu. She was<br />

the first female manager for Marriot in the<br />

state over 15 years ago.<br />

Tia Graham (‘04) is the Director<br />

<strong>of</strong> Sales & Marketing at<br />

the W Hollywood. She was<br />

previously Director <strong>of</strong> Marketing<br />

at the W Istanbul Hotel and<br />

the Associate Director <strong>of</strong> Sales<br />

at the W Hotels <strong>of</strong> New York.<br />

Frank Guarin (‘98) is the<br />

General Manager for Kōloa<br />

Landing at Po‘ipū Beach a<br />

Wyndham Grand Resort on<br />

Kaua‘i. Prior to Kōloa Landing,<br />

Ren Hirose (‘85) is the General<br />

hotel in Arizona. Ren has<br />

been with Starwood hotels for<br />

about 30 years, where he has<br />

held various executive positions. He previously<br />

Los Angeles–Westwood Hotel. He currently<br />

Elliot Mills (‘93) was promoted<br />

to Vice President and General<br />

Manager at Aulani, a Disney<br />

Resort & Spa. Elliott previously<br />

held various executive<br />

management positions for several<br />

Aston Hotel & Resort properties, the<br />

Outrigger Reef on the Beach, and also<br />

served as Director <strong>of</strong> Operations for the<br />

Waikīkī Beach Marriott.<br />

Simon Morley (‘96) is the<br />

General Manager <strong>of</strong> the<br />

Holiday Inn Resort Phuket<br />

Mai Khao Beach. He was featured<br />

in an article about<br />

“Delivering Innovative Services”<br />

to guests at his hotel. He has been<br />

working in the industry for over 20 years.<br />

He began as a bellboy carrying bags for<br />

guests and now is the General Manager<br />

for InterContinental Hotels Group.<br />

Cybil Rawlins (‘02) is the Administrator<br />

Consumer Affairs at Hawaiian<br />

Electric. She held positions as<br />

Rcruitment and Training Coordinator for<br />

Konrad Talon (‘10) has been<br />

appointed Assistant Guest<br />

Services Manager at Four Season’s<br />

Paul Tang (’70) Vice President<br />

and Managing Director <strong>of</strong> the<br />

Hyatt Regency Grand Cypress,<br />

received top honors as<br />

the 2012 Businessman <strong>of</strong> the<br />

Year from the Orlando Business<br />

Journal. As chairman <strong>of</strong> Visit Orlando,<br />

he kept the bureau on solid ground<br />

following the sudden death <strong>of</strong> its CEO<br />

Gary Sain and the search for a new CEO.<br />

Truman Taoka (‘00) was recently<br />

named 2012 Manager <strong>of</strong><br />

the Year at the Hyatt Regency<br />

Maui Resort & Spa. He is the<br />

Associate Director <strong>of</strong> Catering<br />

& Convention Sales and has<br />

been with Hyatt since 2008. His previous<br />

experience includes management positions<br />

held at the Hyatt Regency Embarcadero<br />

in San Francisco, Hawai‘i Prince<br />

& Maui Prince Hotels, and the Fairmont<br />

Kea Lani.<br />

Joan Tsuji (‘78) is the Employment &<br />

Training Counselor with the State-<br />

Workforce Development Division under<br />

the Department <strong>of</strong> Labor & Industrial<br />

Relations. She has been there for almost<br />

18 years helping connect employers with<br />

applicants. She is also in charge <strong>of</strong> job<br />

training programs. Prior to working for<br />

the state, Joan worked for a real estate<br />

firm owned by TIM alumnus<br />

Joseph Pluta. She was also part <strong>of</strong> the<br />

team that opened the Maui Marriott &<br />

Hyatt Regency Maui.<br />

Tetsuji Yamazaki (‘96) was<br />

appointed General Manager <strong>of</strong><br />

the Sheraton Maui Resort &<br />

Spa. Previously, Tetsuji was<br />

the General Manager for the<br />

Sheraton Keahou Bay Resort<br />

& Spa on the Island <strong>of</strong> Hawai‘i. He has<br />

worked for Starwood since ‘97 and has<br />

held many management level positions.<br />
