Culture of Food<br />

(Complementary course - open to all students)<br />

Does food affect culture or is culture affected by food?<br />

The aim of the Culture of Food is to explore the various<br />

answers to this fundamental question. The cultural<br />

meanings of food and how they influence our lives will be<br />

examined through the study of language, symbolism,<br />

traditions and rituals. Through readings, research, food<br />

excursions and “tastings”, students will explore the<br />

diverse cuisines of Latin America, the Mediterranean, the<br />

Orient and North America. This course will encourage<br />

students to develop an awareness of a variety of cuisines<br />

and cultures of the modern world. By the end of this<br />

course students will be able to make comparisons, draw<br />

relationships and reflect upon the meaning and the<br />

reason behind food habits of the different cultures that<br />

surround them. Students from all disciplines and<br />

programs of the college can greatly benefit from this<br />

course.<br />

Note that Podcasting and Moodle will be used for the<br />

presentation of material and testing and students may be<br />

required to pay a nominal fee for the food tasting<br />

sessions.<br />

Nutrition and Health Management<br />

(Complementary course - open to all students)<br />

This course enables student to realize the components<br />

and lifelong benefits of good nutrition and health<br />

management practices and empowers them to apply<br />

these principles in their everyday lives. A pedagogical<br />

approach that utilizes higher order thinking<br />

communication, leadership and management processes<br />

is used to integrate topics into the study of individual and<br />

family issues. Topics include the impact of daily nutrition<br />

and health management practices on long-term health<br />

and wellness; physical, social and psychological aspects<br />

of healthy nutritious and health management choices;<br />

selection of nutritious meals and snacks based on the<br />

daily recommendations; weight management; and other<br />

related issues.<br />

Motivational Synergistics<br />

(Complementary course - open to all students)<br />

This course is required for all first semester students<br />

enrolled in the Introduction to <strong>College</strong> Studies,<br />

integrative sessions for Creative Arts, Social Science or<br />

Career programs. It is designed to facilitate a successful<br />

adjustment to life at <strong>Champlain</strong> <strong>Saint</strong>-<strong>Lambert</strong> by<br />

introducing the students to the culture, guiding<br />

principles, and resources of the college while allowing<br />

you to develop the skills necessary to succeed in Cegep.<br />

Through seminars and labs, the student is expected to<br />

develop the academic skills and values that support<br />

student success at <strong>Champlain</strong>.<br />

Tourism and Travel in the 21 st Century<br />

(Complementary course - not open to Tourism students)<br />

This course is a window on the world through various<br />

perspectives on the components and issues of tourism.<br />

Case studies focus on the impacts and trends of tourism<br />

– one of the fastest growing sectors of the global<br />

economy. Tomorrow’s travel opportunities, such as<br />

adventure and eco-tourism, will be discussed as well as<br />

examples of smart and responsible travel.<br />

Characteristics and Mental Skills of Elite Athletes<br />

(Complementary course - open to all students)<br />

This course will explore the factors that drive people like<br />

Tiger Woods, Sydney Crosby, Roger Federer and<br />

Williams' sisters to become highly successful athletes and<br />

the mental skills they use to achieve exceptional<br />

performances. We will examine the major influences that<br />

contribute to the development of talent and expertise in<br />

sports and in other domains, and study the psychological<br />

factors and mental skills that contribute to the<br />

achievement of elite performances.<br />
