Say Goodbye to
the Lunchtime Blues
By Kristen Doyle
W
hether you brown bag it,
head to the local diner, or
eat lunch at home every
day, it is incredibly easy to get bored with
the same old lunch choices day after day.
A turkey sandwich gets old after eating it
several days in a row and leftovers from
dinner the night before aren’t always as
appetizing the next day. What should you
do if you have the same old, same old
lunchtime blues? Shake things up and
think outside of sandwiches and leftovers
for lunch.
Wraps are one great way to make
your typical lunch a little more interesting.
Yes, they are a lot like a sandwich,
but there’s something about rolling up
your favorite ingredients into a delicious
tortilla that makes it not seem quite as
humdrum. A little bit of light ranch dressing,
some turkey and veggies and you
have yourself something even heartier
than a sandwich. Grilled chicken, barbecue
sauce and some Monterey Jack
cheese warmed up and wrapped into a
tortilla is anything but boring. There isn’t
much out there that doesn’t taste great in
a tortilla. Get creative and see how you
can wrap up your next lunch.
Soup is another option for curing
the lunchtime blues. Make up a big batch
of your favorite soup over the weekend,
then divide the batch into smaller, single
portion containers that are freezer safe.
Each morning, as you head out the
door for work, grab a container of soup.
The biggest
change you can
implement to your
ordinary sandwich
is to switch up the
bread that you use.
When lunchtime rolls around, put your
soup into the microwave for a couple of
minutes, stir, and you have a quick and
easy lunch that is sure to stick with you
the rest of the work day.
A delicious salad can be just as easy
to take for your lunch as soup or a tortilla
wrap. Similar to soup, many pieces of
the salad can be done ahead of time so
all you have to do in the morning before
you leave for work is grab your bowl and
go. On Sunday evening (or as soon as
you return home from the grocery store)
wash your vegetables and do any chopping
and dicing necessary. If you want
meat on your salad, do any prep work to
