liquid is squeezed out. After this pressing process,<br />

the cassava pulp appears in the form of compact<br />

blocks. These blocks are put through a sieve to be<br />

made into flour (farine) and to be rid of any remaining<br />

waste. Next, this cassava flour is thrown onto platines<br />

(large, round griddles), which are heated over wood<br />

fires.<br />

The slow cooking, a step called rouissage, is done to<br />

neutralize the hydrocyanic acid present in the flour.<br />

During this process, the flour is being constantly<br />

rotated with the help of a plane.<br />

After the slow cooking is done, the cassava flour is<br />

spread out on the still-hot platines in the form of flat<br />

cakes. These cakes are then garnished with guava<br />

jam or coconut, and folded over. And then…you<br />

taste it while it’s still warm. This is a delicacy that has<br />

no equal!<br />

on the island. Located in Morne Bois, and owned by<br />

the Jouan family, the mill specializes in the artisanal<br />

production of tank syrup, which is made of cooked,<br />

CASE-PILOTE<br />

The town of Case-Pilote is noted for its traditional<br />

architecture, whose beauty is well worth a detour.<br />

A main attraction is the church, which has been<br />

classified as a historic site. Dating from the 17th<br />

century, and built in the Jesuit Baroque style, it is the<br />

oldest church on the island. Case-Pilote is also the<br />

birthplace of some important people in the history of<br />

Martinique, including Victor Sévère, mayor of Fort-de-<br />

France 1900–1945, and the writer Xavier Orville.<br />

BELLEFONTAINE<br />

A typical fishing village, Bellefontaine is located on<br />

the Caribbean Sea, at the foot of a cliff. In this village,<br />

they still practice a traditional mode of fishing—with<br />

nets. The town boasts a modern church presided<br />

over by a « worker priest. »<br />

Greatly valued for the coolness of its climate, this<br />

town is perched on a ridge that dominates the Pitons<br />

du Carbet, mountains that reach up to 3,300 feet in<br />

altitude (and which you can explore on many hiking<br />

trails). Morne-Vert is a refreshing detour on the way<br />

to Saint-Pierre. You can enjoy great views of the<br />
