Cassava tubers are cleaned and peeled manually with<br />

a kitchen knife or a potato-peeler. The tubers are then<br />

fed into a grinder to be reduced to pulp. This pulp is<br />

next wringed by hand, and the toxic liquid obtained<br />

this way is allowed to settle. After settling, the liquid,<br />

now referred to as moussache, will play a role in the<br />

preparation of the cassavas.<br />

The wringed cassava pulp is meanwhile put into bags<br />

and passed through a press, so that any remaining<br />
