The major source of fruit for our McLaren Vale Tapestry brand is harvested from our own vines. The vines span two vineyards within the McLaren Vale Wine Region. Both vineyards are very low yielding and produce fruit and wines with intense flavour and concentration. The Olivers Road Vineyard is located around the Cellar Door and Tapestry Cellar Door site on Olivers Road about 1 mile (1.6km) from the Main Street of McLaren Vale. A new planting of 0.8 Hectares of Cabernet Sauvignon was completed in 2002), CW44 clone, single wire VSP planned. Its first crop was in 2005 and formed the basis for our new "Vineyard Blend" Rose. The Bakers Gully Vineyard is located at the elevated Eastern end of Chapel Hill Road at the Southern end of Bakers Gully. Low yield contributes to the concentrated colour, aroma and depth of this wine. Vinification/ Maturation Aged in new French hogsheads (30%), new Central European hogsheads (10%), new American hogsheads (7.7%) and second & third use French (56%). Bottle maturation will further soften the palate through integration of fruit and oak tannins. Tasting Notes Deep dark red with a prominent cherry hue. Intense mint, blackcurrant and supported eucalyptus, all typical characteristics of this variety in this vineyard. Oak influence adds sweet spice. Elegant soft pallet, cherry-like fruit characters, round middle with gentle acidity and fine tannins balancing the palate. Serve with Braised Kangaroo Shanks with wild thyme. Slow cooked until meat is almost falling off the bones served with mash & steamed broccolini. Harvest The fruit for this wine was harvested at night, at optimum flavour, ripeness &<br />

balance.<br />

Vinification/<br />

Maturation<br />

The wine was cold fermented and subsequently matured on chilled lees for 9<br />

months. Regular stirring was undertaken to add texture to the palate. A portion<br />

was matured in premium French Oak.<br />

Tasting Notes Pale straw with green tints. The nose shows green apple and pear, with mild<br />

toasty French oak characteristics in support. A soft dry palate with mild oak and<br />

juicy fruit on the mid-palate and a clean finish.<br />

This wine has been sealed with a screw cap to prevent wine spoilage through<br />

cork taint and for convenient re-sealing to allow re-pouring the following day if<br />

This wine is a selected blend of components from Tapestry’s own vineyards at Bakers<br />

Gully and Olivers Road. Individual components were made and matured in premium<br />

oak hogsheads and barriques for 18 months before blending and bottling in early 2013.<br />

Deep dark red with a strong purple hue.<br />

Powerful, chocolaty bouquet, with leathery and cherry like characters.<br />

Rich & mouth filling with a sweet mid-palate showing chocolate, coffee, ripe black<br />

cherries & wild black berry. Firmly structured with soft tannins and a strong lingering<br />

finish<br />

Scotch Fillet roasted in its natural juices with mashed Kipfler potatoes & roasted<br />

beetroot.<br />

The 2011 Shiraz will benefit from at least 10 years of maturation, after which time it<br />

should be decanted before serving.<br />

Vineyards This wine was made from selected batches of Shiraz grapes grown in our Bakers Gully<br />

vineyard on its largely tough and gravelly ironstone soils. Planted in the early 70’s,<br />

Bakers Gully is our premier vineyard and produces deeply coloured, richly flavoured<br />

Shiraz wine with gamey, spicy aromas and flavours.<br />

Maturation This wine has been matured for 24 months in 100% French oak Hogshead.<br />

Tasting Notes Deep brick red with a slight purple hue. Delicate & toasty with a hint of violets & white<br />

pepper. Sweet middle palate showing stewed cherries, soft earth & subtle oak with a<br />

silky, elegant finish.<br />

Serve with Serve with smoked cheese on a cracker.<br />

Char grilled Kangaroo fillet with a plum sauce.<br />

Cellaring This wine will continue to improve with bottle maturation over many years. Please to<br />

decant before serving to ensure optimal flavour release.<br />

Each block of Cabernet is picked and made into wine separately. Blocks 6 and 14, in<br />

the most elevated, toughest soils within the vineyard yielded at 2.5 tonnes per<br />

acre.<br />

The wine was matured in 69 % new French oak, 9% new American and a mix of one<br />

and two year old French, over a period of 18 months<br />

Tasting Notes Deep red / purple. Aromas of Eucalyptus, fruit tingles, some maltiness. Moderate in<br />

weight, firm acidity, otherwise soft with some jamminess, rhubarb and cherries,<br />

dusty tannins on finish.<br />

Serve with Serve with Char grilled scotch fillet with garlic and chips.<br />

Production 364 cases made.<br />

Cellaring Will benefit from considerable bottle maturation for 8-10 years plus.<br />

Decant before serving.<br />
