BULGUR FROM TURKEY<br />

Definition<br />

Bulgur is produced mainly from durum wheat<br />

(Triticum durum) that is cleaned, cooked, dehulled,<br />

dried and sorted. It is one the first plants that is<br />

known to be cultivated. Following the migrations<br />

during centuries from the Near and Middle<br />

Eastern Regions and North Africa, bulgur has<br />

become popular today in Europe and America as<br />

an alternative <strong>of</strong> healthy food.<br />

History<br />

Göbeklitepe: The oldest Temple in the World<br />

Established around 10000 B.C. in the Neolithic age<br />

Göbeklitepe near Şanlıurfa in the “fertile crescent”<br />

was a sacred place where people gathered around<br />

40 T-shaped stone blocks for religious rituals, each<br />

<strong>of</strong> them weighing around 20 tons. On these blocks,<br />

many wild animals like ducks, boars, and reptiles<br />

were carved which indicated that these animals were<br />

hunted pr<strong>of</strong>essionally. Furthermore, people started<br />

to cultivate wild grass in order to feed themselves.<br />

Species <strong>of</strong> Einkorn wheat was found there which<br />

was genetically linked to the species <strong>of</strong> wheat used<br />

today. Therefore experts conclude that this place<br />

was one <strong>of</strong> the first places where agriculture was<br />

realized. It is expected that more evidence will be<br />

found as the excavations go deeper, since more<br />

layers below were expected. An interesting fact is<br />

that around 8000 B.C. people started to establish<br />

cities around this temple indicating the start <strong>of</strong><br />

urban life. As a result <strong>of</strong> an unknown reason,<br />

people covered this place with sand and stone until<br />

it has been rediscovered in the 20th century.<br />

For comparison, Stonehenge dates 2000 B.C., and<br />

the Egyptian Pyramids around 4000 B.C.<br />

The archeological findings have shown that<br />

Eastern Mediterranean regions surrounding the<br />

rivers Tigris and Euphrates were the first places<br />

where the durum wheat was processed to bulgur.<br />

In order to minimize the cooking time, by precooking<br />

and sun-drying afterwards, ancient<br />

people were able to restore the nutrition content<br />

<strong>of</strong> wheat and store it for many months. Therefore,<br />

as a result <strong>of</strong> minimum process, bulgur contains<br />

most <strong>of</strong> the vitamins, especially Vitamin B and<br />

minerals like iron, calcium and phosphorus.<br />

Wheat is one <strong>of</strong> the oldest plants that human<br />

beings started to cultivate. Archaeological<br />

excavations showed that ancient people living<br />

around Şanlıurfa, a province in the Southeastern<br />

part <strong>of</strong> Turkey, planted Einkorn wheat (Triticum<br />

boeoticum), which is the wild form <strong>of</strong> today’s<br />

commercial wheat. Today it is still used for animal<br />

feed in some areas.<br />

Another excavation <strong>of</strong> Van- Yoncatepe from the<br />

Urartus has showed that bulgur has been stored<br />

as a staple food for centuries.<br />

The Holy Book <strong>of</strong> Bible also refers to the use <strong>of</strong><br />

wheat, which is probably used by precooking<br />

and drying it. Also, other ancient Mediterranean<br />

civilizations like Babylonian, Hebrew and the<br />

Hittites have used precooked dried wheat<br />

extensively.<br />

Production<br />

As a part <strong>of</strong> healthy lifestyle bulgur has become<br />

popular again in modern consumption in Turkey<br />

and abroad. While bulgur was produced by the<br />

rural families themselves before the 19 th century,<br />

as a part <strong>of</strong> modern life, industrial production has<br />

become a necessity. To fulfill this demand, during<br />

World War I, bulgur was produced in Karaman,<br />

a province in the Central Anatolian region, on<br />

a commercial basis for the first time to feed the<br />

Ottoman Army.<br />

Process<br />

Bulgur processing starts with the dry cleaning<br />

process where any external materials are removed<br />

from the kernels. After peeling and grinding, the<br />

wheat is treated with pressurized water and excess<br />

water is removed with a centrifuge. This wheat<br />

is then tempered with water at a humidity <strong>of</strong> 15-<br />

17% where the bran can be easily separated<br />

from the kernel. Then the kernel is cracked and<br />

milled. After being dried to a 10 % humidity level,<br />

the product is being sorted according to its size<br />

(coarse/ medium/ fine) and packed.<br />

In Turkey bulgur is produced in accordance with<br />

the Turkish Standard TS 2284 which has been<br />

revised in 2007.<br />

Quality management has been an important part<br />

in the processing <strong>of</strong> bulgur. In addition to TS 2284,<br />

many firms are also applying quality control and<br />

food safety systems like HACCP, ISO 9000 or ISO<br />

22000 in order to obtain the maximum quality<br />

possible fort his valuable products.<br />

Nutrition<br />

Containing many essential nutrients bulgur has all<br />

the essential elements to be classified as functional<br />

food. Although it is yet still a niche product in<br />

international market, health pr<strong>of</strong>essionals and<br />

diet experts from all around the world take actively<br />

part in promoting this product to their patients.<br />

Low in calories, bulgur has become popular due<br />

its fiber, mineral and potassium content as well.<br />

Also, the ease <strong>of</strong> storage and its resistant against<br />

rodents and molds has increased its popularity.<br />

It is a rich source <strong>of</strong> valuable carbohydrates and<br />

proteins, which do not dissolve upon cooking; it<br />

has a high reputation among consumers following<br />

a vegetarian and healthy diet.<br />

Its high folate content is a essential substance<br />

during pregnancy and is highly recommended<br />

during lactation as well.<br />

Since it has a low glycemic index, it highly<br />

recommended as a regular part in diets for<br />

diabetic patients.<br />

As a result <strong>of</strong> its high fiber content (higher than oat<br />

and barley), it is absorbed well by the human body<br />

and improves the bowl movement. Beta-glucan,<br />

a specific fiber proven to lower cholesterol level<br />

in blood and therefore preventing heart diseases<br />

is a substance also found in fiber and therefore<br />

increasing the health benefits <strong>of</strong> bulgur.<br />

Exports<br />

Being one <strong>of</strong> the most important producers <strong>of</strong><br />

bulgur in the world, bulgur demand is growing<br />

and total exports have exceeded $20 millions in<br />

the past years. It is also used as a staple food since<br />

its shelf life is long and the product is resistant<br />

against insects, molds and radiation, it therefore<br />

serves as a nutritious product for food aid as well.<br />

As an essential part <strong>of</strong> the Mediterranean diet<br />

Middle Eastern countries have been natural export<br />

markets demanding Turkish bulgur for many years.<br />

Turkish citizens living in European countries and in<br />

the U.S. have also contributed to the popularity <strong>of</strong><br />

this product and today in these countries bulgur<br />

is regarded as a healthy product which can be<br />

consumed in various ways.<br />

Furthermore, as a result <strong>of</strong> global demand,<br />

bulgur as also being produced organically. Since<br />

Turkey has adopted all the relevant legislation for<br />

organic agriculture since 1994 in accordance<br />

with EC 2091/92, it is forecasted that this organic<br />

bulgur demand will increase globally. As a result<br />

<strong>of</strong> increase in international demand, bulgur<br />

producing firms also got certified according to<br />

USDA-NOP and JAS Organic.<br />

Since Turkey has been a pioneer in bulgur<br />

production, the machinery industry for bulgur<br />

processing is also developed and bulgur<br />

processing machinery parts as well as turnkey<br />

plants are exported for many years.<br />

BULGUR FROM TURKEY<br />

Sample recipes:<br />

Bulgur Pilaf (for 2-3 persons):<br />

Pour one cup <strong>of</strong> bulgur in two cups <strong>of</strong> boiling<br />

water with necessary amounts <strong>of</strong> oil (preferably<br />

extra virgin olive oil) and salt and cook it until<br />

the water is absorbed under small. You can add<br />

spices like thyme, black pepper, peppermint or<br />

cumin seeds for additional flavor. The addition<br />

<strong>of</strong> vegetables like tomatoes, green pepper,<br />

onions, eggplants, green lentils or mushrooms<br />

will even increase the taste and nutrition value<br />

<strong>of</strong> this dish.<br />

Bulgur Salad (Kısır)<br />

Ingredients (for 2-3 persons):<br />

• 1 cup <strong>of</strong> bulgur (fine or medium)<br />

• 1 cup <strong>of</strong> boiling water<br />

• 1-2 chopped cucumber, chopped<br />

• 1 onion, chopped<br />

• 3-4 green onions, chopped<br />

• 1 small bunch <strong>of</strong> parsley, chopped<br />

• 1 teaspoon spoon tomato paste or 1 diced<br />

tomato<br />

• 1 teaspoon pepper paste<br />

• ½ teaspoon salt<br />

• 1/3 cup <strong>of</strong> olive oil<br />

• Juice <strong>of</strong> 1 lemon<br />

• Spices like thyme, peppermint, sumac<br />

Put the bulgur into a deep bowl, add the boiling<br />

water and let the bulgur allow to absorb the<br />

water. If the bulgur has become s<strong>of</strong>t, add the<br />

tomato, cucumber, pepper paste and mix it.<br />

Then add the rest <strong>of</strong> ingredients and continue to<br />

mix it well. You may make adjustment according<br />

to your preferences and develop your favorite<br />
