Bar Rescue
Watching TV May Be Good For Your Business
Running bars and restaurants can be very profitable and
rewarding, but also quite stressful when not being run
well. If your business is in need of some help, Bar Rescue
may be just what you need. The popular TV show on the
Spike network follows Jon Taffer (owner and chairman of
the bar/nightclub consulting firm, Taffer Dynamics, Inc.)
as he travels the country saving bars in need.
Taffer has started, flipped or owned
over 600 bars and clubs throughout
his career. His years of experience
and expertise have helped him
develop what he calls, “bar science.”
Taffer believes that every aspect of a
bar, no matter how small, is a key
factor to its profitability. He uses this
methodology to return struggling bars
to their former glory. Everything from
the height of the bar stools to the
draught system and the staff’s attitude
is important in creating an enjoyable
experience.
Taffer explains his scientific approach
to LA Weekly, “I don’t sell beer, I
create reactions in manipulative ways
– behavioral sciences – that I employ
to get you to come to my bar, spend
more money, stay longer, dance more
than you usually would, smile more
than you usually would, meet more
people than you usually would and
have a better time than you usually
would. That’s the science.”
It’s easy for bar owners to become
comfortable in their routines, but
Taffer, an objective observer, can
identify any problems. He (sometimes
harshly) brings issues to light and
provides solutions that result in better
customer “reactions” and thus greater
profits. It’s a healthy experiment for
any business owner. Step back and
objectively analyze the state of things
in your establishment. Emphasize or
reinforce things that are working and
change anything that has a negative
effect on the bottom line.
Taffer does not turn these bars around
by himself. He has a rotating team of
experts with the same no-nonsense
approach who assist in the rescues.
These teams include world-class chefs,
award-winning mixologists and
hospitality managers, all of whom are
experts in their respective fields.
One of Taffer’s consultants, Chef
Brian Duffy, studied at The Restaurant
School in Philadelphia and went on
to help propel the gastropub
movement. Working as the Corporate
Executive Chef of Kildare’s Irish Pub,
he revolutionized pub fare which
helped bring in record sales for the
popular Philly-based chain.
When he’s not busy exploring the
culinary arts or appearing on TV,
Duffy offers advice to the readers of
Nightclub & Bar’s ‘Bar Rescue Insider’
blog (http://www.nightclub.com). His
ongoing column offers on-premise
managers useful insight into best
practices that Duffy has picked up
over his many years in the biz. His
articles cover a wide range of topics
from server etiquette to bar
cleanliness and employee morale.
‘Bar Rescue Insider’ also features
articles from other experts who have
appeared on the show.
No matter what type of establishment
you own or manage, Bar Rescue
and the Insider blog are invaluable
resources. While some problems
aren’t as easily fixed as they appear
on TV, Taffer and his team provide
a fresh philosophy and useful
information that every manager
should keep in mind.
