'The hot weather really makes these things grow'
RYLAND HEIGHTS - Steve Price plunged his hand into a plastic laundry basket floating in a large
tank of bluish water Friday. From it he pulled a pincer-wielding delicacy, reared a stone's throw
from the Licking River.
A summer of not enough rain and scorching temperatures has stressed lawns and taxed backyard
gardens, but the conditions have been ideal for the fattening of freshwater prawns at Bluegrass
Shrimp Farm.
"We're looking for a good harvest this year," said Price, a former president of the Kentucky
Aquaculture Association. "The hot weather really makes these things grow because it makes
them want to eat. They're just eating machines."
"As soon as they're born, all they do is eat and eat and eat and eat, " said Price.
Until harvest time, that is, when the Price family - with help from friends and relatives - drain the
three farm ponds, wade into the mud, scoop up the Malaysian prawns and start selling the savory
crustaceans for $10 per pound at 11 a.m. on Saturday.
"It's fun. It's a family thing," said Lucas Price, Stephen's son. "Not very many families have an
opportunity to do something like this. I think it's good for the children and even everybody else's
children to come out and just experience the wildlife and get out away from the town."
The average American gobbled up 4.4 pounds of shrimp last year, according to the National
Marine Fisheries Service, and an overwhelming percentage of that shrimp came from other
countries, like Thailand, India, China and Indonesia.
The Price family was among the first in Kentucky to try shrimp farming. The upcoming harvest,
which is open to the public, will be the 13th at Bluegrass Shrimp Farm. The Kentucky Department
of Agriculture lists 28 other Kentucky shrimp farms, including Terry Metcalf's in Campbell County
and Dave Moreland's in Pendleton County, with planned freshwater prawn harvests this year.
"The Kentucky farmer is kind of based on, 'Raise tobacco, take it to the warehouse, drop it off and
send me the check in a few weeks,' " said Dr. Jim Tidwell, coordinator of the aquaculture program
at Kentucky State University. "This doesn't fit that model. I would describe it as having somewhat
settled into the serious people and the people that have the skills to make it work. And the Prices
are some of those."
Each pond at Bluegrass Shrimp Farm was stocked in early June with several thousand juvenile
prawns purchased from Thoroughbred Shrimp in Frankfort, with a projected yield of 1,000 pounds
at harvest. Although a freshwater prawn can grow to as much as a quarter-pound, Tidwell said,
one pound typically equals about 10 head-on prawns.
"We'll have people waiting in line to buy them," Lucas Price said.
The prawns are raised on a feed mixture that contains some of the corn-based mash used by
distilleries, and water quality is checked daily. Kentucky is considered accommodating for
freshwater prawns because of its moderate climate and limestone water.
"Some of the very same factors and reasons we have the world's best racehorses and the world's
best bourbon whiskey," Tidwell said. "The limestone water seems to have just the right chemistry
for these guys to grow."
And in this global supermarket age, there is a growing number of "ethicureans" who prefer locally
grown foods. The Prices sell under the Kentucky Proud label.
Kentucky-raised, freshwater shrimp sells for $10 a pound.
"You've got some pretty cosmopolitan folks for a rural state like Kentucky that care about where
the food came from," Tidwell said. "The kind of folks that shop at Whole Foods and Wild Oats and
want to know not only how it was raised but maybe even know the people that raised it and how it
was done, and maybe even be willing to pay a little extra for that."
