Irroy is a private label of Taittinger. The<br />

wine is a pinot dominated champagne giving<br />

UNDERGOING A CULTURAL RENAISSANCE WHILE AMERICA<br />

SUFFERED THROUGH PROHIBITION. LEGENDARY NAMES LIKE<br />

“PROFESSOR” JERRY THOMAS, HARRY CRADDOCK,<br />

“TRADER” VIC BERGERON AND ADA COLEMAN ALL WORKED<br />

BEHIND THE STICK AND CREATED A RICH COCKTAIL<br />

HERITAGE. IT WAS DURING THIS ERA THAT MANY OF THE<br />

CLASSIC COCKTAILS WERE CREATED. THE LAST TEN YEARS<br />

<strong>Arkle</strong> Winter Pimms Cup £12.50<br />

(Pimms Winter Cup, Hennessy Fine de Cognac, Apple<br />

Juice, Ginger Beer, Cardamon Bitters)<br />

Our play on the classic British cocktail takes the winter<br />

Pimms cup, based on br<strong>and</strong>y, <strong>and</strong> bolsters it a little<br />

before blending it with the finest Cheshire apple juice, a<br />

dash of cardamom bitters <strong>and</strong> topped off with<br />

Bundaberg ginger beer. A wonderful winter warmer.<br />

The Journalist £12.50<br />

(Tanqueray Gin, Gr<strong>and</strong> Marnier, Vya Sweet Vermouth,<br />

Vya Dry Vermouth, Lemon Juice, Adam Elmigraib’s<br />

Boker’s Bitters)<br />

A pre-prohibition favourite of New York’s journalists,<br />

many of whom would gather at the Algonquin. Now<br />

enjoying a resurgence in San Francisco, this recipe is<br />

closer to the original recipe, with a few subtle changes<br />

of our own.<br />

Bumblebee Fizz £11.50<br />

(Jack Daniel’s Honey Liqueur, Gr<strong>and</strong> Marnier, Lemon<br />

Juice, Ginger Bitters, Soda Water)<br />

We’ve taken our inspiration for this cocktail from the<br />

classic Fizz. The richness of the honey liqueur provides<br />

the sweetness, the Gr<strong>and</strong> Marnier adds a little citrus<br />

<strong>and</strong> extra whoomph, all married together with a hint of<br />

ginger bitters <strong>and</strong> a dash of lemon juice before being<br />

topped up with soda water.


Negroni £11.50<br />

(Tanqueray Gin, Campari, Vya Sweet Vermouth,<br />

Cardamon Bitters)<br />

The Negroni’s creation is credited to Count Negroni who<br />

apparently wanted his Americano to have more bite, so<br />

he removed the soda <strong>and</strong> added gin. Many consider the<br />

Negroni to be a benchmark cocktail against which to<br />

measure the competence of a bar.<br />

(Chase Gin, Chase Blackcurrant Liqueur, Lemon Juice,<br />

Sparkling mineral water)<br />

Sometimes the simplest of combinations can produce a<br />

surprising effect. The mixture of crisp tangy gin<br />

balanced with a touch of blackcurrant liqueur provides a<br />

long refreshing drink of simple elegance.<br />

Fog Cutter £12.50<br />

(Pampero Especial, Hennessy Fine de Cognac,<br />

Tanqueray Gin, Orange Juice, Lemon Juice, Orgeat<br />

Syrup, Amontillado Sherry <strong>and</strong> Orange Bitters)<br />

A tiki classic that has been adapted slightly to suit the<br />

modern palate. This is a drink that looks harmless but<br />

packs a bit of a punch. The Amontillado sherry floated<br />

on top lends the drink an interesting nutty finish.<br />

French 75 £14.95<br />

(Tanqueray Gin, Lemon Juice, Champagne)<br />

Named after the big French artillery guns of the First<br />

World War because the drink packed such a punch it<br />

felt like you had been shelled by the field gun.<br />

Rhubarb <strong>and</strong> Custard Martini £12.50<br />

(Chase Rhubarb Vodka, Tosolini Mascarada Amaretto,<br />

Galliano)<br />

We asked the folks at Chase if they would make a<br />

rhubarb infused vodka, <strong>and</strong> they promptly set out<br />

experimenting until they got it right. And what works<br />

better with rhubarb than vanilla custard!! By using<br />

Galliano we get the vanilla flavour without the cloying<br />

custard <strong>and</strong> the amaretto just adds the finishing touch.<br />

Mai Tai (Classic) £12.50<br />

(Pampero Rum, Cointreau, Orgeat Syrup, Lime Juice,<br />

Gomme Syrup, Navy Rum, Bob’s Ginger Bitters)<br />

“Trader” Vic Bergeron created the Mai Tai for his<br />

eponymous Tiki <strong>Bar</strong> “Trader Vic’s”. The name is a<br />

corruption of the Tahitian for very good<br />

(Maita’I roa ae!).


Old Fashioned £12.50<br />

(Johnnie Walker Black, Organic Brown Sugar, Bob’s<br />

Ginger Bitters)<br />

There is nothing quite like a well made Old Fashioned.<br />

Its simplicity is deceiving, complex flavours brought<br />

together by using premium ingredients. Treat yourself<br />

to an Old Fashioned <strong>and</strong> allow yourself a sip of luxury.<br />

Ketel Cosmo £13.50<br />

(Ketel One Citrus, Gr<strong>and</strong> Marnier, Pink Grapefruit Juice,<br />

Lime Juice, Regan’s Orange Bitters)<br />

Our little twist on a modern classic, using a range of<br />

citrus flavours to adapt a favourite cocktail <strong>and</strong> evolve<br />

it. Tangy <strong>and</strong> sharp with a bit of a bite!<br />

KrakenJack £13.50<br />

(The Kraken Black rum, Jack Daniels Honey Liqueur,<br />

Lime Juice, Aztec Chocolate bitters, Bundaberg Ginger<br />

Beer)<br />

After trying the Jack Daniels Honey liqueur we had to<br />

find a way to pair it with the gingery spices of the<br />

Kraken Rum. Adding a few drops of Aztec chocolate<br />

bitters brings all the flavours together <strong>and</strong> adds a hint<br />

of dark cocoa to the mix. A wonderful wintery cocktail.<br />

Marmalade Espresso Martini £13.50<br />

(Chase Marmalade Vodka, Espresso Coffee, Mozart<br />

Dark Chocolate liqueur, Aztec Chocolate bitters)<br />

An interesting twist on a classic, the marmalade vodka<br />

adds a hint of orange to the mixture with a bittersweet<br />

finish of coffee <strong>and</strong> chocolate.<br />

THE TEMPERANCE MOVEMENT WAS POPULAR IN THE NORTH<br />

WEST FROM THE MID 1800’S. ESTABLISHING ITSELF IN<br />

LANCASHIRE BEFORE SPREADING ACROSS THE NORTH<br />

WEST, THE TEMPERANCE MOVEMENT WAS SPEARHEADED BY<br />

THE WOMEN. TIRED OF THEIR HUSBANDS’ DRUNKENNESS<br />

AND SPURRED ON BY THE CHURCH, THE MOVEMENT GAINED<br />

GROUND IN THE POORER REGIONS AROUND THE COUNTRY<br />

WHERE THE MOSTLY MANUAL LABOURERS LIVED. MEN WERE<br />

ENCOURAGED TO TAKE THE PLEDGE, SIGNING A T AFTER<br />

GIN CONSUMPTION WAS CAUSING. THE LAST FOUR YEARS<br />

Technically another subdivision of the Highl<strong>and</strong>s,<br />

Isl<strong>and</strong>s encompasses some quite diverse styles but<br />

much lighter in style than Islay.<br />

Speyside<br />

Speyside covers all those distilleries within sight of<br />

the river Spey. This sub region contains more than<br />

half the total number of distilleries in Scotl<strong>and</strong>.<br />

Speyside whiskies are noted for their sweeter topnotes<br />

<strong>and</strong> in character with Highl<strong>and</strong> malts, tend to<br />

have a slightly smokier finish.<br />

JAPANESE WHISKY<br />

Japan has been making some stunning whisky for<br />

many years, but it is only in the last six years it has<br />

found its way into the UK market. Yoichi comes from<br />

the Nikka Distillery on the isl<strong>and</strong> of Hokkaido <strong>and</strong> was<br />

founded in 1934, whereas the Miyagiko comes from<br />

Nikka’s other distillery in Honshu, founded in 1969.<br />

Established in 2000, Penderyn is a small distillery<br />
