A light elegant champagne, dominated by
chardonnay followed by meunier and pinot
noir, it is aged for at least three years to
give it a more mature, rounded character to

Taittinger Brut Prestige Rosé has delicious
soft red fruit aromas with a touch of spice.
Comtes de Champagne is Taittinger’s
prestige cuvée, a special selection of pure
chardonnay from their parcels of Grand Cru
vineyards.
Irroy is a private label of Taittinger. The
wine is a pinot dominated champagne giving
a delicacy and slight sharpness that makes
it an ideal aperitif.

Arkle Winter Pimms Cup £12.50
(Pimms Winter Cup, Hennessy Fine de Cognac, Apple
Juice, Ginger Beer, Cardamon Bitters)
Our play on the classic British cocktail takes the winter
Pimms cup, based on brandy, and bolsters it a little
before blending it with the finest Cheshire apple juice, a
dash of cardamom bitters and topped off with
Bundaberg ginger beer. A wonderful winter warmer.
The Journalist £12.50
(Tanqueray Gin, Grand Marnier, Vya Sweet Vermouth,
Vya Dry Vermouth, Lemon Juice, Adam Elmigraib’s
Boker’s Bitters)
A pre-prohibition favourite of New York’s journalists,
many of whom would gather at the Algonquin. Now
enjoying a resurgence in San Francisco, this recipe is
closer to the original recipe, with a few subtle changes
of our own.
Bumblebee Fizz £11.50
(Jack Daniel’s Honey Liqueur, Grand Marnier, Lemon
Juice, Ginger Bitters, Soda Water)
We’ve taken our inspiration for this cocktail from the
classic Fizz. The richness of the honey liqueur provides
the sweetness, the Grand Marnier adds a little citrus
and extra whoomph, all married together with a hint of
ginger bitters and a dash of lemon juice before being
topped up with soda water.

Negroni £11.50
(Tanqueray Gin, Campari, Vya Sweet Vermouth,
Cardamon Bitters)
The Negroni’s creation is credited to Count Negroni who
apparently wanted his Americano to have more bite, so
he removed the soda and added gin. Many consider the
Negroni to be a benchmark cocktail against which to
measure the competence of a bar.

Sparkling mineral water)
Sometimes the simplest of combinations can produce a
surprising effect. The mixture of crisp tangy gin
balanced with a touch of blackcurrant liqueur provides a
long refreshing drink of simple elegance.
Fog Cutter £12.50
(Pampero Especial, Hennessy Fine de Cognac,
Tanqueray Gin, Orange Juice, Lemon Juice, Orgeat
Syrup, Amontillado Sherry and Orange Bitters)
A tiki classic that has been adapted slightly to suit the
modern palate. This is a drink that looks harmless but
packs a bit of a punch. The Amontillado sherry floated
on top lends the drink an interesting nutty finish.
French 75 £14.95
(Tanqueray Gin, Lemon Juice, Champagne)
Named after the big French artillery guns of the First
World War because the drink packed such a punch it
felt like you had been shelled by the field gun.
Rhubarb and Custard Martini £12.50
(Chase Rhubarb Vodka, Tosolini Mascarada Amaretto,
Galliano)
We asked the folks at Chase if they would make a
rhubarb infused vodka, and they promptly set out
experimenting until they got it right. And what works
better with rhubarb than vanilla custard!! By using
Galliano we get the vanilla flavour without the cloying
custard and the amaretto just adds the finishing touch.
Mai Tai (Classic) £12.50
(Pampero Rum, Cointreau, Orgeat Syrup, Lime Juice,
Gomme Syrup, Navy Rum, Bob’s Ginger Bitters)
“Trader” Vic Bergeron created the Mai Tai for his
eponymous Tiki Bar “Trader Vic’s”. The name is a
corruption of the Tahitian for very good
(Maita’I roa ae!).

There is nothing quite like a well made Old Fashioned.
Its simplicity is deceiving, complex flavours brought
together by using premium ingredients. Treat yourself

Our little twist on a modern classic, using a range of
citrus flavours to adapt a favourite cocktail and evolve
it. Tangy and sharp with a bit of a bite!
KrakenJack £13.50
(The Kraken Black rum, Jack Daniels Honey Liqueur,
Lime Juice, Aztec Chocolate bitters, Bundaberg Ginger
Beer)
After trying the Jack Daniels Honey liqueur we had to
find a way to pair it with the gingery spices of the
Kraken Rum. Adding a few drops of Aztec chocolate
bitters brings all the flavours together and adds a hint
of dark cocoa to the mix. A wonderful wintery cocktail.
Marmalade Espresso Martini £13.50

Dark Chocolate liqueur, Aztec Chocolate bitters)
An interesting twist on a classic, the marmalade vodka
adds a hint of orange to the mixture with a bittersweet
finish of coffee and chocolate.

THE TEMPERANCE MOVEMENT WAS POPULAR IN THE NORTH
WEST FROM THE MID 1800’S. ESTABLISHING ITSELF IN
LANCASHIRE BEFORE SPREADING ACROSS THE NORTH
WEST, THE TEMPERANCE MOVEMENT WAS SPEARHEADED BY
THE WOMEN. TIRED OF THEIR HUSBANDS’ DRUNKENNESS
AND SPURRED ON BY THE CHURCH, THE MOVEMENT GAINED
GROUND IN THE POORER REGIONS AROUND THE COUNTRY
WHERE THE MOSTLY MANUAL LABOURERS LIVED. MEN WERE
ENCOURAGED TO TAKE THE PLEDGE, SIGNING A T AFTER
THEIR NAME TO SIGNAL THIS. THIS IS THOUGHT TO BE THE

WE’VE HAD A CHEQUERED HISTORY WITH GIN. IN THE
1700’S GIN BECAME KNOWN AS MOTHER’S RUIN, DUE IN
NO SMALL PART TO THE SOCIAL DISRUPTION THAT EXCESS
GIN CONSUMPTION WAS CAUSING. THE LAST FOUR YEARS
HAVE SEEN A RESURGENCE IN THE PRODUCTION OF CRAFT
GINS, EACH USING THEIR OWN SUBTLE BLEND OF
BOTANICALS TO STAND OUT. GIN IS A NEUTRAL SPIRIT
THAT HAS BEEN RE-DISTILLED WITH VARIOUS
BOTANICALS, BUT MUST INCLUDE JUNIPER BERRIES. IT IS
THOUGHT TO HAVE BEEN DEVELOPED FROM EARLY ITALIAN
MONASTIC DISTILLATIONS INTO THE PRODUCT WE KNOW

JAPANESE WHISKY
Japan has been making some stunning whisky for
many years, but it is only in the last six years it has
found its way into the UK market. Yoichi comes from
the Nikka Distillery on the island of Hokkaido and was
founded in 1934, whereas the Miyagiko comes from
Nikka’s other distillery in Honshu, founded in 1969.
