Codex … • Because different types of food present different risks from Listeria monocytogenes, different microbiological criteria can be applied for the following categories of foods: (a) ready-to-eat foods in which growth of L. monocytogenes will not occur, and (b) ready-to-eat foods in which growth of L. monocytogenes can occur. • Align with existing policies around the world.
