Crops Day to be held in Oklee A taste for buttermilk Here’s a subject that doesn’t often occur organically in conversation - buttermilk. I mean, most people under the age of 40 recognize only buttermilk for its use in baking or maybe not at all. Do you know anyone who actually sits down and pours themselves a tall, cold one of buttermilk? I do. Buttermilk is really poorly named as there is little butter in it. Buttermilk is the fluid left after the solids have been churned out of milk and used in production of butter. Buttermilk has kind of a tart flavor due to the lactic acid that is left after the lactose in milk has been fermented. This acid is what causes the protein in milk to curdle and the fat easier to churn into butter. There are bacteria in buttermilk that seem to help maintain a healthy stomach, which is where a lot of healthy and unhealthy items get sorted out. My dad likes buttermilk, a lot of buttermilk. He has drank it as long as I can remember and has never had to worry that someone may have drank all of his buttermilk as most careful people would stop pouring as soon as their nose gave alarm to what was planned for the lips. Dad and I recently spoke of the origins of his taste for buttermilk. Dad was waiting in line at the Newfolden Elevator to dump a truckload of grain. Anyone who has ever sat in a line of trucks waiting to cross the Proceeds ensure the future of elk, other wildlife, their habitat and our hunting heritage. The cool, clear milk probably was good for his thirst, and the leftover milk solids probably had much to do with satisfying his hunger. Today, creameries sometimes add flecks of butter to mirror the old-style buttermilk but Dad would have been drinking the real stuff. My estimate is that this would have been somewhere in the early 1960s or so. I hadn’t tried buttermilk since I was a child, so I bought a pint. Lisa uses buttermilk in cooking and did so with a portion of the pint I purchased. I decided to taste what was left. It was an odd combination of creamy, sour and cheese overtones - all tastes that did not belong in the same room, yet were not too bad. I was mildly repulsed and considered the carton date but found it current. I soldiered on and could actually consider a continued relationship with the flavor and consistency. These both were not inviting enough to beckon me for repetition that evening; however, I do believe I will try a bit more this week. I suspect buttermilk was from a time when people used food more carefully and reverently. Our lives of plenty have caused us to pass by such food and made us unaware of the good of many of these foods. A recent trend in food is to sprout or ferment foods to amplify their inherent nutritional benefits, and buttermilk is a food that fits into this category. My dad always said buttermilk was good for his stomach, plus it is low in calories and apparently, tastes darn fine while it satisfies your thirst as you wait in line to dump grain UND roll of honor announced Goodridge – Ashley Marquis; from Hallock – Kellen Albrecht; from Lake Bronson – Austin Braget and Mitchell Braget; from Mentor – Logan Cook, Paul Johnson and Mariah Lunak; from Newfolden – Tyler Knutson; from Roseau – Sarah Kofstad; from Salol – Dayna Rothenbacher; from Thief River Falls – Anne Hook, Kevin Lunke, Sarah Matter, Karter Trontvet and Francine Twistol; from Warroad – Christine Carlson, Julia Fisher and Diane Krueger; and from Winger – Evan Massmann. FSA reports changes to form 1099-G for producers The Pennington County Farm Service Agency office wants to inform area producers of changes to the way FSA reports a producer’s farm program payments to the producer and to the IRS. In past years, IRS Form 1099-G would be issued to show all program payments received from FSA, regardless of the amount. Starting with calendar year 2012, producers whose total reportable payments from FSA are less than $600 will not receive IRS Form 1099-G (Report of Payments to Producers). Additionally, producers who receive payments from more than one county will only receive one Form 1099-G if the total payments of all payments from all counties are $600 or more. Producers who received less than $600 in combined payments should consult their tax advisor to determine if these payments must be reported on their tax return. If the payments were subject to voluntary withholdings or subject to backup (involuntary) withholdings a 1099-G will be issued regardless of the total amount of the payments. Producers with questions on 1099-G’s should contact their local FSA County Office or the Pennington County FSA Office at 681- 1612 ext. 2. Truscinski, Megan Kompelien, Leah Erickson, Victoria Green, Tiana Watson and Mariah Modahl. The group competes at sections Saturday, Feb. 2 (today) at Ada- Borup High School. The group will also perform Saturday, Feb. 2 (today) at 8 p.m. in the BHS gym. (Submitted) After only two years of participating in the Minnesota State One Act Play Competition, Badger High School has collected two trophies. Last weekend, it finished first in Subsection District 32, Region 8, at Lake of the Woods High School, with its presentation of “The Laramie Project.” Broadway veteran Rick Anderson directed the students. “I’ve always wanted to build a theatrical program from scratch,” said Anderson during a break from rehearsal. “I found out that Badger didn’t have a one act play program, so I thought that would be ideal. I contacted Superintendent Tom Jerome, and made a proposal to take on this challenge. Mr. Jerome has always been about presenting opportunities for his students, and had seen a previous production I had directed, so he was open to the idea.” Jerome said, “One Act Play provides another opportunity for students to participate as well as excel and perform in front of their peers and the community. The Badger One Act Play team consists of 12 cast members. These students are very talented and incredibly dedicated. They have worked diligently the past four months preparing for the competition working with Rick Anderson as well as volunteer Valerie Truscinski. It is truly amazing what these students have accomplished in a short period of time.” “The Laramie Project” deals with the 1998 beating and death of 22-year-old college student Matthew Shepard in Laramie, Wyo. “‘The Laramie Project’ does much more than retell the events surrounding the hate crime. The play provides a message of compassion and attempts to demonstrate how human beings should aspire to treat each other,” Jerome said. “The Laramie Project,” by Mosies Kaufman and the Tectonic Theatre Company, will be part of the sectional 8A One Act Play Competition on Saturday, Feb. 2 (today) at the Ada- Borup High School Theatre. A total of eight one act plays will be presented, with one advancing to state. Performances begin at 10 a.m. The Badger One Act Play Team will perform a public performance of “The Laramie Project” on Saturday, Feb. 2 (today) at 8 p.m. in the BHS gym. Tickets are $5 for general admission seats. All proceeds will go to cover the expenses of the Badger One Act Play. WINTER SALE AND CLEARANCE! Popplers Price Guarantee You won’t pay more at Popplers. butter in it. Buttermilk is
the fluid left after the solids
have been churned out of
milk and used in production
of butter. Buttermilk has
kind of a tart flavor due to
the lactic acid that is left
after the lactose in milk has
been fermented. This acid is
what causes the protein in
milk to curdle and the fat
easier to churn into butter.
There are bacteria in buttermilk
that seem to help maintain
a healthy stomach,
which is where a lot of
healthy and unhealthy
items get sorted out.
My dad likes buttermilk,
a lot of buttermilk. He has
drank it as long as I can
remember and has never
had to worry that someone
may have drank all of his
buttermilk as most careful
people would stop pouring
as soon as their nose gave
alarm to what was planned
for the lips.
Dad and I recently spoke
of the origins of his taste for
buttermilk. Dad was waiting
in line at the Newfolden
Elevator to dump a truckload
of grain. Anyone who
has ever sat in a line of
trucks waiting to cross the
termilk and found it satisfied
his thirst and his
hunger. The cool, clear milk
probably was good for his
thirst, and the leftover milk
solids probably had much to
do with satisfying his
hunger. Today, creameries
sometimes add flecks of butter
to mirror the old-style
buttermilk but Dad would
have been drinking the real
stuff. My estimate is that
this would have been somewhere
in the early 1960s or
so. I hadn’t tried buttermilk
since I was a child, so I
bought a pint. Lisa uses buttermilk
in cooking and did
so with a portion of the pint
I purchased. I decided to
taste what was left. It was
an odd combination of
creamy, sour and cheese
overtones - all tastes that
did not belong in the same
room, yet were not too bad. I
was mildly repulsed and
considered the carton date
but found it current. I soldiered
on and could actually
consider a continued relationship
with the flavor and
consistency. These both were
not inviting enough to beckon
me for repetition that
evening; however, I do
believe I will try a bit more
this week.
I suspect buttermilk was
from a time when people
used food more carefully and
reverently. Our lives of plenty
have caused us to pass by
such food and made us
unaware of the good of many
of these foods. A recent trend
in food is to sprout or ferment
foods to amplify their
inherent nutritional benefits,
and buttermilk is a food
that fits into this category.
My dad always said buttermilk
was good for his stomach,
plus it is low in calories
and apparently, tastes darn
fine while it satisfies your
thirst as you wait in line to
dump grain
