Doris said these muffins<br />

are like biscuits and can be<br />

used <strong>for</strong> breakfast or served<br />

with a bowl of soup. They<br />

sound just right <strong>for</strong> one of<br />

these cool mornings and I<br />

bet they freeze well too:<br />

HAM AND CHEESE<br />

MUFFINS<br />

Doris Heath, Bryson City, NC<br />

2 cups flour<br />

3 (slightly rounded) teaspoons<br />

baking powder<br />

1 teaspoon salt<br />

1/2 teaspoon soda<br />

1 cup milk<br />

1/2 cup mayonnaise<br />

1/2 cup finely chopped cooked<br />

ham<br />

1/2 cup shredded cheddar<br />

cheese<br />

In large bowl, combine flour,<br />

baking powder, salt and soda.<br />

Combine remaining ingredients<br />

and stir into dry ingredients<br />

just until moistened. Fill<br />

greased or paper-lined muffin<br />

cups 2/3 full. Bake at 425<br />

degrees <strong>for</strong> 16-18 minutes or<br />

until muffins test done.<br />

These brownies are perfect<br />

<strong>for</strong> a special treat or<br />

quick snack and it’s a nice<br />

little recipe so you won’t<br />

have too <strong>man</strong>y leftovers –<br />

and they are easy to make so<br />

you can just make another<br />

batch if you want more:<br />

PRALINE BROWNIES<br />

Mindy Weiser, Southport, NC<br />

1/2 cup packed dark brown<br />

sugar<br />

3/4 cup butter or margarine,<br />

divided<br />

2 tablespoons evaporated milk<br />

1/2 cup coarsely chopped pecans<br />

2 cups packed light brown sugar<br />

2 eggs<br />

1 1/2 cups flour<br />

1 teaspoon vanilla<br />

1/2 teaspoon salt<br />

In saucepan, combine dark<br />

brown sugar, 1/4 cup of the butter<br />

and the 2 tablespoons of<br />

evaporated milk. Stir over low<br />

heat just until butter is melted.<br />

Pour into ungreased 8 inch<br />

square baking pan and sprinkle<br />

evenly with pecans.<br />

Cream light brown sugar and<br />

remaining butter. Add eggs. Stir<br />

in flour, vanilla and salt until<br />

moistened. Spread over pecans.<br />

Bake at 350 degrees <strong>for</strong> 45-50<br />

minutes or until brownies test<br />

done. Cool in pan <strong>for</strong> 5 minutes,<br />

then invert on serving plate.<br />

Cool slightly be<strong>for</strong>e cutting.<br />

Makes 16 brownies. (I don’t<br />

mess with light or dark brown<br />

sugar – one type <strong>for</strong> all is fine.-<br />

can make a quick,<br />

filling meal:<br />

NOODLE BAKE<br />

2 cups uncooked egg noodles<br />

1/2 pound lean ground beef<br />

2 tablespoons finely chopped<br />

onion<br />

1 (8 ounce) can tomato sauce<br />

1/4 teaspoon sugar<br />

1/8 teaspoon salt<br />

1/8 teaspoon garlic salt<br />

Dash of pepper<br />

1/4 cup cream style cottage<br />

cheese<br />

2 ounces cream cheese, softened<br />

1 tablespoon thinly sliced green<br />

onion<br />

1 tablespoon chopped green<br />

pepper<br />

1 tablespoon sour cream<br />

1 tablespoon grated Parmesan<br />

cheese<br />

Cook noodles according to<br />

package directions<br />

Meanwhile, in large skillet<br />

cook beef and onion until meat<br />

is no longer pink. Drain.<br />

Remove pan from heat and stir<br />

in tomato sauce, sugar, salt,<br />

garlic salt and pepper. In a<br />

small bowl, combine cottage<br />

cheese, cream cheese, green<br />

onion, green pepper and sour<br />

cream.<br />

Drain noodles and place half<br />

of them in greased 1 quart baking<br />

dish. Spoon half of beef mixture<br />

over top. Layer with cottage<br />

cheese mixture and then<br />

top with remaining noodles. Top<br />

with remaining beef mixture<br />

and sprinkle with Parmesan.<br />

Cover and bake at 350<br />

degrees <strong>for</strong> 20-25 minutes or<br />

until heated through and bubbly.<br />

Now that pork is so reasonable,<br />

I keep trying to<br />

find an easy and good recipe<br />

<strong>for</strong> pulled pork (something I<br />

had never made). This one<br />

will work <strong>for</strong> me. I tried to<br />

make it without a recipe<br />

and really did some overcooking<br />

of everything. This<br />

recipe is so easy you can<br />

make a big batch and freeze<br />

some <strong>for</strong> another meal too:<br />

BARBECUED<br />

PORK SANDWICHES<br />

1 boneless pork shoulder butt<br />

roast, about 3 pounds<br />

1 medium onion, chopped<br />

1 tablespoon butter<br />

1 (15 ounce) can tomato puree<br />

1/2 cup packed brown sugar<br />

1/4 cup Worcestershire sauce<br />

2 tablespoons lemon juice<br />

1/2 teaspoon salt<br />

10 hard rolls, split<br />

Place pork on rack in roasting<br />

pan and bake, uncovered, at<br />

350 degrees <strong>for</strong> 2 hours or until<br />

tender.<br />

In Dutch oven, saute onion in<br />

butter until tender. Stir in<br />

tomato puree, brown sugar,<br />

Worcestershire sauce, lemon<br />

juice and salt. Bring to a boil,<br />

then reduce heat and simmer,<br />

uncovered, <strong>for</strong> 30 minutes.<br />

Shred pork and add to the<br />

sauce. Heat through. Serve on<br />

buns. (Use crock pot to keep<br />

pork mixture hot <strong>for</strong> easy second<br />

servings.)<br />
