<strong>Course</strong> overview<br />

Diploma/Certificate IV: aims to develop a broad<br />

awareness <strong>and</strong> underst<strong>and</strong>ing of the hospitality<br />

industry, skills <strong>and</strong> competencies from entry level<br />

to advanced level across various streams <strong>and</strong> to<br />

develop general <strong>and</strong> specialised supervisory skills<br />

in hospitality operation.<br />

Certificate III: aims to provide training <strong>and</strong> skills in<br />

kitchen operations <strong>and</strong> reflects the role of a<br />

qualified cook.<br />

Certificate II (Commercial Cookery): aims to provide<br />

participants with the skills <strong>and</strong> expertise which will<br />

enable them to work within the hospitality industry<br />

as Commercial Cooks (Grade 3).<br />

Certificate II (Operations): aims to develop a broad<br />

awareness <strong>and</strong> underst<strong>and</strong>ing of the hospitality<br />

industry <strong>and</strong> to multi-skill in entry levels <strong>and</strong><br />

competencies in key aspects of hospitality<br />

services. Major studies include: Restaurant Service<br />

(Food <strong>and</strong> Beverage), Customer Service <strong>and</strong><br />

Introduction to the Hospitality Industry.<br />

Diploma: manager in any hospitality functional<br />

area. Successful completion of the course may also<br />
