The Chocolate Fetish, Asheville’s<br />

premier gourmet chocolate<br />

shop, celebrates <strong>the</strong>ir<br />

25th anniversary throughout<br />

2011. Since 1986 this modest<br />

yet exceptional confection business<br />

has always used only <strong>the</strong> finest<br />

ingredients in <strong>the</strong>ir handmade artisan<br />

chocolates; and all of <strong>the</strong>ir signature<br />

products are made in small batches <strong>to</strong><br />

assure maximum freshness.<br />

Owner Bill Foley says, “This<br />

is a big year for us. The Chocolate<br />

fetish has grown over <strong>the</strong> years from<br />

Exceptional handmade artisan chocolates.<br />

being a two person operation <strong>to</strong> a full<br />

time staff with our chocolates being<br />

shipped all over <strong>the</strong> country. In 2010<br />

we expanded, more than doubled our<br />

retail shop and completely remodeled.<br />

His wife and co-owner Sue<br />

Foley adds, “We’ve grown a lot but at<br />

<strong>the</strong> same time we’ve grown in<strong>to</strong><br />

<strong>the</strong><br />

community.” The Chocolate Fetish<br />

has supported local charities and local<br />

non-profits while also being an additional<br />

draw for <strong>the</strong> down<strong>to</strong>wn area.<br />

“Small businesses are <strong>the</strong> backbone<br />

of <strong>the</strong> US economy,” Bill says.<br />

“Independent businesses are what<br />

makes this area such a great place<br />

<strong>to</strong> visit and live. If <strong>the</strong>re were only<br />

chain s<strong>to</strong>res or franchises here<br />

it would be no different than<br />

a million o<strong>the</strong>r places. But<br />

because of unique small<br />

shops and businesses<br />

in <strong>the</strong> down<strong>to</strong>wn area,<br />

Asheville is constantly<br />

listed on <strong>to</strong>p 10 places<br />

<strong>to</strong> live lists in almost<br />

every major<br />

publication. Plus<br />

independent<br />

local businesses<br />

return much<br />

more <strong>to</strong> <strong>the</strong> local<br />

economy.”<br />

Their daughter and general<br />

manager Elizabeth, who gave birth <strong>to</strong><br />

her first child recently, has been part<br />

of <strong>the</strong> Chocolate Fetish since moving<br />

back <strong>to</strong> Asheville. She not only has<br />

a strong sense of business but is an<br />

accomplished chocolate artist as well.<br />

A key part of this business’s success is<br />

how everyone works with his or her<br />

strengths.<br />

“We want everyone who works<br />

here <strong>to</strong> be an integral part of <strong>the</strong><br />

business,” Elizabeth says. “Everyone<br />

contributes with ideas. That doesn’t<br />

mean we act on every idea<br />

but we do like having a lot<br />

of ideas on hand.”<br />

“We listen <strong>to</strong> our<br />

cus<strong>to</strong>mers when <strong>the</strong>y have<br />

ideas,” Bill adds. “That’s<br />

what is great about being<br />

an independent business is<br />

that we can listen and act.<br />

And having been around<br />

for years we’ve come <strong>to</strong><br />

know what our cus<strong>to</strong>mers<br />

want from an upscale artisan<br />

chocolate shop. Some<br />

items we’ve had more success<br />

with than o<strong>the</strong>rs and<br />

those are <strong>the</strong> items that we keep.”<br />

“We also try and keep up with<br />

national and international trends in<br />

<strong>the</strong> chocolate world,” Sue says. “Retail<br />

recently stated that a<br />

new trend among chocolate makers<br />

is “herbs and chocolate.” Well, we’ve<br />

been using herbs with chocolate for<br />

almost 10 years.”<br />

An example is <strong>the</strong>ir Blossom<br />

Truffle — A must try for any chocolate<br />

lover, this truffle offers a rich dark<br />

chocolate center subtly flavored with<br />

lemon, a <strong>to</strong>uch of ginger, and a hint<br />

of saffron encased in a dark chocolate<br />

shell and garnished with a candied<br />

violet petal.<br />

They also offer <strong>the</strong> cus<strong>to</strong>mer<br />

favorite, Chai Moon<br />

— a milk truffle dusted with<br />

cinnamon. The 14 spices<br />

commonly used in Chai<br />

(Indian tea) are blended<br />

in<strong>to</strong> <strong>the</strong> milk chocolate<br />

ganache <strong>the</strong>n<br />

enrobed in white<br />
