‘Fat Beasts and 23 Fat Sheep’<br />

A <strong>Catalogue</strong> <strong>of</strong> <strong>Agriculture</strong> Prints.<br />

Throughout the late eighteenth and nineteenth century, advances in agricultural methods and<br />

techniques were reflected in contemporary prints. The rising popularity in selective<br />

breeding techniques at this time led to a variety <strong>of</strong> new breeds <strong>of</strong> pigs, sheep and cattle, and<br />

subsequently a rise in events where they could be exhibited. This shift in livestock becoming<br />

individual ‘stars’ in their own right can be seen in numerous prints in this catalogue. Perhaps<br />

the best example <strong>of</strong> this is the Durham Ox, one <strong>of</strong> the most famous animal exhibits <strong>of</strong> the<br />

nineteenth century. Between 1801 and 1807, the ox was exhibited all over Britain, attracting<br />

enormous crowds. His owner John Day claimed that in one year alone subscriptions for a<br />

print <strong>of</strong> the ox ‘amounted to two thousand and upwards, from whence the Public opinion <strong>of</strong><br />

this beautiful Animal may well be ascertained.’ His popularity at the time can be seen in the<br />

numerous portrait prints published, the various blue and white earthernware commemorative<br />

plates produced, and the proliferation <strong>of</strong> British public houses named after him. It also seems<br />

fitting, in view <strong>of</strong> this catalogue, that the Durham Ox’s career should have ended, after he<br />

dislocated his hip, in <strong>Oxford</strong>, in 1807.<br />

This catalogue is dedicated to the Hon. Christopher Lennox-Boyd (1941 – 2012), without<br />

whose extensive knowledge and collection it could not have been compiled.

displaying the sign <strong>of</strong> a magpie. A man on a ladder is<br />

laying fresh thatch, whilst his companion holds the<br />

end <strong>of</strong> the ladder on the ground. Another man sits<br />

on a dark horse, whilst holding a white horse with<br />

a sack over its back stamped: Morland 1795. A boy<br />

in an apron walks up carrying a full bowl, a young<br />

woman in a cape and bonnet, carrying a basket,<br />

stands to the right watching, and a pig eats cabbage<br />

leaves in the foreground.<br />

Joseph Thorley (1827 - 1876) was one <strong>of</strong> the first<br />

English manufacturers <strong>of</strong> compound feed for cattle.<br />

Born in Hull, he moved to London to expand his<br />

business. By 1861 he had premises at Martins Villas,<br />

17 Lower Hill, Islington; and a few years later built<br />

Thorley’s Cattle Food Mill at the newly constructed<br />

Victoria Wharf.<br />

The Royal Smithfield Club, originally titled the<br />

Smithfield Cattle and Sheep Society, was formed<br />

in 1798 following a meeting at Smithfield Market,<br />

London, held under the presidency <strong>of</strong> Francis, the<br />

fifth Duke <strong>of</strong> Bedford. The society’s aim was to<br />

organise and stage fatstock classes for a national<br />

show. Founders <strong>of</strong> the Society wanted to emphasise<br />

the principle <strong>of</strong> early maturity <strong>of</strong> animals for the<br />

meat trade and the overall improvement in quality <strong>of</strong>


animals for this trade. The first show was staged in<br />

December 1799 at Wootton’s Livery Stables (Dolphin<br />

Yard), Smithfield, with annual shows then held<br />

at other London sites until 1862 when it moved to<br />

the Royal Agricultural Hall, Islington.<br />

Maxim Gauci (1776 - 1854) was a lithographer<br />

based at 10a Charles Street, London in the 1830s.<br />

Born in Malta, Gauci settled in London in 1809.<br />

Best-known for natural history subjects, the lithographic<br />

plates for James Bateman’s Orchidaceae <strong>of</strong><br />

Mexico and Guatemala (1837 - 43), were the largest<br />

ever produced. He was the father <strong>of</strong> the lithographer<br />

William Gauci (active 1826 - 1854) and the painter<br />

and lithographer Paul Gauci (active 1834 - 1866).<br />

J. H. Carter was an artist active in London and Torquay,<br />

Devon between 1839 and 1856.<br />

The Durham Ox, a castrated Shorthorn bull, was one <strong>of</strong> the most famous animal exhibits <strong>of</strong> the nineteenth<br />

century. Born in 1796, the ox was owned by the influential Shorthorn cattle breeder Charles Colling (1751<br />

- 1836) <strong>of</strong> Ketton Hall, Brafferton. The grandson <strong>of</strong> Colling’s celebrated bull Hubback, the animal was originally<br />

exhibited in Darlington as the Ketton Ox in 1799, and was depicted with this name in a print engraved<br />

by Robert Pollard after George Cuit in 1801. The same year, John Day <strong>of</strong> Harmston, near Lincoln, bought<br />

the animal for £250 and renamed him the Durham Ox. From 1801 - 07, Day and his wife travelled Britain<br />

exhibiting the ox at each stop for a day or many months, depending on the size <strong>of</strong> the town or city. Their<br />

longest stop was in London, where the Durham Ox was exhibited between December 1801 and December<br />

1802 at Jenk’s Salerooms, Smithfield and Tattersall’s Bloodstock Auctions, Hyde Park Corner. It is recorded<br />

that the ox attracted such large crowds in London that on a single day takings totalled £97. His popularity at<br />

the time can be seen in the numerous prints dedicated to him, the various blue and white earthernware commemorative<br />

plates produced, and the proliferation <strong>of</strong> British public houses named after him. The Durham<br />

Ox’s career came to an end when on 19 February 1807, in <strong>Oxford</strong>, he dislocated his hip whilst exiting his<br />

carriage. Efforts to help him recover were <strong>of</strong> no avail and on 15 April he was slaughtered by the butchers<br />

Pinfold and Sims who had premises in Holywell Street, <strong>Oxford</strong>, and Evans <strong>of</strong> Wootan. The carcass was estimated<br />

to have weighed 34 hundredweight. In the same year, Day published An Account <strong>of</strong> the Late Extraordinary<br />

Durham Ox (London: S. W. Fores, 1807), which featured a detailed record <strong>of</strong> the animal’s display.<br />

- 1845) was a leading Reform politician. Chancellor<br />

<strong>of</strong> the Exchequer between 1830 and 1834, Spencer<br />

was involved in the passing <strong>of</strong> the Great Reform Bill<br />

(1832) and the Factory Act (1833). Spencer was a<br />

notable cattle-breeder and the first president <strong>of</strong> the<br />

Royal Agricultural Society. He lived at Wiseton Hall,<br />

Nottinghamshire.<br />

Robert Rhodes Alden (1840-1927) founded R. R.<br />

Alden’s Butcher’s Shop in the Covered Market,<br />

<strong>Oxford</strong>. He had eleven children including Leonard<br />

Henry Alden, Mayor <strong>of</strong> <strong>Oxford</strong> between 1936 and<br />

1937.<br />

Cattle markets were held monthly in Gloucester<br />

Green, <strong>Oxford</strong> between December 1834 and March<br />

1932. The Jackson’s <strong>Oxford</strong> Journal <strong>of</strong>


6th December 1834 states: ‘The Committee appointed<br />

to propose the necessary arrangements for<br />

holding a MONTHLY MARKET for the sale <strong>of</strong> Fat<br />

and Store CATTLE will meet in the Council Chamber<br />

<strong>of</strong> this City on Saturday 6th December at Twelve<br />

o’clock; to which meeting they invite all person<br />

interested in establishing the Market, who may be<br />

able to assist the Committee in suggesting the necessary<br />

regulations. The First Market will be holden<br />

on Wednesday next the 10th instant, in Gloucester<br />

Green.’ On Wednesday 6th April, 1932, the cattle<br />

market moved to Oxpens Road, to make way for the<br />

city’s bus station.<br />

Jonas Paxton (d.1886) was born in Potsgrove, Bedfordshire,<br />

and began working as an auctioneer in<br />

Bicester in 1838; his first sale appearing in Jackson’s<br />

<strong>Oxford</strong> Journal on 17 November that year. He later<br />

went into partnership with other auctioneers including<br />

his son, Thomas. The firm was known as Messrs.<br />

Jonas Paxton, Son, and Castle, and then Messrs.<br />

Paxton, Son, and Holiday. He retired in 1883. A supporter<br />

<strong>of</strong> the Bicester Agricultural and Horticultural<br />

Society, and <strong>of</strong> the <strong>Oxford</strong>shire Agricultural Association;<br />

Paxton was prominent in securing a railway<br />

line between Bletchley, Bicester, and <strong>Oxford</strong>.<br />
