Our area has a food and drink 

scene that’s renowned for its 

eclectic variety of cuisines, which 

draw influence from all four 

corners of the globe. Our culinary 

cosmopolitanism began early, 

though - the Romans not only 

brought their own style of cooking 

when they turned Colchester into a 

major settlement from 43AD, but 

they wasted no time in shipping 

our oysters all the way back to 

Rome.

Baumanns Brasserie in 

Coggeshall is brilliant, judging 

by the amazing meal Jean (my 

wife) and I had the other night. 

Others have said it, but we had to 

try it to make sure. 

Mark Baumann and his chef created 

a number of faultless and truly 

exciting dishes. Ever had flying fish 

caviar? I have, as the first taste bud 

tickler, served on a tiny cornet filled 

with a salmon mousse and topped 

with the caviar. Really good. 

But what about python popcorn? 

Incredibly savoury, but perfectly 

fried python in batter? I enjoyed it 

enormously. 

I told my friend, John Warwick, 

about this delicacy the next day 

cooking of a very high standard, always 

with top-quality locally sourced 

ingredients. 

Like the food, the emphasis in the décor 

is on enjoyment and just the right amount 

of originality. The restaurant brings a 

touch of the metropolitan to the heart of 

Essex, but without the high prices and any 

hint of pretension. 

and he told me about his pet 

python! 

Amongst the beautifully executed 

dishes that we both enjoyed, 

including superb juicy liver 

presented with some of the best 

vegetable dishes I have ever eaten, 

came a surprise. The waiter 

presented us with an egg box, an 

ordinary egg box. Inside were two 

boiled eggs with their tops off 

ready for the pieces of toast to be 

dipped into the sunshine yellow of 

the yolk. We plunged in. It was 

actually white chocolate fondant 

and the yolk was mango purée. 

The ‘toast’ was macaroon. Wow! 

That’s why people beat a path to 

Mark’s door in Coggeshall.

Your Local Butcher... 

Use him or lose him! 

An old adage is ‘use it or lose 

it’, and that’s very much the 

case with our last remaining 

local independent butchers. 

Bluntly, if you care about what 

you eat and where it comes 

from, go to a local butcher and 

forget the supermarket. 

Colchester still has 

some excellent 

butchers, and 

with your help 

they will thrive 

and continue 

to serve us. 

The town would 

be much poorer 

without characters 

like Charlie Martin of 

Martin’s Butchers in Canterbury 

Road. Charlie always has a smile 

and a straw hat at a jaunty angle. 

He has a terrific range of superb 

fresh meat and plenty of good 

advice to go with it. Also great ham 

and bacon and an array of 

sausages, he is a real old fashioned 

butcher who cares about what he 

sells and the people he sells it to. 

Allen’s Butchers on St Botolphs St 

wins the prize for my own personal 

favourite sausage, the ‘Directors’. 

Also they sell some of the best 

boiled ham in the region. Allen’s is 

a Q butcher which means they 

have achieved a very high degree 

of skill quality. You get a jolly 

welcome here and occasional 

singing from the staff. 

Frank Wright on Crouch Street has 

a very impressive range of game 

birds and rabbits, hare, venison etc. 

The shop is a Colchester institution 

and has a richly deserved excellent 

reputation. Game is coming back as 

people are finding how tasty and 

healthy is. Rabbit in particular is 

greatly underrated; Frank Wright’s 

is the place to go for game. 

Neville Hughes on Old 

Heath Road is a good 

all round butcher 

who will cut your 

order to your 

needs. Neville is 

in my view the 

best ‘hog roast’ 

man about, and I 

have tried a few! 

Geller’s on St. John’s 

Street prides itself on 

fresh locally produced meat. It is a 

truly good all round butcher. 

Geller’s pies are truly an institution 

in the town. On many occasions I 

have thoroughly enjoyed their 

mouthwatering steak & kidney 

pies, the little ones, still fresh and 

hot from the shop, and the big ones 

at home. 

Our wonderful Alan Pallett who has 

worked and slaved over the

swears by Evans of Dedham. As 

Alan has impeccable taste in all 

things he must be right. If you are 

around Dedham pop into Evans and 

support another fine butcher. One 

day I will get out there and I am 

sure I won’t be disappointed.

Eating out guide 

For most of us, going out to eat 

in a restaurant is still 

something of a treat. We ought 

to be able to expect really good 

service and excellent food 

wherever we go, especially if 

the bill is high. 

Sadly this is not always the case 

and we can feel angry and upset if 

an evening or lunchtime is ruined. 

Part of the frustration is not 

knowing how to complain or indeed 

who to complain to. 

It is a good idea to make your 

feelings known firmly, but without 

getting angry (I don’t always take 

my own advice as my daughters 

would tell you!). 

You know the point when the 

waiter or waitress asks that famous 

question ‘Is everything alright for 

you?’ Tell ’em if you aren’t happy.

Colchester Institute’s 

College Restaurant: 

Best in UK 

Colchester Institute is the 

largest vocational college in 

Essex and is home to the stateof-the-art 

Centre for Hospitality 

and Food Studies (CH&FS). 

CH&FS, which was officially opened 

in October 2002 by patron Gary 

Rhodes, has frequently been named 

as ‘Outstanding’ in Ofsted 

inspections. The Centre, which 

provides excellent facilities and 

training for hospitality students, 

aims to give them a realistic sense 

of what it is like to work in the 

hospitality industry. 

The Balkerne Restaurant has 

recently received the College 

Restaurant of the Year Award from 

Restaurant Magazine. The process 

behind achieving this award is 

deemed, by the magazine, to be 

‘the most comprehensive test a 

college can face in a real 

environment’ and goes to show the 

incredible determination and talent 

of the students at CH&FS. 

CH&FS provides both full-time and 

part-time courses including BTEC, 

City & Guilds and NVQ 

qualifications. Short courses 

provide the chance to undertake a 

professional qualification such as 

the National Certificate for 

Personal Licence Holders, or 

Award in Barista Skills, and learn 

new skills in Food and Drink 

Service, Hospitality Supervision 

or Culinary Skills.

Angela Hartnett amongst other 

individuals, who were chosen for 

their expertise and influence 

within the hospitality industry. 

Neil Rippington is respected both 

nationally and internationally and 

has recently published a textbook 

to support trainee chefs.

Every year at the Colchester 

Food and Drink Festival prizes

make, cook, promote or sell

In 2007 The Chef of the year award 

went to Paul Borman of Clarice

who is the Head of The Centre for

to recognise Neil’s leadership and 

his commitment to our local

James Coe works hard to both 

produce and sell his lamb. It is a 

very superior meat and we wish 

him well with his new farm shop 

venture. 

Richard Haward (Gold) 

Richard is known all over the world 

and has made Colchester famous 

with his excellent oysters wherever 

he goes. A real Mersea character 

and much appreciated by all.

Most of our awards are for 

the very small producer but 

Wilkin & Sons absolutely shines out 

as a wonderful local product. From 

their amazing range of strawberry 

jams to the rich dark Tawney 

Marmalade they are winners. 

Caprilatte (Silver) 

Producers of the very best goat’s 

milk ice cream from their own goats. 

Goff and Ellie Warren, a terrific 

couple, created this splendid ice 

cream on Mersea Road in Abberton 

at Monach Farm. Stop there, buy 

stamps (it’s a post office as well. 

Also great cheese and goat meat. 

They are a real community asset.

vegetables and creating recipes for 

each one they deliver. Nene Valley 

deliver organic vegetable boxes to 

your door. Their produce is always 

fresh and varied.

Simply stunning! It says it all really. 

The Qube Bar and Grill offer a fusion 

of French and Far Eastern delights 

creatively prepared using produce 

local to Colchester. The Thai style 

beef carpaccio followed by grilled 

king prawn skewers would be a hard 

combination to beat in any culinary 

competition. 

Chrystal (Silver) 

On the outside the restaurant 

which is in St Botolphs looks like an 

ordinary kebab shop. The food 

served at the tables however is 

authentic, very good and cheap. 

There are kebabs and good ones 

but also a number of excellent 

Middle Eastern hot dishes. Good 

fresh starters always appear as 

standard and part of the price of 

your main dish.

Roman dining at The Lemon Tree 

The Lemon Tree’s innovative 

and creative themed evenings 

have proved to be fashionable 

and popular occasions. 

Coupled with sumptuous dining, 

themes in the past have included 

regular jazz and cocktail nights, live 

piano performances, Halloween 

wine tasting events, opportunities 

to sample curries from around the 

world and close-up magic. All 

themed evenings are accompanied 

by fittingly bespoke menus, all 

thoughtfully created to each

In the run up to Colchester’s 2008 

Food and Drink Festival, The 

Lemon Tree team staged an exotic 

‘Roman Themed’ evening. Staff 

dressed as Roman characters and 

served authentic menus containing 

exciting sauces, herbs and spices 

and based purely on traditional 

Roman delicacies. Many customers 

donned their best togas for the 

event and a memorable evening 

was had by all! The only thing 

missing was old Roman favourites 

such as dormouse, ostrich and 

peacock and this was owing to The 

Lemon Tree’s Mission of sourcing 

local seasonal produce and ethically 

reared meats, fish and poultry. 

Donning a full Julius Caesar outfit, 

award winning chef and proprietor, 

Patrik Minder enthused “the 

ancient Romans enjoyed good food 

and wine and obviously favoured 

the wares of Colchester when they 

settled here after their invasion in 

AD43. Lavish banquets were 

popular with the Romans and with 

our reputation at The Lemon Tree 

for great food and service and our 

Patrik Minder with staff and customers at 

The Lemon Tree’s Roman Themed Evening 

unique location – The Lemon Tree 

incorporates part of Colchester’s 

original Roman wall as a backdrop –
