CATFISH WITH RED POTATOES & ZUCCHINI<br />

Don’t like or can’t find catfish? Red snapper, orange roughy, and tilapia are all<br />

excellent substitutions.<br />

1 medium red potato, thinly sliced<br />

Salt and pepper<br />

STUFFED PORK CHOPS<br />

Easy to make and great to eat, these pork chops will be<strong>com</strong>e a weekly delight.<br />

Prep time:<br />

Cooking time:<br />

1 tablespoon fresh basil, chopped<br />

1 tablespoon fresh oregano, chopped<br />

1 /4 cup breadcrumbs<br />

2 minutes<br />

FAVORITE COMFORT FOODS<br />

1 small zucchini, sliced<br />

2 tablespoons sun dried tomatoes, finely chopped<br />

5-6 ounce catfish filet<br />

1 tablespoon onion, finely chopped<br />

1 sprig rosemary<br />

1 teaspoon olive oil<br />

1 /4 cup ricotta cheese<br />

Salt and pepper<br />

2 (5 ounce) boneless pork chops<br />

1 slice lemon<br />

Place the Micro Grill in microwave and heat on high power for 3 minutes.<br />

Place the Micro Grill in microwave and heat on high power for 2 minutes.<br />

Carefully remove the Micro Grill from microwave. Place potato slices on grilling<br />

surface. Season with salt and pepper. Close the Micro Grill and return to microwave.<br />

Cook on high for 2 minutes.<br />

Combine basil, oregano, breadcrumbs, mushrooms, onions, and ricotta cheese.<br />

Season with salt and pepper. Using a small, sharp knife cut a pocket into each pork<br />

chop and fill with cheese mixture. Season both sides of pork chops with salt<br />

and pepper.<br />

Carefully remove the Micro Grill from microwave. Place zucchini on top of potato slices.<br />

Place fish on zucchini slices and top with rosemary, drizzle with olive oil, season with<br />

salt and pepper, and garnish with the lemon slice. Close the Micro Grill and return to<br />

microwave. Cook on high for 3 minutes, or until fish is cooked through.<br />

Carefully remove the Micro<br />

Grill from microwave and<br />

place pork chops on<br />

grilling surface.<br />

Close Micro Grill<br />

and cook on<br />

high for 4<br />

minutes, or<br />

until pork is<br />

cooked<br />

through.<br />

Note: Serve with<br />

buttered noodles<br />

or a salad.<br />
