STEAMED GREEN PEA/BULGAR RICE<br />

Ingredients<br />

3 bowls <strong>of</strong> Bulgar rice, 1 bowl <strong>of</strong> green peas, 1/2 dried<br />

coconut, 1 teaspoonful <strong>of</strong> salt, and 2 tablespoonfuls <strong>of</strong> sugar.<br />

Cooking method:<br />

Soak the rice in 4 1/2 cups <strong>of</strong> water overnight; then<br />

drain out the water.<br />

- Soak the green peas overnight. Shell and mix with<br />

Bulgar rice and salt, then put the mixture into a steam<br />

cooking pan.<br />

- Put a pot with water on the stove with a steam cooking<br />

pan on top. Take cover <strong>of</strong>f from time to time and mix<br />

thoroughly. After one hour the rice is done. Remove<br />

it from the fire.<br />

- Scrape <strong>of</strong>f the meat <strong>of</strong> a coconut and squeeze it for<br />

juice. Mix 1/2 cup <strong>of</strong> sugar with the coconut juice<br />

and boil for five minutes, stirring constantly.<br />

-. Sprinkle coconut juice on rice, mix thoroughly,<br />

and place in bowls or dishes.
